PAN SEARED HALIBUT RECIPE WITH LEMON BUTTER SAUCE

Pan Seared Halibut Recipe With Lemon Butter Sauce image

This pan seared halibut recipe with lemon butter sauce takes just 20 minutes... which you'd never guess with how fancy pan fried halibut looks. I'll show you how to pan sear halibut, plus how to make the perfect sauce for halibut.

Provided by Maya Krampf

Categories     dinner     Main Course

Time 15m

Number Of Ingredients 8

4 6-oz Halibut fillets ((1.5 lb total))
1/2 tsp Garlic powder
1/2 tsp Paprika
1 tsp Sea salt
1/4 tsp Black pepper
2 tbsp Olive oil
1/2 cup Salted butter
1 medium Lemon ((cut in half))

Steps:

  • Use paper towels to pat the halibut fillets completely dry - this will ensure even browning. Season the fish on both sides with garlic powder, paprika, sea salt, and black pepper. Set aside.
  • Heat the olive oil in a large skillet over medium-high heat for 2 minutes.
  • Add the fish fillets in a single layer (you can do it in batches if all the fish won't fit in a single layer). Sear, without moving, for 3-4 minutes, until the edges of the fish are opaque. Flip and cook for 2-4 minutes, until cooked through.
  • Remove the fish from the pan and cover tightly with foil to keep warm.
  • Reduce heat to medium-low. Add the butter to the same pan. Wait for it to melt, then heat for 2-3 minutes, stirring occasionally, until the butter is browned and smells nutty.TIP: If you like garlic, you can also use this lemon butter sauce recipe.
  • Use the Zulay Kitchen Lemon Squeezer to squeeze all the juice from both halves of the lemon into the pan. Bring to a simmer, then reduce heat and simmer for about 3-4 minutes, stirring often, until volume is reduced by half. The lemon butter sauce will still be thin.
  • Drizzle a little lemon butter sauce over each serving plate. Place the pan seared halibut fillets over the sauce, then drizzle more sauce on top.

BLACKENED HALIBUT WITH CREAMY SHRIMP CREOLE

Blackened Halibut with Creamy Shrimp Creole image

Provided by David of Sunset & Sewanee

Categories     Main Course

Time 20m

Number Of Ingredients 4

1/2 lbs Butter, clarified
1/2 cup Blackening Seasoning (See the recipe on this blog.)
2/3 cup Creamy Shrimp Creole Topping (See the recipe on this blog.)
2 6 oz Halibut fillet

Steps:

  • Preheat the oven to (400°F or 190°C) degrees.
  • Use two pie pans or two shallow containers. In one pan place the warm clarified butter. In the other, add the dry blackening seasoning mix.
  • Take one fillet at a time and dip it into the clarified butter. (In these photos, I'm only dipping one side into the seasoning mix because of the thickness of the halibut fillets. You can, if you wish, dip both sides into the butter and seasoning mix for a more robust seasoning flavor.)
  • Turn on the overhead vent for your stove. If you don't have one, you may want to do this outside over a camping stove because it can create a lot of smoke.
  • Get a dry heavy cast iron pan super hot until smoking. DO NOT ADD OIL to the pan as it will catch fire!
  • Without losing any of the seasonings, add the fish to the hot pan seasoning side down. The combination of the cold fish and the clarified butter will cause the fish to float almost over the high heat of the pan without sticking.
  • Cook the fish until the seasoning is slightly charred black in spots. At this point, I gently flip the fish and place it in a cooking dish with a little butter, white wine, and lemon juice.
  • Place the fish into the oven at 400 degrees to finish cooking the halibut all the way through...about 8-10 minutes in this case. Check with a meat thermometer until the fish has reached an internal temperature of 145 degrees.

7 WAYS TO WORK WITH HALIBUT STEAKS | WILD ALASKAN COMPANY

From wildalaskancompany.com
  • Baked Halibut Steaks. This baked halibut is a hearty dish but is also incredibly light and seriously healthy. The fish steaks aren’t even seasoned or marinated, so it’s a great quick and easy meal to whip up in just 15 minutes.
  • Roasted Halibut Steaks with Nectarine Chutney. Summer is over but its flavors don’t have to be. This roasted halibut is baked in one pan on top of fresh nectarines, resulting in a slightly sweet but light dish with perfectly cooked fish and tart chutney.
  • Halibut Steaks with Pico de Gallo. Taco night gets a healthy twist from this pan-seared halibut dish. The halibut steaks are cooked for just 3-4 minutes on each side, and then topped with a refreshing and slightly spicy pico de gallo mixture, and all finished off with fresh lime juice.
  • Fried Halibut Steaks. This fried fish dish only takes about 10 minutes to cook (5 minutes on each side) and the breading is simple — just a mix of lemon juice and flour.
  • Pesto Grilled Alaska Halibut Steak. We love anything and everything served with pesto sauce, and this halibut dish is no exception. The recipe calls for homemade pesto but if you’re pressed for time, store-bought will do just fine.
  • Grilled Halibut Steaks with Potatoes, Olives, and Onions. It can be hard to beat a perfectly grilled piece of fresh fish, and these grilled halibut steaks are perfect when finished with a flavorful herb vinaigrette.
  • Butter-Basted Halibut Steaks with Capers. Is there anything better than anything smothered in melted butter and garlic? Nope, there is not. This halibut steak dish is seasoned with salt and pepper and cooked until just golden brown, but the real treat is braising the cooked fish in butter, thyme, garlic and capers with extra sauce drizzled on top.
