Grilled Garlic Parmesan Zucchini image

This is a summer favorite at my house. So easy and tasty, and complements steak, ribs, chicken or fish. By the way, these can be done in the oven under the broiler as well.

3 zucchini
3 tablespoons butter, softened
2 cloves garlic, minced
1 tablespoon chopped fresh parsley
½ cup freshly grated Parmesan cheese

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Cut the zucchini in half crosswise, then slice each half into 3 slices lengthwise, making 6 slices per zucchini.
  • Mix the butter, garlic, and parsley in a bowl, and spread the mixture on both sides of each zucchini slice. Sprinkle one side of each slice with Parmesan cheese, and place the slices, cheese sides up, crosswise on the preheated grill to keep them from falling through.
  • Grill the zucchini until the cheese has melted and the slices are cooked through and show grill marks, about 8 minutes.

3 tablespoons butter, melted
1 clove garlic, minced
1 large zucchini, very thinly sliced
½ cup shredded Parmesan cheese

Steps:

  • Preheat an outdoor grill for medium-high heat. Lightly oil a 9x12-inch foil pan with cooking spray.
  • Mix butter and garlic together in a bowl.
  • Lay zucchini slices in rows in the foil pan, overlapping if necessary. Brush butter on each slice and sprinkle with Parmesan cheese.
  • Cook on preheated grill until cheese melts and zucchini is tender, 12 to 15 minutes.

1 tablespoon olive oil
1 tablespoon Italian spices
1/2 teaspoon garlic powder
salt and pepper
1 (16 ounce) can Italian-style tomatoes
1/2 cup parmesan cheese

Steps:

  • Cut zucchini lenghtwise.
  • Brush with olive oil and sprinkle seasonings.
  • equally on all pieces.
  • Place cut side down on med-hot grill for 3 minutes. Turn 1/4 turn (do not flip) grill for another 3 minutes Flip and grill for about 5 more minutes. Zucchini should be soft, but not squishy.
  • Take off grill and cut into 1/2 in pieces. Toss with tomatoes and chesse and enjoy.

1/4 cup chopped onion
1 clove garlic, minced
2 tablespoons olive oil
4 large ripe tomatoes, chopped
1 teaspoon dried basil
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 medium zucchini, peeled and cubed
1 egg, lightly beaten
1 cup freshly grated parmesan cheese

Steps:

  • Heat oil in a large skillet over medium heat, and saute onion and garlic until tender, but not browned.
  • Add tomatoes, basil, sugar, salt and pepper.
  • Simmer, covered, for 20 minutes and stirring occasionally.
  • Add zucchini and simmer covered for 15 minutes, or until they are tender and stirring as needed.
  • Mix the beaten egg and the parmesan cheese together in a small bowl until it forms a mass.
  • With the aid of a tablespoon, drop the dumplings onto the tomato mixture (you should get 4 nicely-sized ones).
  • Simmer, covered, for 5 to ten minutes, until dumplings are firm.
  • When they are firm, gently flip them over to completely cook the top side (simmering another 1-2 minutes).
  • Serve each portion with one dumpling atop the tomato-zucchini mixture.
