BEEF & POTATO HAND PIES (CORNISH PASTIES)
Simple beef and potato hand pies (aka: classic Cornish Pasties) made with leftover roast and healthier store bought pie crust!

Steps:
- Preheat oven to 400 degrees and line two baking sheets with parchment.
- Roll out pie crusts and use a 8-9" tart pan or other pan, inverted, to cut the dough into 4 large circles. You may have to reform and roll the dough between cuttings to get all four circles. Lay 2 dough circles on each parchment lined baking sheet.
- Pile about 1 1/2 cups of the meat and potato mixture (with juices) onto one half of each dough circle. Spread evenly over that half of the dough circle, leaving about 1/2" rim around the edge for crimping. Sprinkle some sea salt and pepper over the meat and potato mixture.
- Use a pastry brush to brush the 1/2" rim of pastry with some of the beaten egg - this will serve as "glue" to seal the pastry edges.
- Gently fold the "blank" side of each dough circle over the meat and potato filling side, matching the edges of the pastry to create a half-circle shaped hand pie. Use your finger to press and seal the edges of the pastry together, fluting them for decoration if desired.
- Once each hand pie is formed, use a very sharp knife to lightly score the top of each pie.
- Use a pastry brush to cover the surface of each hand pie with beaten egg.
- Bake for 25-30 minutes or until crusts are golden and firm to the touch.
HAND PIES RECIPE
The best hand pies with endless flavor options. Bake, deep-fry or air fry! Sweet or savory. This one recipe is all you need. Apple, blueberry, lemon, peach, or cherry. The filling options are endless. Follow my tips for troubleshooting common problems and avoiding leaks and cracks.

- Place flour, salt, and cold butter pieces into the bowl of your stand mixer and blend on low until mixture resembles coarse sand.
- Add in your egg and just enough water to bring the mixture together
- Press into a disk and wrap with plastic wrap. Chill for one hour.
- Prepare your fresh fruit by chopping into small cubes (if needed) or use frozen fruit. No need to defrost.
- Place your fruit and butter in a large saucepan over medium-high heat until the butter is melted and bubbling.
- Add in your water (or juice), sugar, lemon juice, and salt and mix until combined. Bring to a simmer.
- Combine your ClearGel with your water and whisk to make a slurry. Pour into your simmering mixture and mix for 1-2 minutes to cook the gel. If you're using cornstarch, you only need to cook until it's clear.
- Remove from the heat and let the mixture cool.
- Preheat your oven to 400ºF and line a large sheet pan with parchment paper
- Let your dough stand at room temperature for 15 minutes to let it soften a bit
- Dust your surface with flour. Begin by pressing your dough with your rolling pin to start flattening it.
- Roll your dough out to 1/8 thick or about the thickness of a cake board. Thinner than you think. Thinner dough results in a crisper, crunchier crust for your hand pies.
- Cut your dough into 6" circles. I used a 6" cake board as a template or you can use a 5" circle cutter if you want smaller hand pies.
- Fill your 6" hand pie with 3 tablespoons of fruit filling (5" circles take 1 heaping Tablespoon). Do not overfill.
- Brush the outside edge with egg wash (one egg whisked with 1 tablespoon of cold water)
- Fold the hand pie over and crimp with a fork to seal well
- Use a knife or fork to make some vents on top
- Brush the hand pies with more egg wash and place them onto a sheet pan lined with parchment paper. Chill for 20 minutes.
- Bake for 20-25 minutes. They should be golden brown and the filling will just be starting to bubble.
- Let your hand pies cool for 10 minutes.
- While your hand pies are cooling, make your glaze. Just whisk the powdered sugar and lemon juice together until smooth.
- Use a pastry brush to brush the thin glaze over the hand pies and enjoy!
- These hand pies taste best the day they are baked but will last for three days in an airtight container in the fridge or frozen for up to 2 months.

HAND PIES (PASTIES)
Welsh "pasties" are also enjoyed in Ireland. I've heard them called hand pies, as they bake up small and firm enough to carry them around in your hand. My family usually makes them as veggie pies, but you could use a bit of ground beef or cooked crumbled sausage to round it out to a meal. We've had the pork sausage version, and it's pretty good -- some of the newer artisan sausage might be good, too -- chicken, sage and apple sausage is sounding pretty good right now.....

Steps:
- Bring pie crust out and to room temperature.
- Preheat oven to 350 degrees.
- Lightly grease, spray or use parchment on a large baking sheet.
- Mix vegetables, and pork sausage if using. Don't precook the sausage - it will cook when the pies bake.
- Cut crust into small circles, about 2-3 inches across. You should be able to get five or six circles out of each crust if you re-roll the pastry leftovers.
- Place an equal amount of the filling on half of the circles, and top with another circle.
- Fold the edges over each other towards the top, and crimp together like a traditional pie crust. Make a small slit in the center to vent steam, and brush with an egg wash if you like.
- Place each little pie on the prepared baking sheet, and bake for approximately one hour, checking for over-browning.
- Can be eaten hot or cold.
PUMPKIN PASTIES (HAND PIES)
Steps:
- Make the Dough: In a large bowl, whisk together flour and salt. Using a pastry cutter, cut in the diced cold butter until mixture resembles coarse crumbs, with small chunks of butter still visible. One tablespoon at a time, add ice water to mixture until it holds together. It should stick together when pinched but not feel sticky. Work dough sparingly with cold fingers or pastry cutter, but do not overwork dough. Form 2 dough balls, wrap in plastic, and chill at least 1 hour.
- Make the Filling: Combine all filling ingredients in a bowl and whisk together until well combined.
- Preheat oven to 400F, with rack on middle position. Line baking sheets with parchment paper.
- Roll out one of the chilled dough balls, to 1/8 inch thick, on lightly floured surface. Use a 5-6 inch diameter bowl rim to cut out circles. Re-roll dough as needed to get as many circles out of it as you can.
- Place 2 TB pumpkin filling in center of each circle. Moisten edges with water, fold dough over, and seal tightly. Use fork to crimp edges. Cut slits on top of each one, and brush with egg wash. Sprinkle with coarse sugar. Repeat with remaining dough ball and filling.
- Bake on parchment lined baking sheet for 25 minutes or until golden brown.
- Let cool on wire rack.
- To make Drizzle: Combine all glaze ingredients and whisk together until smooth. Place in ziplog bag, cut tiny hole at one corner, and drizzle onto pasties.
