HAMBURGER STUFFED POTATOES

Steps:
- Pierce each potato once with a fork and wrap in a paper towel.
- Arrange potatoes in spoke fashion on the bottom of the microwave.
- Cook on high, turning over and end-to-end once, until done (15 to 20 minutes).
- Meanwhile, cook beef in a large frying pan over medium-high heat until no longer pink.
- Add onion and cook until soft, about 5 minutes.
- Add tomato puree, thyme, marjoram and then salt and pepper to taste.
- Cook for about 5 minutes.
- Halve potatoes lengthwise.
- Scoop out flesh, combine with butter and mash (I added a little milk to make moist).
- Taste for seasoning and add salt if needed.
- Divide meat mixture among potato skins and top with mashed potatoes.
- Cook in microwave on high until heated through, about 5 minutes.
- Good like this, or top with your favorite cheese.
HAMBURGER CASSEROLE WITH MASHED POTATOES
Steps:
- Gather the ingredients. Heat the oven to 350 F.
- In a small bowl, soak the breadcrumbs in milk.
- In a large bowl, mix the ground beef with the bread crumb mixture, along with the salt, pepper, onion, and the beaten egg .
- Pat the meat mixture into a 9-inch pie plate. Bake in the preheated oven for 30 minutes. Remove the ground beef from the oven and carefully pour off the excess fat.
- Top the meat with the mashed potatoes; sprinkle with cheese. If desired, sprinkle lightly with paprika.
- Return to oven for about 15 minutes longer, or until the cheese is melted and potatoes are thoroughly heated.

- Heat gas or charcoal grill. In large bowl, mix beef, Worcestershire sauce and garlic salt. Shape mixture into 12 thin patties, about 4 inches in diameter. Place cheese cube on 6 of the patties; top each with bacon. Top each with 1 remaining patty; press edges to seal.
- Place patties on grill over medium heat. Cover grill; cook 12 to 15 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F.
- Make mashed potatoes as directed on box, using water, butter, milk and Cheese Sauce pouch. Top each burger with sour cream and onions. Serve with mashed potatoes.

MOM'S LEGENDARY STUFFED HAMBURGERS
These are enormous, stick-to-your-ribs kind of burgers with a surprise in the center. A real family favorite. I like to serve them on a bun topped with sauteed mushrooms and Swiss cheese. Use extra lean or lean ground beef instead of medium because the bacon adds to the fat content of the meat.

- Prepare a grill for medium heat. When hot, lightly oil the grate.
- Fry the bacon in a skillet over medium heat for about 5 minutes, stirring frequently. Add onions to the pan; cook and stir until bacon is browned, but not crisp and onion is soft. Remove from the pan and drain on a paper towel-lined plate. Season to taste with black pepper.
- In a large bowl, mix together the ground beef and onion soup mix. Divide into 8 balls and then flatten into thin patties. Place a quarter of the bacon mixture onto each of four patties. Top with the remaining patties and press the edges together to seal.
- Grill the burgers for about 15 minutes, turning once, until well done. Serve on buns with your favorite condiments.

- Line a baking sheet with parchment paper. Place leftover stuffing in a mixing bowl. Stir in beaten egg until evenly combined.
- Scoop 1/2 cup of mixture up and form a patty. Place patty on the parchment lined baking sheet. Repeat 3 more times until you have 4 patties.
- Place baking sheet in the freezer and freeze for at least 1 hour.
- Heat oil in a large skillet over medium-high heat. Place patties in the skillet and cook, undisturbed, for 5 minutes. Carefully flip and cook 5 minutes more or until desired browning is achieved.

STUFFING STUFFED BURGERS

- Preheat oven to 350*F Prepare a 9x13 casserole dish with cooking spray. Cook stuffing according to package directions, set aside. OR use leftover stuffing! In a bowl, combine ground beef, salt, 1/3 cup evaporated milk and crackers. Mix well with hands and divide into 6 balls. Split each ball into two. Flatten out each half. Place 2 Tablespoons of stuffing in the center on one of the flat patties. Place second patty on top and press seams together. Place in casserole dish. Do this for other 5 patties. In same, but now empty bowl, combine cream of mushroom soup, cream of onion soup, 1/3 cup evaporated milk, Worcestershire sauce and Ketchup. Mix well. Pour this mixture over burgers. Cover and bake for 45 minutes. Remove from oven, and serve immediately with favorite sides!

I always keep Instant mashed potatoes, some kind of stuffing, & brown gravy in my pantry. I also always have ground beef in the freezer. This is my last minute to go dish, or my quick & easy meal. - Place ground beef, chopped onions in medium blow. Add in the salt, pepper, garlic & bread crumbs, and mix well.
- Form into roll patty balls, flatten with hand & place in per-heated frying pan. Cook on each side well.
- In medium side pot start the Instant mashed potatoes. In a small pot start the brown gravy.
- Then in a medium pot start the stuffing. Finish all, plate it up & enjoy.
