1/3 cup grated Parmesan cheese

Steps:

  • ►Stir together rice, ham, cheese, 1 egg, and 1/4 tsp pepper. Put remaining egg (lightly beaten) and bread crumbs in separate shallow bowls. ► Heat 1 to IV21-1/2 inches oil to 350°F in a 10-inch skillet over high heat. Meanwhile, dampen your hands and form 1/4-cup amounts of rice mixture into 2-1/2-inch cakes or balls. Lightly coat with egg, then with bread crumbs. Fry croquettes in 2 batches, turning once or twice, until golden-brown, 2 to 3 minutes per batch.

1/2 cup chopped onion
2 tablespoons butter
1 cup uncooked long grain rice
2-1/4 cups chicken broth
2 tablespoons chopped fresh parsley
1 egg, lightly beaten
1/2 cup grated Parmesan cheese
1 teaspoon dried basil
1/4 teaspoon pepper
1/2 cup dry bread crumbs
Canola oil
Additional fresh parsley, optional

Steps:

  • In a large saucepan, saute onion in butter until tender. Add rice; saute 3 minutes. Stir in broth and parsley; bring to a boil. Reduce heat; cover and simmer for 20 minutes. Cool for 30 minutes. , Stir in egg, cheese, basil and pepper. Moisten hands with water and shape 1/4 cupfuls into logs. Roll in crumbs. , In an electric skillet, heat 1/4 in. of oil to 365°. Fry croquettes, a few at a time, for 3-4 minutes or until crisp and golden, turning often. Drain on paper towels. Sprinkle with parsley if desired.

I don't know how this recipe came to be, but we know my great-grandmother made this. It is made with diced ham in the oven and covered in bread crumbs. After shaping them, you can put cheese or anything you want into the middle for a filling. I personally like cream cheese or Cheddar cheese in mine but you can put whatever you want in the middle.

1 cup baking mix
1/4 cup milk
1 large egg, beaten
Reserved deli ham from Ham and Cheese Spirals recipe, chopped
Reserved Cheddar from Ham and Cheese Spirals recipe, chopped
1/2 medium onion, chopped
2 teaspoons fresh chopped thyme leaves
Kosher salt and freshly ground black pepper
2 cups canola oil, for frying
1 cup panko bread crumbs

Steps:

  • In a large bowl add the baking mix, the milk and the egg and whisk to combine. Stir in the ham, cheese, onion, and thyme, and season with salt and pepper, to taste.
  • In a high sided skillet over medium-high heat, add the oil and heat it to 365 degrees F.
  • In a shallow baking dish or pie plate spread out the bread crumbs and season with salt and pepper, to taste. Using a small cookie scoop or tablespoon measure, scoop out rounds of dough and drop them into the bread crumbs. Roll the dough around to coat them completely. Drop the croquettes, 5 or 6 at a time, into the hot oil and fry until deep golden brown, about 3 minutes. Remove from the oil and drain on brown paper or paper towels. Arrange them on a serving platter and serve warm.

½ cup fresh chopped garlic
¼ cup dried minced onion
3 cups Italian-style bread crumbs
2 cups shredded extra-sharp Cheddar cheese
½ cup brown sugar
¼ teaspoon ground black pepper
1 tablespoon water
2 cups extra-virgin olive oil

Steps:

  • Grind ham into a large bowl.
  • Beat 3 eggs in a small bowl.
  • Melt butter in a small skillet over medium heat. Add garlic and dried onion; cook and stir until browned, about 5 minutes. Pour mixture into the bowl with the ham; add the beaten eggs, 1 cup bread crumbs, Cheddar cheese, brown sugar, and black pepper. Mix by hand until combined; mold into 15 to 18 medium croquettes, or rectangular balls.

1/4 to 1/2 teaspoon curry powder
1/4 cup all-purpose flour
3/4 cup whole milk
2 to 3 teaspoons prepared mustard
1 teaspoon grated onion
2 cups coarsely ground fully cooked ham
2/3 cup dry bread crumbs
1 large egg, room temperature, beaten
2 tablespoons water
Oil for deep-fat frying
2 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon salt
Dash pepper
1-1/4 cups whole milk
1/2 cup shredded cheddar cheese
1/2 cup shredded Swiss cheese

Steps:

  • In a saucepan, melt butter; stir in curry powder and flour. Gradually add milk. Bring to a boil; cook and stir until thickened, 2 minutes. Remove from the heat. Stir in mustard and onion; add ham and mix well. Cover and chill thoroughly. , With wet hands, shape mixture into 10 balls. Roll balls in bread crumbs; shape each into a cone.
