HOT SPICED APPLE CIDER
Steps:
- Place the apple cider, peppercorns, one of the cinnamon sticks, the cloves, and the star anise in a medium saucepan. Cut a large (1 by 4-inch) peel from the orange using a vegetable peeler and add it to the pan. Bring the cider mixture to a boil, lower the heat, and simmer for 5 minutes. Strain into a 4-cup glass measuring cup and discard the solids.
- Pour the hot cider into mugs or heatproof glasses. Add 2 tablespoons of bourbon to each mug. Cut the orange in half through the stem, slice crosswise in 1/4-inch-thick half-rounds, and add one slice to each mug. Cut the apple in half through the stem, remove the core, slice crosswise in 1/4-inch-thick half-rounds, and add one slice to each glass.
- Serve hot with a cinnamon stick in each glass for stirring.
SPIRITED HOT APPLE CIDER

- Using vegetable peeler, remove peel (orange part only) in strips from orange. Melt butter in heavy large saucepan over medium heat. Add peel, sugar, 3 cinnamon sticks, allspice and cloves; stir 1 minute. Add cider; bring to simmer. Reduce heat to low; simmer 15 minutes. Mix in rum and applejack. Strain into mugs. Garnish with additional cinnamon sticks, if desired.

- Add the quartered Pink Lady, Granny Smith, Honeycrisp, and Gala apples, cinnamon, cloves, allspice, nutmeg, ginger, and orange peel to the Instant Pot. Pour in enough water to cover the apples. Sauté on high until simmering, 15-20 minutes. Cover with the lid and pressure cook on high for 6 hours. Once done, let the pressure release naturally before opening the lid.
- Strain the solids and pour the cider back into the pot. Add the sugar and sauté on high for another 5-10 minutes, until the sugar has dissolved.
- Ladle the hot cider into mugs or glasses. If desired, stir in a shot of bourbon or whiskey. Garnish with the orange and apple slices. Alternatively, to serve cold, transfer the cider to a covered pitcher or container and refrigerate until chilled.
