BUTTERSCOTCH COOKIES

- Preheat oven to 375 degrees F. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugar, brown sugar, baking soda, and salt. Beat until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer; stir in any remaining flour and the butterscotch pieces.
- Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheets. Bake for 9 to 10 minutes. Rotate cookie sheets halfway through bake cycle. Remove from cookie sheets immediately and cool on wire racks. Makes 4 dozen cookies.

- 1. Preheat oven to 325 and place rack in middle of oven. 2. In a large bowl, mix the softened butter, softened cream cheese, white sugar, brown sugar together until they're light and fluffy. 3. Mix in the vanilla and the baking soda. 4. Add the eggs, one at a time, mixing after each addition. 5. Add the flour, in 1 cup increments, mixing after each addition. 6. Mix the buttersctoch and white chocolate chips in by hand. 7. Dropped the dough by mounded teaspoonfuls onto an UNGREASED cookie sheet, 12 cookies to a sheet. (Can put parchment paper on the sheet.) 8. Flatten the cookies a bit with the spatula or palm of your hand. 9. Bake at 325 degrees for 8 to 10 minutes or until nicely golden on top. 10. Let the cookies cool for 2 minutes on the cookie sheet and then remove them to a wire rack to cool completely.
HANNAH'S SKILLET COOKIE RECIPE BY TASTY
Here's what you need: unsalted butter, mini marshmallows, kosher salt, Fruity Pebbles cereal, unsalted butter, brown sugar, vanilla extract, large egg, large egg yolks, all purpose flour, baking powder, baking soda, kosher salt, lucky charms cereal, lucky charms mashmallows

- Make the Fruity Pebbles Treats: Line an 8" x 8" (20 x 20 cm) baking pan with parchment paper and grease lightly with a nonstick baking spray.
- Melt the butter in a medium pot over medium-low heat. Once melted, add marshmallows and salt, stirring frequently until completely melted and butter is incorporated, about 3-5 minutes. Remove from heat.
- Add Fruity Pebbles cereal and stir to combine, until the marshmallow mix is distributed evenly. Spread in parchment-lined pan into an even layer, pressing down with a greased spatula, and let cool completely.
- Once cooled, remove the Fruity Pebbles treat from the pan by lifting the parchment paper out and set on a cutting board. Cut into ½-inch (1.2 cm) squares.
- Make the Skillet Cookie: Preheat the oven to 350°F (180°C).
- In a large bowl, cream together the butter and brown sugar with an electric hand mixer on high speed until light and fluffy, 2-3 minutes. Add the vanilla, then add the egg and egg yolks, 1 at a time, beating on medium speed between each addition to combine. Scrape down the sides of the bowl with a spatula as needed.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and kosher salt.
- Add the dry ingredients to the large bowl with the wet ingredients and mix on medium-low speed until just combined. Add the Lucky Charms cereal and mix on low speed until just evenly distributed, about 30 seconds.
- Grease a 10-inch cast-iron skillet with nonstick cooking spray. Spread about one-third of the cookie dough evenly into the skillet, using a spatula to smooth out the dough. Add half of the Fruity Pebble Treat squares and press them down into the cookie dough. Spread the remaining two-thirds of the dough over the squares and smooth out as evenly as possible with a spatula.
- Bake the cookie for 35-40 minutes, until the top is golden brown and the center is no longer jiggly when the pan is shaken.
- Immediately after the cookie is removed from the oven, gently press the remaining Fruity Pebble Treat squares into the top of the cookie. Scatter Lucky Charms marshmallows over the top and carefully press those into the cookie surface. Let the cookie cool in the pan for 20 minutes.

Posted in response to a request, this is a recipe from the "Farm Journal's Best Ever Recipes". I have not made this recipe myself, but most everything I have ever tried from Farm Journal has been exceptional. Prep time, obviously, is a guess.

- Put vinegar in a 1 cup measure; add enough evaporated milk to make one cup & set aside.
- Beat butter with electric mixer at medium speed till light; add brown sugar and beat till light & fluffy.
- Beat in eggs & vanilla blending thoroughly.
- Stir together dry ingredients.
- Stir evaporated milk and add to creamed mixture, alternating with flour mixture.
- Stir in chopped nuts.
- Drop rounded tablespoonfuls of dough onto a greased baking sheet, about 2 1/2-inches apart.
- Bake at 350°F for 10-12 minutes or till lightly browned and barely firm to touch.
- Remove from baking sheets; cool on racks.
- When cool, spread with frosting and press a walnut or pecan half into each cookie.
- Frosting: Melt butter in a small sacepan.
- Cook over medium heat, stirring constantly, until butter stops bubbling and is nut-brown in color (do not scorch).
- Add confectioners' sugar and boiling water, a little at a time, beating well after each addition.
- Beat until smooth & of spreading consistency.
