1/4 cup Worcestershire sauce
1/4 cup extra-virgin olive oil, plus for rolls
1 tablespoon hot sauce
6 cloves garlic
1 flank steak (about 3 pounds)
Freshly ground black pepper
Kosher salt
6 hero sandwich rolls
Roasted Tomatoes, recipe follows
Watercress
2 tablespoons extra-virgin olive oil
3 medium red onions, sliced 1/3-inch thick
3 cloves garlic, smashed
1 1/2 teaspoons kosher salt
1 teaspoon chopped fresh thyme leaves
1/2 teaspoon hot sauce
1/2 cup low sodium-canned chicken broth
Blue Cheese Sauce:
4 ounces blue cheese, crumbled (about 1/2 cup)
1 cup mayonnaise or sour cream, or combination
1 lemon, zest finely grated
Freshly ground black pepper
8 ripe plum tomatoes, halved lengthwise
2 tablespoons extra-virgin olive oil
4 to 5 fresh thyme sprigs
4 cloves garlic, chopped
1 tablespoon kosher salt
Freshly ground black pepper

Steps:

  • Mix the Worcestershire, olive oil, hot sauce, and 5 cloves of chopped garlic in a large glass baking dish. Add the steak and swish around, turning until evenly coated. Marinate at room temperature for 15 to 30 minutes, or cover and refrigerate for up to 4 hours, flipping the steak once or twice.
  • Meanwhile, heat a large skillet over medium-high heat, add the olive oil and when shimmering add the onions. Cook, stirring occasionally; until the onions are brown, about 8 minutes, then stir in the garlic, salt, thyme, and hot sauce, cook until onions are tender, about 4 minutes more. Add the broth and scrape up any browned bits from the bottom of the pan. Cook until all the chicken broth is gone, and then season with pepper. Set aside.
  • Preheat an outdoor grill or grill pan with a medium to medium-high heat.
  • Remove the steak from the marinade and season 1 side with salt and pepper. Place seasoned side of the meat down on the grill. Cook the steak undisturbed for 5 minutes. Then rotate the meat about 90 degrees (don¿t turn it over) on the grill to make clear cross marks and grill another 2 minutes. Season the other side of the steak with salt and pepper and flip. Continue to grill until an instant-read thermometer registers 140 degrees F for medium, about 8 to 10 minutes. Transfer to a cutting board to rest for 15 minutes.
  • Meanwhile, mash the blue cheese in a bowl with the mayonnaise or sour cream, lemon zest, and pepper, to taste. Set aside.
  • Cut the rolls in half horizontally and brush the insides with olive oil. Grill until warm on each side, about 1 minute. Rub the toasted bread with the remaining clove of garlic.
  • Thinly slice the meat across the grain and assemble the sandwiches. Spread a few tablespoons of the blue cheese sauce on each sandwich, top with some of the steak, onions, roasted tomatoes and watercress. Serve warm or at room temperature.
  • Preheat the oven to 425 degrees F.
  • Toss the tomatoes in a large bowl with the olive oil, thyme, garlic, salt and pepper. Transfer to a baking sheet cut side up and roast until soft and juicy, about 20 minutes. Serve.

1 cup Peppadew peppers, drained
1/4 cup mayonnaise
1/4 cup crumbled blue cheese
2 tablespoons sour cream
Freshly ground pepper
Vegetable oil, for brushing
1 1/2 pounds skirt steak, cut into 4 pieces
Kosher salt
4 ciabatta or other rustic rolls, split open

Steps:

  • Put the Peppadew peppers and mayonnaise in a food processor and pulse until roughly chopped. Transfer to a bowl; clean out the food processor. Add the blue cheese, sour cream and 1/2 teaspoon pepper to the processor and pulse until combined. (The spreads can be made 1 day ahead; cover and refrigerate.)
  • Preheat a grill to medium high and brush with vegetable oil. Sprinkle the steaks with 1 teaspoon salt and 1/4 teaspoon pepper. Grill until a thermometer inserted into the meat registers 135 degrees F for medium rare, about 4 minutes per side. Transfer the steaks to a cutting board and season with salt; let rest 10 minutes. Meanwhile, brush the insides of the rolls with vegetable oil and grill cut-side down until marked, about 1 minute.
  • Spread 3 tablespoons of the Peppadew mayonnaise on the bottom half of each roll, then spread 1 tablespoon blue cheese mixture on the top half. Slice the steak against the grain and divide among the rolls.

