This is a very nice dessert to serve when entertaining. Delicious served over mangos sprinkled with rum, or strawberries with Grand Marnier® or Cointreau®.

6 egg yolks
6 tablespoons white sugar, divided
½ teaspoon vanilla extract
2 ½ cups heavy cream
2 tablespoons brown sugar

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Beat egg yolks, 4 tablespoons white sugar and vanilla extract in a mixing bowl until thick and creamy.
  • Pour cream into a saucepan and stir over low heat until it almost comes to boil. Remove the cream from heat immediately. Stir cream into the egg yolk mixture; beat until combined.
  • Pour cream mixture into the top pan of a double boiler. Stir over simmering water until mixture lightly coats the back of a spoon, about 3 minutes. Remove mixture from heat immediately and pour into a shallow heat-proof dish.
  • Bake in preheated oven for 30 minutes. Remove from oven and cool to room temperature. Refrigerate for at least 1 hour or overnight.
  • Preheat oven to broil.
  • In a small bowl combine remaining 2 tablespoons white sugar and brown sugar. Sift this mixture evenly over custard. Place dish under broiler until sugar melts, about 2 minutes. Watch carefully so as not to burn.
  • Remove from heat and allow to cool. Refrigerate until custard is set again.

8 large egg yolks
1 cup heavy cream
1 cup frozen guava puree (available at Hispanic markets), defrosted
Granulated sugar

Steps:

  • Heat oven to 300 degrees. Place a kettle of water over high heat, to bring to a boil. Put egg yolks in a mixing bowl, and set aside. Place cream in a small saucepan over medium heat, to bring to a simmer.
  • When cream simmers, remove it from heat. Whisk yolks vigorously, while adding cream in a slow, thin stream. (Do not add cream too quickly or mixture will curdle.)
  • Pour cream mixture through a fine mesh strainer into a bowl. Add guava puree, and stir until blended. Pour into six half-cup ramekins, and set in a small baking dish. Carefully add boiling water to come halfway up sides of ramekins. Bake until set, about 45 minutes. Remove ramekins from water, and allow to cool.
  • Just before serving, cover surface of each ramekin with a thin layer of granulated sugar. Caramelize sugar under a broiler or with a kitchen blowtorch, until light golden brown and crisp. Serve immediately.

1 1/2 cups heavy cream
6 sprigs fresh thyme
3 egg yolks
3 1/2 tablespoons sugar, plus additional sugar for brulee tops

Steps:

  • Preheat the oven to 350 degrees F.
  • In a heavy bottomed pot bring cream just to the boil. Remove from heat, and add thyme and let sit for several minutes. Remove the thyme sprigs.
  • Meanwhile, whisk together the egg yolks and sugar in a separate bowl. Place the mixing bowl on top of a towel to keep it from wobbling while whisking in hot liquid. Gently whisk 1/3 of the hot cream mixture into the egg yolks, to temper the yolks and prevent lumps take care not to make an excessive amount of bubbles. While gently whisking, slowly pour the remainder of the hot cream mixture into the egg yolk mixture. With a spoon, skim off any bubbles that may have come to the surface.
  • Evenly space the ramekins on a paper towel-lined baking dish to prevent ramekins from sliding. Fill each ramekin to just below the top. Place on the extended middle rack of the oven. Carefully pour hot tap water into the baking dish until 3/4 of the way up the sides of the ramekins. Be careful not to get any water on the custard mixture. Cover the baking dish with aluminum foil and very gently slide it towards the center of the rack. Bake for about 30 minutes. Remove from the oven. Uncover and let the custards cool in the water bath until they are cool enough to handle. Remove. Chill in the refrigerator for at least 1 hour (see Cook's Note**).
  • Evenly top each custard with 1 to 1 1/2 teaspoons of sugar. Burn the sugar with a blowtorch or hot branding iron. It is important that the sugar layer is thick enough and goes all the way to the edge of the ramekin; any exposed custard can burn and curdle. Serve shortly after burning the sugar so that the burnt sugar doesn't soften.

1 qt heavy cream
2 whole cinnamon sticks
1 teaspoon ground cloves
1 teaspoon ground allspice
¼ teaspoon freshly ground black pepper
½ teaspoon freshly grated nutmeg
1 tablespoon ground ginger
7 large egg yolks
12 tablespoons granulated sugar, divided
¼ cup light brown sugar
1 tablespoon molasses
boiling water, for baking
powdered sugar, for dusting
6 ramekins, 6 ounce
culinary blow torch, optional
gingerbread man parchment paper cut-out, 3 in (8 cm)

Steps:

  • Preheat the oven to 325°F (160°C).
  • Add the cream, cinnamon sticks, cloves, allspice, black pepper, nutmeg, and ginger to a medium pot and whisk to combine. Turn the heat to medium-low and bring to just below a boil, about 200°F (95°C), about 10 minutes. The cream should start to bubble around the edges of the pan. Remove the pot from the heat, cover, and steep the spices for 20 minutes.
  • Meanwhile, add the egg yolks, 6 tablespoons granulated sugar, the brown sugar, and molasses to a large bowl. Whisk until the sugar dissolves. The mixture will be a golden honey color and should fall off the whisk in ribbons.
  • Set a fine-mesh sieve over a 4-cup liquid measuring cup or medium bowl and strain the cream mixture to remove the solids.
  • Slowly pour the strained cream into the egg yolk mixture, adding only a little at first to temper the eggs, whisking continuously until well incorporated. Use a spoon to skim any excess foam that may have accumulated on the surface.
  • Line a high-walled baking dish with a small dish towel or 1-2 paper towels to prevent the ramekins from sliding in the dish. Set 6 6-ounce ramekins in the dish. Ladle the custard into each ramekin, filling almost completely.
  • Carefully pour enough boiling water into the pan to come halfway up the sides of the ramekins, taking care not to splash any water into the custard.
  • Transfer the baking dish to the oven. Bake for 45-55 minutes, or until the custard is set around the edges of the ramekins but still jiggles in the center when shaken. The custard will continue to set as it cools.
  • Remove the baking dish from the oven and let the custards cool in the water bath until safe to handle, about 20 minutes. Transfer the custards to the refrigerator to set completely, at least 4 hours, or overnight.
  • Sprinkle 1 tablespoon of granulated sugar over the surface of each custard. Using a blow torch, caramelize the sugar until golden brown and hardened (it is okay if it darkens more in some areas). (Alternatively, set the ramekins on a baking sheet and broil on high for 3-4 minutes, until the sugar is golden brown and hardened.) Let the crème brûlées cool for 10 minutes.
  • Set a 3-inch gingerbread man parchment paper cut-out on top of a crème brûlée and dust with powdered sugar. Remove the cutter and repeat with the remaining crème brûlées. Serve immediately after dusting.
  • Enjoy!
