- Heat gas or charcoal grill. In small saucepan, combine shallots, wine and 3 tablespoons lemon juice. Bring to a boil over medium-high heat. Reduce heat to medium; cook 5 to 7 minutes or until mixture is reduced to about 2 to 3 tablespoons, stirring occasionally.
- Remove from heat. Stir in cold butter 1 tablespoon at a time until each is well blended. Stir in dill, chives and 1/8 teaspoon pepper. Cover to keep warm.

- In small saucepan, melt butter over medium high heat, remove from heat when melted.
- Combine cornstarch with water and stir into butter.
- Add rest of sauce ingredients except lemon slice quarters.
- Bring sauce to a boil over medium heat stirring constantly.
- Cook, stirring, until sauce thickens and turns clear.
- Remove from heat and add lemon slice quarters.
- Cover and set aside.
- (Makes about 2/3 cup, so you can double this if desired.).
- For salmon:.
- Cut off ends of each whole lemon, then cut each lemon into 2 one inch thick slices.
- Lay salmon steaks flat and put one slice into the opening at each end of each salmon steak.
- Using toothpicks, secure salmon around and to the lemon slices.

- Turn steaks over carefully and cook an additional 5-7 minutes or to desired doneness.

- Remove salmon from the refrigerator, season with 1 teaspoon salt and let it come to room temp, 30 minutes or so. In a small mixing bowl, combine capers, 2 tablespoon lemon juice, zest of two lemons, dill, chives and yogurt, and a few grinds of black pepper. Heat a large skillet over medium heat. Sauté cauliflower rice with olive oil and a splash of water. When the cauliflower is tender, season with salt and 1-2 tablespoons lemon juice. Scoop cauliflower rice onto four dinner plates. Prepare a medium-high heat grill or grill pan. Spray the grill with canola oil. Sear salmon skin side up, for 2 minutes. Gently flip salmon so it can continue cooking with the skin-side down another 3-4 minutes depending on thickness of fillet. Place salmon on the waiting plates with cauliflower rice. Add a handful of herbs to each plate as well as a scoop of caper sauce. Serve with Meyer lemon wedges. Drizzle on a bit of olive oil over the herbs and sprinkle with flaked salt.

- 1. Prepare you dill sauce and set in refrigerator till ready to serve.
- 2. Rinse your salmon fillets with water and pat dry. Now place them flat in a shallow baking dish and pour the lemon juice over them and refrigerate for 10 minutes to marinate them. Turn them once while in the marinade. Meanwhile, begin to steam your potatoes and peas. Cook up your bacon and crumble. [Do not let the fish sit any longer than 15 minutes in this lemon marinade or else you will ruin the fish. I have done and let it sit for 1/2 hour and all you could taste was lemon. It was terrible!]
- 3. Remove your fillets from marinade and lightly coat with your olive oil. Cook salmon 4-6 minutes on each side depending on the thickness of your fillet.
- 4. Place your steamed veggies in a bowl and mix with 1 tbsp. of butter, salt and pepper and add your bacon. Now, place your fillets on top and pour your dill sauce over them. Garnish with lemon slices and a sprig of dill.

- Gather the ingredients.
- Place the salmon in a shallow, nonreactive dish. In a bowl, combine the lemon zest, lemon juice, vegetable oil, dill, and garlic. Whisk to combine and emulsify .
