Great salad dressing from the Fresh Start Cookbook. This dressing is a favorite around our house. Easy to make with ingredients you probably already have on hand.

Ingredients

2 teaspoons finely minced garlic
1 tablespoon Dijon mustard
1/2 cup balsamic vinegar
1/4 cup hot water
1 tablespoon sugar
1 tablespoon olive oil
salt and pepper

Steps:

In a small bowl or food processor combine garlic and mustard until well mixed.
Whisk in balsamic vinegar, hot water and sugar.
Slowly add in olive oil mixing until emulsified.
Add salt and pepper to taste. Use immediately or cover and refrigerate.
Feel free to substitute different vinegars and seasoning to your own taste.

Yield Makes about ¾ cup or enough for 4 to 6 small salads

Ingredients

1 tablespoon Dijon mustard
1 small clove garlic, finely minced
1 tablespoon finely minced shallot, from 1 small shallot
½ teaspoon salt
¼ teaspoon freshly ground black pepper
1½ teaspoons sugar
3 tablespoons balsamic vinegar
½ cup extra virgin olive oil

Steps:

In a medium bowl, whisk together the mustard, garlic, shallot, salt, freshly ground black pepper, sugar and balsamic vinegar. While whisking vigorously, slowly pour in the oil to create an emulsion; the dressing should be slightly thickened and emulsified when all the oil is added. Taste and adjust seasoning, if necessary. Store the vinaigrette in a jar at room temperature for up to 4 days. Shake to re-emulsify when ready to use.

Having a choice of lemon juice or 1 of 2 differents vinegars adds versatility. I prefer using sel de mer which is also called sea salt but table salt is just fine to use.
