CRUSTLESS HAM AND CHEESE QUICHE
This is a quiche that is so easy and quick. I make it everytime I have company overnight or for lunch. You can substitute most any meat, ie chicken breast or pastrami or sausage. Also you can use spinach instead of broccoli. I have also added chopped tomatoes, but you need to cook a little longer if you do. I like to serve with crusty bread and a salad. My company always love this and ask for the recipe. Enjoy!

HAM AND SWISS CHEESE QUICHE
This quiche has been a family favorite for many years. Very tasty and fairly easy to make. It has a mild flavor and even my kids liked it (if they couldn't see the green pepper.) You can use left over ham or as I often do ham lunch meat. This does make a very full pie crust.

Steps:
- Sift flour, add salt, and then cut in the butter until dough is a consistency similar to bread crumbs. Slowly add the cold water and once combined shape into a smooth ball (don't over work), wrap in foil, and put in fridge to cool / rest for at least 30 minutes.
- Blind bake the crust. Pre-heat oven to 350 degrees. After 30 minutes, remove from fridge and roll out into a large circular shape on a floured surface. Gently place the dough over and into a 9 inch 1 1/4 inch deep pie pan (standard size) and then cut off excess around the edges. Bake for 10 minutes.
- Meanwhile, add garlic and onions to a saute pan with olive oil. Saute until onions are translucent. Add ham and then spinach and cook until spinach is wilted.
- In a large bowl, add eggs and milk and whisk vigorously. Then add ham, onions, and spinach and mix, then add cheese and mix all together.
- Slowly pour the mixture into the pre-baked pie crust and then add to oven. Bake for 40-50 minutes until middle is done and set. Edges should be browned, center set but still a little jiggly. Let cool for at least 10 minutes and then enjoy!

- Roll out your pie crust on a well-floured surface, measured to the point that it’s about an two inches wider than the pan you plan to use. Place pie crust in pan, flattening it into the sides and trimming any excess. Place in fridge while preparing filling.
- Crack eggs into a large bowl, and add heavy cream. Beat until smooth. Add salt and pepper to taste, and then stir in cheeses. Add ham and spinach and stir the entire mixture until well combined.
- Pour mixture into pie crust, using a spoon to ensure that it spreads about evenly. Carefully (it will spill easily) place quiche in oven, and bake for 35 minutes, or until texture is “jiggly” but solid. Cooking times may vary depending on size and depth of pan used. We used an 11″ pie pan that was about an inch deep.

- Roll out the thawed pie crust for the quiche crust and place it over an 8-inch, greased pie pan. Press down the quiche crust and prep the edges as you would a normal pie. You can also use an already prepped crust as long as it’s thawed.
- Place all ingredients in a bowl except the ham, spinach, and shredded mozzarella, and mix well. Don’t over mix, you want the eggs to just barely be whipped.
- Place half of the ham, spinach, and cheese in the bottom of the bare crust, pour the egg mixture over the top of the quiche ingredients.

- In a food processor, pulse the flour with the butter and salt until the mixture resembles coarse meal. Add the water and pulse a few times until a crumbly dough forms. Turn the dough out onto a work surface and knead 3 times, until it just comes together. Pat into a disk, wrap in plastic and refrigerate for at least 1 hour.
- Preheat the oven to 350°. On a lightly floured work surface, roll the dough out to a 12-inch round. Fit the round into a 10 1/2-inch tart pan with a removable bottom. Roll the rolling pin across the top of the pan to remove the excess dough. Line the dough with foil and fill it with rice or pie weights. Bake the tart shell for about 1 hour, or until golden around the edge. Remove the foil and rice and bake the shell for about 18 minutes longer, or until golden on the bottom. Transfer the tart shell to a wire rack and let it cool completely. Increase the oven temperature to 375°.
- In a large skillet, melt the butter. Add the mushrooms, season with salt and pepper and cook over moderate heat, stirring occasionally, until tender and browned, about 8 minutes. Let cool.
- In a medium bowl, whisk the eggs with the cream, milk, 3/4 teaspoon of salt and 1/4 teaspoon of pepper. Scatter the mushrooms, ham and cheese in the tart shell and pour the custard on top. Bake the quiche for about 30 minutes, or until it is lightly browned on top and the custard is just set. Transfer to a rack to cool for 15 to 20 minutes. Unmold the quiche, cut into wedges and serve.
