Grilled Leg of Lamb with Mint-Garlic Rub image

In this elegant lamb recipe perfect for entertaining, boneless leg of lamb gets a mint and garlic rub. The butterflied lamb cooks in record time and the varying thickness means some slices will be more done than others, so there's something for everyone. The recipe calls for a cut that's large enough to serve about 16 people and still have enough leftovers to make an awesome sandwich or pasta.

1 cup fresh mint leaves, loosely packed
½ cup flat-leaf parsley leaves, loosely packed
3 cloves garlic
¼ cup extra-virgin olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground pepper
1 5-pound boneless leg of lamb, butterflied and trimmed (see Tip)

Steps:

  • Finely chop mint, parsley and garlic and combine in a small bowl. Stir in oil, salt and pepper.
  • Pat lamb dry. If you have metal skewers, thread 2 through the lamb horizontally to help the meat hold together and make it easier to flip on the grill. (If you don't have skewers, just be sure you have long sturdy tongs.) Rub the herb mixture evenly over the lamb. Cover and refrigerate for at least 3 hours or up to 1 day to allow the flavors to penetrate.
  • About 1 hour before you're ready to grill, remove the lamb from the refrigerator.
  • Preheat a gas grill to medium or prepare a medium-hot charcoal grill and push the coals to one side.
  • Grill the lamb over direct heat until an instant-read thermometer inserted horizontally into the thickest part registers 125 degrees to 130 degrees F for medium-rare, 10 to 15 minutes per side. If the meat is getting too charred, occasionally move it to the cooler part of the grill. (Alternatively, place the lamb in a roasting pan and roast in the oven at 425 degrees F until it reaches the desired temperature, 25 to 35 minutes.)
  • Place the lamb on a clean cutting board, tent with foil and let rest 10 minutes before slicing.

2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon cumin
1 teaspoon mixed herbs - Italian, Greek, or French blend

¼ teaspoon cinnamon
1 pinch cayenne pepper
salt as needed
¼ cup orange marmalade
1 pinch hot chili flakes
½ tablespoon rice vinegar
1 tablespoon chopped fresh mint

Steps:

  • Place lamb chops in a large bowl. Season with olive oil, garlic, cumin, mixed herbs, pepper, coriander, cinnamon, cayenne, and salt. Toss until well coated with oil and seasonings. Cover and refrigerate. Allow to marinate at least 4 hours.
  • Preheat an outdoor grill for high heat and lightly oil the grate. Place lamb chops on grill. Sprinkle the chops with a bit of salt. Grill until seared on the first side, 4 to 7 minutes depending on the size of the chops. Rotate chops a half turn on the grill about a minute before turning them. Turn and grill the other side to desired doneness, another 4 to 7 minutes. For medium rare, an instant-read thermometer inserted into the center should bead 125 to 130 degrees F (54 degrees C). Transfer to a serving dish and tent loosely with foil.
  • Place marmalade in bowl. Add chili flakes, mint, and rice vinegar. Stir together thoroughly.
  • Brush the sauce over the chops and serve.

1 1/2 cups extra-virgin olive oil, plus more for brushing
1 bunch fresh mint, coarsely chopped
1 head garlic, cloves crushed and peeled
Finely grated zest of 2 lemons
Coarse salt and freshly ground pepper
1/2 teaspoon crushed red-pepper flakes
3 pounds boneless leg of lamb (about 1/2 of 1 large leg), butterflied

Steps:

  • Combine oil, mint, garlic, zest, 3 tablespoons salt, and the red-pepper flakes; season with pepper. Reserve 1/2 cup marinade.
  • Pound lamb to an even 1-inch thickness. Place lamb in a baking dish, and massage marinade into meat. Refrigerate overnight.
  • Let lamb stand at room temperature for 1 hour before grilling. Heat grill to medium-high. Brush grates with oil. Remove lamb from dish, and brush off any excess marinade. Zest from 1 large lemon

