1/2 cup KRAFT Thousand Island Dressing, divided
4 small boneless skinless chicken breasts (1 lb.)
8 cups tightly packed torn mixed salad greens
1 small cucumber, sliced
4 hard-cooked eggs, quartered
1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

Steps:

  • Heat grill to medium heat.
  • Pour 1/4 cup dressing over chicken in shallow dish; turn to evenly coat both sides of chicken. Refrigerate 10 min.
  • Remove chicken from dressing; discard dressing. Grill chicken 6 to 8 min. on each side or until done (165°F). Slice chicken.
  • Cover 4 salad plates with greens; top with chicken, cucumbers, eggs and cheese. Drizzle with remaining dressing just before serving.

1 bunch Lettuce
1 cubed Mixed Colour Capsicum / Bell Peppers
1 Onion
1 Chicken Breast
2 to 3 slices Pineapple
Bread Slices or Baguette as needed
Thousand Island Dressing as needed (Recipe here)
For Marination:
3 tbsp Balsamic Vinegar or White Vinegar
2 tbsp Olive Oil
1 tsp Oregano
1 tsp Red Chilli Flakes
Salt to taste
1 clove minced Garlic

Steps:

  • Mix all the marination ingredients. place chicken breast in this and coat it on both sides. Now set aside for 10 mins.
  • Heat a grill pan on high heat. Brush it lightly with oil. Place chicken in the hot pan and let it cook for 5 to 6 mins on each side.
  • While the chicken is cooking, in the leftover marinate place bell peppers in and toss well. Place it on grill pan and cook till it is grilled. Once the chicken is done, remove the chicken to a board and let it rest. Place the pineapple and bread on the grill pan and let it toast.
  • Remove the pineapples to the board as well. Chop the chicken and pineapples.
  • Now assemble the salad, take a pretty place, place some lettuce leaves on it, Dot it with the grilled peppers, onions, pineapples, chicken and bread.
  • Top with the dressing generously and serve immediately.

8 strips thick-cut maple-glazed bacon
2 tablespoons unsalted butter, plus more as needed
8 slices sourdough bread
12 ounces cotswold cheese (double Gloucester with chives) or cheddar, shredded
4 tablespoons Thousand Island dressing

Steps:

  • Cook the bacon in a large nonstick skillet over medium heat until crisp, about 8 minutes. Remove and drain on a paper towel-lined plate. Wipe out the skillet.
  • Heat the butter in the skillet over medium heat. Add 2 bread slices. Top each with one-quarter of the cheese and 2 strips bacon. Spread 2 bread slices with some of the dressing and press them on top of the sandwiches, dressing-side down. Cook until the cheese melts and the bread is golden, 3 to 4 minutes per side. Repeat to make 2 more sandwiches, adding more butter as needed.

Steps:

  • Combine pineapple juice, soy sauce, brown sugar and garlic with 1 tablespoon provided sesame ginger dressing in small sauce pan. Bring to boil and reduce to 1/3.
  • Heat the grill or grill pan over medium-high heat; brush grill lightly with oil or spray with non-stick vegetable cooking spray.
  • Baste chicken with pineapple mixture. Grill chicken, turning once (and continuing to baste), 10 to 12 minutes or until no longer pink in center.
  • Slice chicken. Place salad blend in large bowl with provided accompaniments and toss with remaining dressing.

This is from an old Edgell recipe book called Nice & Easy Summer Recipes, the recipe called for canned tomato supreme but I just used crushed tomatoes..really great flavour for only a few ingredients..I also used chicken ribs instead of drumsticks, use whichever cut of chicken you prefer.

300 g crushed tomatoes
1/2 cup thousand island dressing
4 tablespoons apricot jam
1 tablespoon soy sauce

Steps:

  • Combine all marinade ingredients together.
  • Place drumsticks in a shallow dish and pour over marinade, chill for at least 30 minutes.
  • Cook drumsticks on oiled aluminium foil on a BBQ grill, brushing frequently with marinade for approx 40 mins or until cooked through.

2 tablespoons minced fresh parsley
4-1/2 teaspoons Dijon mustard
1 green onion, chopped
1 tablespoon minced fresh tarragon or 1 teaspoon dried tarragon
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breast halves (4 ounces each)
4 cups shredded romaine
6 bacon strips, cooked and crumbled
1 large tomato, chopped
1/2 cup sliced fresh mushrooms
1/3 cup chopped walnuts, toasted

  • In a small bowl, whisk the first nine ingredients. Place the chicken in a large resealable plastic bag; add 6 tablespoons vinaigrette. Seal bag and turn to coat; refrigerate for 2 hours. 1 tablespoon honey
1 tablespoon mustard
1/2 tablespoon olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 head lettuce
1 red pepper (cut into thin strips)
1 yellow pepper (cut into thin strips)
5 baby corn (cut into pieces)
bamboo shoot (optional)
1/2 bunch scallion (sliced)
4 teaspoons soy sauce
1/4 cup oil
1/4 cup vinegar
1/4 cup sugar
4 cloves fresh garlic (crushed)

Steps:

  • Using a sharp knife cut 3-4 diagonal slits in each cutlet.
  • Place onto a lined small baking pan.
  • Combine marinade ingredients and pour over chicken cutlets.
  • Place on oven rack 8-10 inches away from top.
  • Grill for 10-12 minutes, turning every few minutes.
  • Remove from oven, cover, and let sit for ½ hour.
  • Combine salad ingredients.
  • Combine all dressing ingredients well by hand.
  • Pour over salad ½ hour before serving.
  • When chicken is cool, cut into strips.
  • Toss salad with dressing and chicken.
