HAM 'N' CORN FRITTERS

Steps:
- Separate eggs; let stand at room temperature for 30 minutes. In a large bowl, beat egg yolks until slightly thickened. Beat in milk. Combine the flour, sugar, baking powder, salt and pepper; add to yolk mixture and mix well. Stir in corn and ham. , In a small bowl, beat egg whites on high speed until stiff peaks form. Fold into the corn mixture., In an electric skillet or a deep-fat fryer, heat oil to 375°. Drop batter by heaping tablespoonfuls, a few at a time, into hot oil. Fry until golden brown, about 1 minute on each side, turning with a slotted spoon. Drain on paper towels.

Steps:
- Place the flour in a medium mixing bowl.
- Combine the eggs and milk.
- Stir egg mixture into the flour with the corn, ham, cheese, mustard and shallot.
- Mix well.
- Coat a medium frying pan with cooking spray heat and drop 1/4 cup portions of the batter onto the pan.
- Cook on low for 2-3 mins on each side until golden.
- Serve with the chutney.

HAM AND APPLE FRITTERS WITH CRANBERRY ORANGE CROWN AND ROYAL FIG DIPPING SAUCES
Steps:
- For Fritters:
- Heat oil in a Dutch oven or deep-fryer until it reaches 350 degree F.
- In a large bowl add the cornbread mix, garlic powder, milk, egg and onions. Mix well to combine. Add apple and ham and stir to combine.
- Using a tablespoon or small scoop, carefully slide tablespoon size amounts of the fritter batter into the hot oil. Fry about 6 at a time. Fry for approximately 2 to 3 minutes or until golden brown and crispy. Remove from oil and drain on paper towel lined baking tray.
- Serve alongside dipping sauces.
- For Cranberry Mustard Dipping Sauce:
- Combined all ingredients into a small bowl and mix well.
- For Creamy Fig Sauce:

- Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
- In a medium bowl, combine flour, baking powder, salt and sugar. Beat together egg, milk, and melted shortening; stir into flour mixture. Mix in the corn kernels.
- Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels.

- Whisk together flour, baking powder, 2 teaspoons salt, and 1/4 teaspoon pepper in a large bowl. In a separate bowl, stir together butter, eggs, and milk; add to flour mixture, and stir until just combined. Add ham (if desired), zucchini, and corn, and stir until well blended.
- Heat 1 inch of oil in a large cast-iron skillet over medium heat until it registers 350 degrees on a deep-fry thermometer.
- Working in batches of 4 or 5, gently drop 2 tablespoons batter into skillet for each fritter, pressing gently with a spatula to flatten. Cook, turning once, until golden brown, about 2 minutes per side. Transfer with a spatula or slotted spoon to paper towels to drain. Season fritters with salt and pepper while still hot. Make sandwiches with fritters using bacon, cheese, avocado, and tomato, if desired.

- Mix cornmeal, cream-style corn, clams, onion, flour, baking powder, salt, and sugar in a bowl until batter is thoroughly combined. If batter is too thick, stir in milk, about 1 tablespoon at a time.