Steps:

  • With a sharp knife, slice deep slits all over leg of lamb.
  • In a bowl, combine remaining ingredients and make a paste.
  • Place the leg of lamb on a large baking sheet and rub herb mixture all over and stuff into the slits.
  • Cover entire lego of lamb with plastic wrap and let marinate in the refrigerator for 4 hours or up to overnight.
  • Remove leg of lamb 2 hours before cooking to allow meat to come to room temperature.
  • If you using a Big Steel Keg or Big Green Egg, add coals or wood charcoal and heat grill to 325ºF.
  • If using a gas grill, preheat grill with all burners on high. After 15 minutes, turn off the center burners and reduce the outer burners to medium.
  • Place the lamb in the center of the grate and grill covered for until internal temperature reaches 140ºF, approximately 2 hours.

2 tablespoons fresh oregano leaves
3 cloves garlic, minced
Zest of 2 lemons
Juice of 1 lemon
Olive oil
8 frenched lamb loin chops (about 2 pounds)
Kosher salt and freshly cracked black pepper
1/4 cup flaky sea salt
1 tablespoon finely chopped rosemary

Steps:

  • Mix together the oregano, garlic, lemon zest from 1 lemon, lemon juice and 1/4 cup olive oil. Sprinkle the lamb chops with kosher salt and pepper and add to the marinade, thoroughly coating. Allow to marinate in the refrigerator for 1 hour, and up to 6 hours.
  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • In the meantime, mix the flaky sea salt, rosemary and remaining lemon zest. Work the mixture with your fingers, releasing the oils from the zest and rosemary. Remove the lamb chops from the marinade and place on the direct heat side of the grill. Char on both sides and cook to an internal temperature of 125 degrees F for medium-rare, about 6 minutes. If the lamb chops become too charred, but the internal temperature is still low, move them to the indirect heat side of the grill to finish cooking.
  • Remove from the grill and let rest for 5 minutes. Sprinkle with the lemon rosemary salt before serving.

1 tablespoon dark soy sauce

12 loin lamb chops, each about 1 -inch thick
2 tablespoons balsamic vinegar
1 tablespoon extra-virgin olive oil
1 teaspoon anchovy paste
1 tablespoon fresh rosemary, very finely chopped
2 large garlic cloves, chopped
Salt and freshly ground black pepper
Sprigs of fresh rosemary for garnish

Steps:

  • Trim any excess fat from the lamb chops. Place them in a single layer in a dish.
  • Mix the vinegar, oil, anchovy paste, rosemary and garlic together and season to taste with salt and pepper. Spread this mixture over the lamb chops, turning them over in the dish, then turning them back again so both sides become lightly coated with marinade. Cover and allow to marinate at room temperature for one hour.
  • Preheat a grill or broiler to very hot.

  • Season your rack with the rosemary, oregano& salt& pepper.
  • Have your oven temp at 375 degrees F.
  • Place your rack in an open oven proof pan and cook for about 20- 25 minutes (it depends on how thick the rack is).

  • Take out the rack and pour the glaze over it.

1 (3-4-lb.) boneless lamb shoulder
Kosher salt, freshly ground pepper
2 red onions, coarsely chopped
1 bunch rosemary, leaves stripped from half of sprigs (about 1 cup)
1 bunch oregano, leaves stripped from sprigs (about 1 cup)
3/4 cup red wine vinegar
1/4 cup extra-virgin olive oil
1 cup plain whole-milk Greek yogurt
1/4 cup fresh lemon juice
1 garlic clove, finely grated
Tomatoes and assembly:
5 beefsteak or large heirloom tomatoes (about 4 lb.)
Flaky sea salt
Freshly ground black pepper
3 Tbsp. fresh lemon juice, divided
1 red onion, halved, thinly sliced
Extra-virgin olive oil (for drizzling)

Steps:

