Time 50m

Yield 8

Number Of Ingredients 10

3 tablespoons all-purpose flour
½ cup white sugar
1 lime, zested
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon salt
1 recipe pastry for a 9-inch double crust pie
4 cups peeled, seeded, and thinly sliced guavas
1 tablespoon lime juice
3 tablespoons cold butter, cut into small pieces

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Combine flour, sugar, lime zest, cinnamon, nutmeg, and salt in a large bowl.
  • Fit pie crust in a 9-inch pie plate. Arrange guava slices on the bottom of the prepared pie crust, mounding slices of guava in the center of the crust. Sprinkle guavas with flour and sugar mixture. Drizzle pie filling with lime juice and dot with butter pieces.
  • Cover pie filling with the second pie crust and crimp the edges together. Make several slits in the top crust to allow the steam to escape.
  • Bake the pie in the preheated oven for 10 minutes. Reduce temperature to 350 degrees (175 degrees C) and bake until the filling is tender and the crust is golden, 30 to 40 minutes.

PEACH-GUAVA POPS

Peach-Guava Pops image

These five-ingredient frozen treats will delight palates of all ages. Just purée chopped peaches with guava juice, and add some lime zest and a pinch of salt. Then stir in macerated peach slices, and pour the mix into old-fashioned molds. After a stint in the freezer, you will have captured sunshine on a stick.

Time 6h40m

Yield Makes 10

Number Of Ingredients 5

3 peaches (1 pound), peeled, pitted, and chopped (2 cups), plus 2 firm but ripe peaches, sliced into scant 1/2-inch wedges
6 tablespoons fresh lime juice, plus 2 strips peeled zest, each 1 inch long (from 2 to 3 limes)
1/2 cup sugar
Pinch of kosher salt
3/4 cup guava juice

Steps:

  • Purée chopped peaches with 2 tablespoons lime juice. In a large bowl, toss sliced peaches with sugar, salt, and lime zest. Stir in peach purée; toss to combine. Let stand, stirring occasionally, until sugar has dissolved and peaches are glossy, about 20 minutes.
  • Strain mixture through a coarse-mesh sieve, pressing lightly to extract as much juice as possible, and reserving peaches. Stir together strained peach juice (you should have about 3/4 cup), guava juice, and remaining 1/4 cup lime juice.
  • Divide reserved peaches evenly among ice-pop molds; top with juice mixture. Freeze until firm, at least 6 hours and up to 5 days.

Number Of Ingredients 3

4 luizianne family-size tea bags
3/4 cup sugar (to taste)
hot water

Steps:

  • Heat a full cup of water in the microwave until boiling hot. I use a large measuring cup.
  • Submerge tea bags in water and let steep 3 minutes or until water gets dark.
  • Pour dark water into pitcher. Refill cup with hot water from the faucet and let steep for 2 minutes.
  • Add sugar to pitcher. Stir until dissolved.
  • Add hot water from cup and than fill the rest of the pitcher with hot water from the sink. Stir and Refrigirate.
  • Enjoy!
  • I refill my cup and let steep 4 times, but it depends on how dark you like your tea. If you are in a rush, 1 steep will do.

  • In a medium saucepan, combine sugar, honey, and 1 cup of water. Bring to a boil and stir until the sugar is completely dissolved.
  • Add syrup to the peach tea, taste testing as you go until it reaches desired sweetness. Adding 1 to 2 cups of syrup to the 4 cups, or 1 quart, of tea yields a pleasantly sweet range, depending upon your taste. Should you wish to add the syrup to a single serving of 8 ounces of tea, add 1⁄4 to 1⁄2 cup of the syrup.

  • Bring sugar, water, and peaches to a boil in a small saucepan. Then lower heat and use a wooden spoon to stir and crush the peaches to infuse the flavor.
  • In the meantime, brew your tea using either a large pot or a tea maker. I use this loose leaf tea steeper from IngenuiTEA. NOTE: Use less tea if you prefer it weaker or more tea if you prefer it stronger, and try not to let it steep longer than 4-5 minutes or it can get bitter.
  • Once brewed, remove tea bags or strain out loose leaf tea and transfer to a pitcher. Refrigerate to cool.