8 slices sourdough bread
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese

3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
4 ounces Brie cheese, rind removed, sliced
2 medium ripe avocado, peeled and sliced

Steps:

  • Spread 3 tablespoons butter on 1 side of bread slices. Place bread, butter side down, in a large cast-iron skillet or on an electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie; add avocado slices. Sprinkle cheddar cheese mixture evenly over avocado slices. Top with remaining bread slices, toasted side facing inward. Spread the butter-mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

2 skirt steaks (8 - 10 oz each)
1 medium yellow sweet onion, cut in 1/4-inch slices
2 small tomatoes, cut in 1/4-inch slices
2 tablespoons canola oil
salt
fresh ground black pepper
2 tablespoons extra virgin olive oil
2 teaspoons chopped fresh thyme leave
4 pieces baguette, sliced in half lengthwise and lightly toasted (6-inch)
1/2 ripe fresh california avocado, thinly sliced for garnish
4 fresh thyme sprigs (to garnish)
cracked black pepper
2 large ripe fresh avocados
4 ounces Roquefort cheese, at room temp (or similar blue cheese)
2 tablespoons fresh lemon juice
4 dashes hot sauce
1 teaspoon fresh ground black pepper

Steps:

  • CALIFORNIA AVOCADO BLUE CHEESE SPREAD:.
  • In a large bowl, combine avocados with blue cheese, lemon juice, hot sauce, and pepper.
  • Mash with a fork until mixture is thoroughly combined.
  • Taste and season lightly with salt (Note: careful here, blue cheese can be salty).
  • STEAK SANDWICHES:.
  • About 30 minutes before cooking, remove skirt steaks from refrigerator.
  • Trim any outer pieces of fat or silver skin, but marbling within beef should remain.
  • Preheat grill or sauté pan to very hot.
  • Pat skirt steaks dry.
  • Brush steaks and onion and tomato slices with canola oil and season generously with salt and pepper.
  • Grill or sauté steaks, 2 minutes per side for rare & allow steak to rest several minutes on a cutting board.
  • Meanwhile, on the grill or in the same sauté pan, char the onion slices until just tender, separating into rings.
  • Grill or sauté the tomato slices briefly, until lightly charred and warmed through.
  • In a small bowl, combine olive oil, vinegar and thyme.
  • Add grilled onion and tomato slices to vinaigrette mixture and toss gently.
  • Spread toasted top halves of baguettes with California Avocado Blue Cheese Spread.
  • Place on the upper level of the grill with the top closed, or under a broiler, until warmed, about 1 to 2 minutes.
  • Arrange the charred onion and tomato slices on the bottom halves of the baguettes.
  • Slice the steak thinly, at an angle across the grain, and place over the vegetables.
  • Drizzle steak with any leftover balsamic vinaigrette.
  • Serve sandwiches open-faced, side-by-side on a plate, with thin slices of avocado, thyme sprigs and cracked black pepper for garnish.

1/2 cup freshly squeezed orange juice
1/2 cup soy sauce
1/2 cup maple syrup
1/4 cup olive oil, plus more for the veggies
1/4 cup balsamic vinegar
3 pounds trimmed skirt steak
1/2 cup heavy cream
One 1-pound block American cheese, cut into cubes
2 red onions, cut into thick rings
1 red pepper, cut into thick rings, seeds removed
1 yellow pepper, cut into thick rings, seeds removed
Kosher salt and freshly ground black pepper
6 hoagie rolls, preferably Amoroso's
1/4 cup (4 tablespoons) melted butter
Hot pickled cherry peppers, sliced, for garnish

Steps:

  • Combine the orange juice, soy sauce, maple syrup, olive oil and balsamic vinegar in a small bowl and pour over the skirt steak in a pan to marinate, up to 30 minutes.
  • In a medium saucepot, bring the cream to a boil. Slowly whisk in the American cheese until a sauce is formed. Keep warm.
  • Preheat a charcoal grill to medium-high heat.
  • Toss the onions and peppers in a bowl with some olive oil and season with salt and pepper. Place on the grill and cook until lightly charred and tender, 7 to 10 minutes.
  • Remove the skirt steak from the marinade and cook on the grill until medium-rare, 3 to 4 minutes per side. Remove from the grill and let rest for 10 minutes.
  • Slice the hoagie rolls lengthwise and butter the insides of the rolls. Grill until toasted, 2 to 3 minutes.
  • Slice the steak thinly against the grain and fill the rolls. Top with copious amounts of cheese sauce, grilled vegetables and hot cherry peppers.

1 1/2 pound skirt steak, cut lengthwise into 1/2-inch slices, room temperature
2 cups jarred pesto
Gray salt and freshly ground black pepper
Blue Cheese Fondue, recipe follows
1 tablespoon unsalted butter
1 1/2 teaspoons finely chopped fresh thyme leaves
1 teaspoon minced garlic
2 cups heavy cream
1/2 pound Cambozola blue cheese, crumbled, or other blue cheese
1/4 teaspoon freshly ground black pepper

Steps:

  • Soak 15 wooden skewers in cold water for 30 minutes. Heat the grill.
  • Thread the meat onto skewers, season with salt and pepper, and coat with the pesto. Grill to desired doneness. You can also cook the meat to medium rare then finish it off in the oven just before the party.
  • In a small pan over medium-low heat, cook the butter, thyme, and garlic until the garlic is soft, about 2 minutes. Be careful not to let the garlic brown. Add the cream, raise the heat to medium, and bring the cream to a simmer. Cook until the cream is reduced by 1/3. Lower the heat to maintain a slow simmer. Add the cheese and stir until the cheese is melted and the mixture is smooth. Add the pepper and pour into a fondue pot set over low heat.