  • Lamb and sauce:
  • Lay lamb shoulder, cut side up, on a work surface. You will notice it's made up of a few muscle groups, separated by thin strips of fat and gaps where the bones have been removed. Use a sharp knife to separate the shoulder into smaller pieces along these natural seams-you should end up with 5 or 6 pieces of various sizes. Transfer lamb to a glass baking dish and season generously on all sides with salt and pepper.
  • Pulse onions, rosemary leaves, and oregano leaves in a food processor until finely chopped; set remaining rosemary sprigs aside. Add vinegar and oil and pulse until a coarse purée forms. Season marinade with salt and pepper, then pour over lamb, turning to coat. Cover and let sit at room temperature 2-3 hours.
  • Mix yogurt, lemon juice, and garlic in a medium bowl. Season sauce with salt and pepper; cover and chill until ready to use.
  • Tomatoes and assembly:
  • About half an hour before you plan to start grilling, slice tomatoes into 1/2"-thick rounds and arrange on a large platter. Season with salt and pepper and drizzle with half of lemon juice. Top with onion, season with salt and pepper, and drizzle remaining lemon juice over. Arrange reserved rosemary sprigs on top; set aside.
  • Prepare a grill for medium heat. Without scraping off marinade, transfer larger pieces of lamb to grate and grill until underside is very well browned, about 5 minutes. Spoon some remaining marinade over lamb, turn, and continue to grill, turning every 5 minutes or any time you see a flare-up, until lamb is charred in spots and very well browned everywhere.
  • After large pieces have been cooking about 15 minutes, add smaller pieces to grill and follow same instructions; they take less time to cook, and by staggering the start times, all the lamb will come off the grill within a few minutes of each other. An instant-read thermometer inserted into the center of each piece should register 140°F for medium, which is ideal. Start checking smaller pieces after 7-10 minutes. The largest piece will take closer to 30 minutes. As each piece finishes, transfer to reserved platter, setting on top of rosemary. Let rest 20-30 minutes.
  • Transfer lamb to a cutting board and tuck rosemary sprigs off to sides of platter. Tip platter so that accumulated tomato and lamb juices pool at one end and spoon over tomatoes. Using a long sharp knife, slice lamb into very thin pieces and arrange on top of onion and tomatoes. Season with salt and drizzle with oil.
  • Drizzle yogurt sauce with oil and serve alongside lamb.
  • Do Ahead
  • Lamb can be seasoned 1 day ahead; cover and chill. Sauce can be made 8 hours ahead; keep chilled.

2 tablespoons flour
1 teaspoon salt
fresh ground black pepper
1/4 teaspoon ground cinnamon
2 -3 sprigs fresh rosemary, bruised leaves

2 medium carrots, pared and thickly sliced
2 tablespoons clear honey
10 fluid ounces dry cider

Steps:

  • Heat the oven to 350°F.
  • Combine the flour, salt, pepper, cinnamon and rosemary and rub well into the lamb on all sides.
  • Lay the onion and carrot in the bottom of the roasting tin and the lamb on top.
  • Roast, allowing 25 to 30 minutes per 500g (1 lb 2oz) of weight, less for a pinker meat.
  • Turn the joint halfway through to cook evenly.
  • Meanwhile, make the sauce; warm the vinegar and honey until the honey has dissolved, then stir in the mint and leave to cool.
  • About 30 minutes before the end of cooking time, carefully lift out the meat and strain off the fat from the roasting tin (leave the vegetables).
  • Replace the meat, best side up.
  • Spread with the honey, and add the cider to the pan.
  • Return to the oven, increasing the heat to 375*F, and finish roasting, basting once or twice.
  • Lift the joint and vegetables on to a hot serving platter.
  • Blend the cornstarch with 1 TBS of cold water, add to the roasting tin and boil, stirring for a few minutes to make gravy.
  • Strain into a hot sauceboat.
  • Serve the lamb with the hot cider gravy and honey mint sauce.
