I made this earlier today and it was absolutely fabulous!! It's virtually identical to the pumpkin bread that Bob Evans Restaurants sell and nicely moist and slices easily. Half of it was gone before it even cooled!! My husband said it was identical to the expensive restaurant bread. I will make this again!!

3 1/2 cups pumpkin puree (which is the large 29 oz can, use it all)
1/2 cup vegetable oil
2 2/3 cups white sugar
4 eggs
3 cups all-purpose flour, plus
baking powder
2 tablespoons all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
nutmeg
1/2 teaspoon ground cloves

Steps:

  • Preheat the oven to 350 degrees F Grease and flour two 9x5 inch loaf pans.**.
  • In a large bowl, mix together the pumpkin, oil, sugar, and eggs.
  • Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the pumpkin mixture until well blended.
  • Divide the batter evenly between the prepared pans.
  • Bake in preheated oven for 55 mins to 60 mins (1 hour). The top of the loaf.
  • should spring back when lightly pressed and a toothpick inserted in the middle should come out clean.
  • **NOTE** I use silicone loaf pans which I highly recommend. I still spray them with Pam because I'm paranoid but everything I bake FALLS right out of the pan. I've been using them since 2006 when I got my first silicone bundt pan and it worked so well that I threw away ALL my other baking pans and bought all silicone--including the mats to bake cookies on. I can't recommend them highly enough--THEY TOTALLY ROCK!

My grandmother and I always make tons of these at Christmas time to give as gifts. It isn't the holidays without this dessert. Not only are they delicious, they're freezer-friendly! I would classify these in the same family as banana bread (sweet loaf) rather than 'bread.'

1 serving nonstick cooking spray
3 ½ cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
½ teaspoon salt
3 cups white sugar
1 (15 ounce) can solid-pack pumpkin puree
1 cup vegetable oil
3 eggs
1 cup chopped walnuts
1 cup raisins
1 ½ cups confectioners' sugar
6 teaspoons orange juice
1 teaspoon grated orange zest
1 tablespoon chopped walnuts, or as desired

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray two 9x5-inch loaf pans with cooking spray.
  • Mix flour, baking soda, baking powder, cloves, cinnamon, nutmeg, and salt together in a medium bowl. Set aside.
  • Mix sugar, pumpkin, oil, and eggs together using an electric mixer in a large bowl until well blended. Mix in flour mixture until well combined. Stir in walnuts and raisins by hand. Divide batter between the prepared pans.
  • Bake in the preheated oven until a toothpick inserted into the center of the loaves comes out clean, 50 to 55 minutes. Remove from the oven and let cool in the pans on a wire rack for 15 minutes. Remove loaves from the pans and let cool completely, about 15 minutes more.
  • Combine confectioners' sugar, orange juice, and orange zest in a small bowl. Stir using a spoon to blend well. Spoon glaze over the top of cooled loaves, letting excess run down the sides. Sprinkle with additional 1 tablespoon walnuts before glaze hardens.

3 cups sugar
2 cups all-purpose flour
1 teaspoon each ground cinnamon, nutmeg and allspice
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 large eggs
1 can (15 ounces) solid-pack pumpkin
1 cup vegetable oil
1 teaspoon vanilla extract
1-1/2 cups chopped pecans

Steps:

  • In a bowl, combine the sugar, flour, spices, baking powder, baking soda and salt. In another bowl, combine the eggs, pumpkin, oil and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in pecans., Spoon into two greased and floured 8x4-in. loaf pans. Bake at 350° for 65-75 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pans to wire racks.

1 teaspoon baking soda
1/2 cup hot water
1/4 cup vegetable oil
3 cups sugar
4 eggs, well beaten
2 cups canned pumpkin
1/4-1/2 teaspoon cardamom (cinnamon contains caffeine, I use cardamom because it is Scandinavian like my family history. use wh) or 1/4-1/2 teaspoon cinnamon (cinnamon contains caffeine, I use cardamom because it is Scandinavian like my family history. use wh)
3 1/2 cups flour

Steps:

  • Preheat oven to 350°F.
  • Grease 2 loaf pans or 3 medium size disposable gift pans or one large 11 1/2 inch size cast iron fry pan.
  • The fry pan makes it nice and crusty on the edges and bottom.
  • Dissolve baking soda and HOT water together; stir and set aside.
  • Mix together the following: oil, sugar, eggs, pumpkin; then add soda water into it.
  • Spices.
  • Flour 1/2 cup at a time until all is added stir in between.
  • Bake for 50-60 minutes until golden brown and done by toothpick test.
