1 yellow cake mix
1/2 stick unsalted butter [softened]
3 eggs
1 cupo sour cream
1 pkg [ minus 1 tsp. for glaze ] raven's spice
1 1/2 cups peeled and diced granny smith apples

Steps:

  • Mix together and pour into a greased and flour bundt pan. Bake at 350 for 45 min.[or until golden brown ] cool 10-15 mintures. drizzie with glaze. GLAZE mix 1 tsp Raven's spice with 2 tbsp of milk ,then slowly add 1 cup powdered sugar.

3 cups all-purpose flour
1 tablespoon apple pie spice
1⁄2 teaspoon salt
1⁄2 teaspoon baking powder
1⁄2 teaspoon baking soda
11⁄2 cups unsalted butter, softened
13⁄4 cups sugar
3 large eggs
3 cups chopped apple, such as Granny Smith or Gala
2 teaspoons orange zest
1 tablespoon vanilla extract
1⁄2 cup chopped pecans
Brown Sugar Glaze (recipe follows)
Garnish: Miniature Caramel Apples (see how-to above)
1⁄2 cup firmly packed dark brown sugar
3 tablespoons apple cider
2 tablespoons unsalted butter
1 tablespoon dark corn syrup
1⁄8 teaspoon salt
1 cup confectioners' sugar, sifted

Steps:

  • Preheat oven to 325°. Spray a 15-cup Bundt pan with nonstick baking spray with flour. Set aside. In a large bowl, whisk together flour, apple pie spice, salt, baking powder, and baking soda. In a large bowl, beat butter and sugar at medium speed with an electric mixer until fluffy, stopping occasionally to scrape sides of bowl. Add eggs, one at a time, beating until combined. With mixer on low speed, gradually add flour mixture, beating until combined. Add apple, zest, and vanilla, beating until combined. Fold in pecans. (Batter will be thick). Spoon into prepared pan, spreading evenly. Bake until a wooden pick inserted near center comes out clean, approximately 1 hour and 5 minutes. Let cool in pan 15 minutes. Remove from pan, and let cool completely on a wire rack. Prepare Brown Sugar Glaze and Miniature Caramel Apples. Place a piece of wax paper under rack; drizzle cake with remaining Brown Sugar Glaze. Let stand until glaze is set, approximately 30 minutes. Garnish with Miniature Caramel Apples, if desired.
  • In a small saucepan, bring brown sugar, cider, butter, corn syrup, and salt to a boil over medium-high heat. Reduce heat to medium-low; cook 1 minute. Remove from heat. Add confectioners' sugar; beat at low speed with an electric mixer 1 minute. Let cool 3 minutes before using.

1 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup unsweetened applesauce
3/4 cup chopped pecans, toasted
2/3 cup finely chopped peeled tart apple
3 tablespoons butter or 3 tablespoons margarine
3 tablespoons brown sugar
3 tablespoons whipping cream
3/4 cup confectioners' sugar
1/2 teaspoon vanilla extract
2 tablespoons chopped pecans, toasted

Steps:

  • In a large mixing bowl, cream butter, shortening, sugars and lemon peel until fluffy.
  • Add eggs one at a time, beating well after each addition.
  • Beat in vanilla.
  • Combine the flour, cinnamon, baking soda, allspice, nutmeg and salt; add to creamed mixture alternately with applesauce.
  • Stir in the pecans and apple.
  • Pour into a greased and floured 9- or 10-in. bundt pan.
  • Bake at 350 for 55-60 minutes or until a toothpick inserted near the center comes out clean.
  • Cool for 10 minutes; remove from pan to a wire rack to cool completely.
  • For glaze, in a heavy saucepan, melt butter and brown sugar over low heat.
  • Stir in cream.
  • Cook and stir until mixture comes to a boil; boil for 1 minute.
  • Remove from heat; whisk in sugar and vanilla until smooth, about 1 minute.
  • Pour over cake, immediately sprinkle with pecans.

3 large eggs
1 cup vegetable oil
2 cups white sugar
1 tablespoon real vanilla
2 cups zucchini, freshly grated
2 3/4 cups sifted flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1 tablespoon cinnamon
1/4 teaspoon allspice
1/8 teaspoon ginger
1 teaspoon salt
1 2/3 cups cinnamon baking chips (optional)
1 cup walnuts, broken

Steps:

  • Preheat oven to 350 degrees.
  • In large glass batter bowl, break eggs and stir well with fork. Add sugar,vanilla and oil to eggs and mix again with fork. Measure and sift 1 cup flour, baking soda, salt, baking powder and spices into batter. Stir lightly with fork until mixed. Measure remaining flour into sifter and add to batter. Add broken nut pieces and cinnamon chips, if desired. Mix.
  • Spray bundt cake pan with no stick spray and dust lightly with flour. Remove excess flour.
  • Pour batter into bundt pan evenly, then bake for 60 minutes. Let cool down to warm before removing from pan.
  • Frost if desired, when cool with Cream Cheese Frosting. Sprinkle with broken walnut or pecan pieces for garnish if desired.