1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon fresh coarse ground black pepper
1 teaspoon onion powder

1/4 teaspoon cayenne pepper, to taste
1 lb skirt steak (if necessary use flank steak or brisket, though it's not as good)
1 teaspoon canola oil
1 red pepper, halved & seeded
1 yellow pepper, halved & seeded
4 ciabatta rolls
1 whole whole grain mustard, to taste
1/2 lb blue gouda cheese, sliced medium thin
4 slices red onions or 4 slices sweet vidalia onions

Steps:

  • Mix all dry rub ingredients.
  • Thoroughly coat both sides of the skirt steak with dry rub and press onto steak.
  • Put in Ziplock Bag and refrigerate for 2-24 hours.
  • Prepare grill or broiler, coating with canola oil to prevent sticking.
  • Broil or grill pepper halves along with the skirt steak to medium rare, about 5-8 minutes per side.
  • Remove & let rest 10-15 minutes, while you prepare the rest of the ingredients.
  • Toast ciabatta rolls slightly and spread both sides with mustard.
  • Slice skirt steak across the grain 1/2" thick (If using flank steak or brisket, slice more thinly).
  • Assemble the sandwiches with equal amounts of skirt steak, topped with blue gouda, half of a roasted pepper and a slice of onion.

1 tablespoon Dijon mustard
1 large garlic clove, minced
1/2 teaspoon crushed red pepper flakes

1 1/4 lbs skirt steaks
1 large ripe tomatoes, thinly sliced
1 tablespoon balsamic vinegar
1/3 cup gorgonzola, crumbled (dolce cheese)
3 tablespoons mayonnaise (the real kind)
1 baguette, cut into four 6-inch lengths and split
1 bunch watercress, tough stems trimmed

Steps:

  • Light a grill or preheat a broiler.
  • In a small bowl, combine 1 tablespoon of the olive oil with the mustard, garlic and crushed red pepper.
  • Season with salt and black pepper.
  • Put the steak in a shallow baking dish and spread the mustard mixture all over it.
  • Grill the steak over high heat, turning once, until charred and medium rare, about 4 minutes per side.
  • Transfer the meat to a cutting board and let it rest.
  • Meanwhile, spread the tomato slices on a large platter, drizzle with the balsamic vinegar and the remaining 1 tablespoon of olive oil and season with salt and black pepper.
  • In a small bowl, mash the Gorgonzola with the mayonnaise.

¼ cup brown sugar
2 tablespoons rice vinegar
1 tablespoon diced garlic
1 tablespoon sweet chilli sauce (such as Mae Ploy®)
2 teaspoons minced fresh ginger root
1 (2 pound) beef skirt steak
½ cup crumbled blue cheese

Steps:

  • Whisk hoisin sauce, brown sugar, rice vinegar, garlic, chili sauce, and ginger together in a bowl until marinade is smooth; pour into a resealable plastic bag. Add skirt steak, coat with marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 24 hours.
  • Remove steak from the marinade and shake off excess. Discard remaining marinade.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Cook steak until it starts to firm and is reddish-pink and juicy in the center, 6 to 8 minutes per side. 1 small bunch fresh rosemary
sea salt & freshly ground black pepper
olive oil
skirt steak (one steak weighing 1 1/2 - 2 lbs)
1 large garlic clove
2 tablespoons creme fraiche or 2 tablespoons sour cream
1 tablespoon grated horseradish (fresh or store bought)
sea salt & freshly ground black pepper
1 lemon
extra virgin olive oil

Steps:

  • Put a grill pan on a high heat and let it get screaming hot.
  • Pick the rosemary leaves off the woody stalks and finely chop. Mix with a good pinch of salt and pepper and scatter over your clean board.
  • Drizzle olive oil over both sides of the steaks and roll them in the rosemary and seasoning.
  • Put the creme fraiche (or sour cream) and horseradish into a small bowl with a pinch of salt and pepper.
  • Halve your lemon and add a squeeze of juice to the bowl.
  • Add a splash of extra virgin olive oil and mix well.
  • Taste and add a little more horseradish if you think it needs to taste more fiery.
  • Lay the steak in your hot pan and press down gently.
  • Wait a minute, then turn over.
  • Cut the tip off the garlic clove and discard. Rub the hot, charred side of the meat with the garlic.
  • Flip the steak again after another minute, repeat the garlic rub, and press down again.
  • For medium-rare meat, cook for around 4 to 5 minutes on each side. For well-done meat, cook for a few minutes more.
  • Remove the steaks from the grill to a plate to rest for a few minutes. Drizzle with a little olive oil to keep them from drying out.
  • Place your steaks on plates and spoon a good dollop of the horseradish sauce on top or next to them.
  • Drizzle some of the lovely resting juices on top, and a little extra virgin olive oil.
