Give your mash a bit of texture with humble haricot beans and a hint of luxury with an optional splash of truffle oil

2kg floury potato , such as Maris Piper, peeled and halved
2 x 400g tins haricot beans , drained and rinsed
300ml single cream
100g unsalted butter
3 tbsp truffle oil
freshly grated nutmeg

Steps:

  • Boil the potatoes in salted water until tender, about 15 mins. Drain, replace the lid on the pan, then shake to break the potatoes up a bit. Add the beans, cream, butter and 2 tbsp truffle oil, then mash together well. Season liberally with salt, pepper and a good pinch of grated nutmeg, and drizzle with the remaining truffle oil.

Crushed haricot beans make a tasty, nutritious alternative to mashed potato and go great with grilled meat

1 pork steak , trimmed of fat
1 tbsp olive oil
1 small onion or shallot , chopped
1 garlic clove , crushed
half a 410g can haricot beans in water, rinsed and drained
125ml vegetable stock
1 tbsp chopped coriander

Steps:

  • Grill the pork for 12-15 mins, turning once until browned and cooked through. Heat the oil in a small pan, add the onion or shallot and fry for 3 mins until softened. Add the garlic, fry for 1 min more, then tip in the beans and stock and simmer for 5 mins. Roughly mash with a potato masher or fork, then stir in the coriander. Serve with the pork.

By mixing butter, shallots, fresh herbs, and lemon juice together right in the serving bowl, you get an instant dressing on contact with hot haricots verts that you toss in at the last minute. Nothing could be simpler, or more packed with flavor.

5 tablespoons unsalted butter, softened
3 tablespoons finely chopped shallots
3 tablespoons finely chopped flat-leaf parsley
2 teaspoons finely chopped tarragon
1 1/2 teaspoons grated lemon zest
1 tablespoon fresh lemon juice
2 lb haricots verts or other green beans, trimmed

Steps:

  • Stir together all ingredients except haricots verts with 3/4 teaspoon salt and 1/4 teaspoon pepper in a large bowl until combined well.
  • Cook beans in a large pot of boiling salted water (1 tablespoon salt for 6 quarts water), uncovered, until crisp-tender, about 6 minutes, then drain. Toss with herb butter.
  • Do Ahead
  • Herb butter can be made ahead and chilled, covered, 3 days or frozen, rolled into a cylinder in plastic wrap and kept in a sealed bag, 1 week. Haricots verts can be trimmed 1 day ahead and chilled in a sealed bag lined with paper towels.
