Mini Frittatas With Ham & Cheese image

Bake these bite-sized frittatas in a miniature muffin pan. They taste great hot or at room temperature, so you can make them in advance. You can use 4 large eggs in place of the egg whites, egg whites just make it lower in fat. Enjoy!

cooking spray
1/2 cup finely chopped onion
2/3 cup chopped reduced-fat ham (about 2 ounces)
1/3 cup shredded reduced-fat sharp cheddar cheese (about 1-1/2 ounces) or 1/3 cup sharp cheddar cheese (about 1-1/2 ounces)
2 tablespoons chopped fresh chives
1/8 teaspoon dried thyme
1/8 teaspoon black pepper
4 large egg whites
1 large egg

Steps:

  • Preheat oven to 350 degrees.
  • Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  • Add onion; saute 2 minutes or until crisp-tender.
  • Add ham; saute 3 minutes.
  • Remove from heat; cool 5 minutes.
  • Combine remaining ingredients in a large bowl; stir with a whisk.
  • Add ham mixture, stirring with a whisk.
  • Spoon mixture into 24 miniature muffin cups coated with cooking spray.
  • Bake at 350 degrees for 20 minutes or until set.

6 large eggs
4 large egg whites
2 tablespoons fat-free milk
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons minced fresh chives
3/4 cup cubed fully cooked ham (about 4 ounces)
1 cup shredded fat-free cheddar cheese

Steps:

  • Preheat oven to 375°. In a bowl, whisk the first 5 ingredients until blended; stir in chives. Divide ham and cheese among 8 muffin cups coated with cooking spray. Top with egg mixture, filling cups three-fourths full. , Bake until a knife inserted in the center comes out clean, 22-25 minutes Carefully run a knife around sides to loosen.

8 large eggs
1/2 cup whole milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
4 ounces thinly sliced ham, chopped
1/3 cup freshly grated Parmesan
2 tablespoons chopped fresh Italian parsley leaves

Steps:

  • Preheat the oven to 375 degrees F.
  • Spray 2 mini muffin tins (each with 24 cups) with nonstick spray. Whisk the eggs, milk, pepper, and salt in a large bowl to blend well. Stir in the ham, cheese, and parsley. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. Serve immediately.

These little frittatas are so quick and easy, and my husband and kids just gobble them up. Make them in a 24 cup mini-muffin tin. I first had these at a neighborhood breakfast, and my neighbor added fresh onions and veggies, but this is great for making on nights when there isn't much in the fridge! Honey ham is good in these, as well. They can be served hot or cold and are great as reheated leftovers.

Steps:

  • Preheat the oven to 375°F.
  • Brush a 12-muffin tin liberally with the butter. Divide the chopped cheese and ham evenly among the muffin cups. Add the milk, chives, salt and pepper, and hot sauce to the eggs and fill the cups up to just below the rim with the egg mixture. Bake the frittatas until golden and puffy, 10 to 12 minutes.
