SWEET-SOUR RED CABBAGE
The first time I bought a red cabbage, I didn't quite know what to do with it. After some experimenting, I came up with this recipe that's now my fall comfort food. As a side, it's compatible with a variety of meat entrees, but I especially like it with a pork roast or chops.-Karen Gorman, Gunnison, Colorado

- In a small bowl, combine the vinegar, brown sugar, caraway and celery seeds; set aside. Place cabbage and onion in a saucepan; add a small amount of water. Cover and steam until tender, about 15 minutes. , Add vinegar mixture; toss to coat. Season with salt and pepper. Serve warm.

MOM'S SWEET-AND-SOUR RED CABBAGE

- 1. Using a box grater, mandoline, or a coarse Microplane grater, grate the cabbage. In a large saucepan, heat the oil over medium-high heat. Add the onion and sauté for 2 minutes.
- 2. Lower the heat to medium; add the cabbage and apples and stir to combine. Add the juniper berries, allspice berries, cloves, bay leaf, salt, pepper, jelly, vinegar, sugar, and 1/2 cup (120ml) of water and stir to combine. Turn the heat to low, cover, and cook for 40 minutes, until the cabbage is tender.
- 3. Remove the juniper berries, allspice berries, cloves, and bay leaf. Serve the cabbage hot or at room temperature. Refrigerate for up to 4 days. Leftovers can also be frozen in an airtight container for up to 1 month.

- Place cabbage in a medium saucepan with water and salt, and bring to a boil. Stir in brown sugar and caraway seeds. Cook 12 minutes, or until cabbage is tender; drain.

RED CABBAGE WITH SOUR CHERRIES
This dish incorporates dried cherries, fruit juice, honey and tomato paste (yes tomato paste) to balance the sweet - tart flavor of the dish. So different and interesting that I had to post the recipe.

- In a small dutch oven or deep medium skillet, melt the butter over medium heat. Add the cabbage, onion, and salt and saute until wilted, 5 minutes. Cover tightly, reduce the heat to medium-low and cook until the cabbage is very moist, 8 minutes.
- Add the juice, honey and tomato paste, stirring until the honey dissolves. Add the cherries, cinnamon, clove and cardamom (if using). Season with pepper. When the liquid boils, reduce the heat to a simmer, cover, and cook until the cabbage is very soft, about 1 hour. Remove the cinnamon stick and cloves before serving.

SWEET AND SOUR RED CABBAGE WITH CRANBERRIES

- Discard the outer leaves of the cabbage, quarter it, remove the hard core and finely slice the leaves.
- Heat the oil in a saucepan and sweat the cabbage with the salt and pepper and mace until it gives off a nutty aroma and is glossy and relaxed. Add the balsamic vinegar and the sugar and cook to evaporate it. Add the red wine and bay leaves, cover the pan, turn the heat down low and braise for 17 minutes, stirring halfway through.
- Add the cranberries, cover the pan, and cook for another 10 minutes, stirring halfway through.
BRAISED RED CABBAGE WITH CHERRIES
This variation on our Slow-Cooker Red Cabbage recipe uses tart cherries for a Summer dish rather than tart apples in Fall.

- Cut cabbage in half lengthwise, remove core, and slice as thinly as possible.
- Heat oil in a large saucepan over medium-low heat. Add cabbage, and saute stirring until wilted, about 10 minutes. Add vinegar, honey, and spices. Season well with salt and pepper. Add 3 tablespoons water, and continue cooking cabbage until almost soft, about 1 1/2 hours. (Add more water if needed while cabbage is cooking.)
- Cut apple in half lengthwise, remove core, and slice into very thin wedges. Add to cabbage, and continue cooking until cabbage is soft and almost dry, about 20 more minutes.
