HARD-BOILED EGG MICE

Steps:

• Slice the egg in half lengthwise. Place the halves yolk side down on a plate. ) Slice tiny black olive "eyes" and radish "ears." Then make small slits in the egg halves for the eyes and ears and push in the olives and radishes. Add chive tails.

• Slice the cheese and put in the middle of a plate. Cut the hard boiled eggs in half and put around the cheese, with the narrow part of the egg facing in and egg yolk down. The egg white becomes the shape of the mice. Take the radish slices and put two in each egg white for the ears. So, smaller radishes are best. Place two peppercorns under the radish slices for eyes. Steps:

• Hard boil the eggs.
• Gently crack the eggs against a hard surface, then carefully peel off the shells.
• Slice each egg in half lengthwise. Scoop out the yolks, and put them in a small bowl.
• Mash the yolks with a fork until they are crumbly.
• Add mayonnaise and blend.
• Carefully fill the empty egg whites with yolk mixture.
• Cover a platter with lettuce leaves, setting a leaf or two aside for garnish.
• Arrange the egg halves, yolk side down, on the leaves. These are your mice.
