GROUND BEEF GRAVY OVER RICE
This was a mistake made when trying to make chop steak in gravy. We liked it, so it stayed. The beef has to be very lean, but if you don't have lean beef on hand, just drain the fat before you add the water and gravy mix.

Steps:
- Chop onions and mince garlic and saute them in a large saucepan until they start to brown.
- Add ground beef, salt, pepper, cajun seasoning and worcestershire sauce and cook on med-high to high until browned.
- Add water and brown gravy mix and stir to combine.
- Once it comes to a boil lower to a simmer for 20 minutes.
- Serve over rice.

- In a large skillet, cook beef over medium heat until no longer pink; drain. Add 1-1/2 cups beef broth, onion, parsley, basil, garlic powder, seasoned salt and pepper. Simmer, uncovered, for 5-10 minutes or until onion is tender. , In a small bowl, combine cornstarch and remaining broth until smooth. Stir into beef mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with mashed potatoes or pasta.

- Cook rice in water according to package directions.
- Melt bacon grease in stockpot and sear meat on both sides.
- Remove meat and set aside. Add coarsely chopped vegetables to pot to soften.
- Add wine to pot and scrape up brown bits on bottom.
- Add meat back to the pot and add enough water to almost cover.
- Bring to a boil then reduce temperature to simmer for 1.5-2 hours.
- Remove meat and shred.
- Remove bay leaves and use an immersion blender to blend the liquid.
- Mix the butter and the rice flour together then add to the liquid. Increase temperature and stir occasionally until thickened.
- Return shredded meat to the pot and add salt to taste.
- Serve over 1/2 C rice.

My Mom made this when we were growing up, and now my grandkids ask for it too! Great for those nights when you are short on time, but long on hungry kids! The secret is searing the meat briefly before simmering in gravy. Comfort Food!!

- Form the ground chuck into small patties, about 4 oz. each.
- Spray a heavy skillet with cooking spray, season the skillet with seasoned pepper. Place over high heat until very hot.
- Add patties, sear briefly on each side until crusty, app. 1-2 minutes per side.
- Remove skillet from heat, and gently place patties onto paper towels to drain. Pour off any remaining fat from skillet, but do not wipe. Return meat to skillet, and pour the gravy over all.
- Cover skillet, place over medium-low heat. Simmer 10-15 minutes, until cooked through.
- Serve over hot, cooked rice.

DAD'S HAMBURGER GRAVY
This is one of my favorite 'cheap meal' recipes that I learned from my Southern cookin' Dad. Creamy hamburger gravy with just the right blend of spices is perfect served over homemade biscuits, mashed potatoes, rice, fried potatoes.. just about anything!

Steps:
- Crumble the ground beef into a large deep skillet over medium-high heat. Cook and stir until evenly browned. Drain most of the grease, leaving just enough to coat the pan. Add the onions, and cook for a few more minutes.
- Pour 4 cups of the milk into the pan, and stir to scrape up any bits of food that could burn on the bottom of the pan. Mix in the bouillon, butter, sage, salt and pepper. Bring to a boil, and cook for 5 minutes, stirring frequently.
- Mix the flour into the last cup of milk until smooth. Slowly pour into the skillet, stirring constantly. Simmer for a few minutes to thicken. If the gravy is too thick, thin with a little bit of milk. If it is too thin, simmer longer, or add more flour. Taste and adjust seasonings before serving.
