LEOPOLD'S HUCKLEBERRY SAUCE
Steps:
- In a saucepan over medium heat, add huckleberries, granulated sugar and lemon juice. Bring to a boil reduce heat and simmer for 5 to 8 minutes.
- In a small bowl, combine the cornstarch and water. Slowly stir into the huckleberry sauce and heat until thoroughly combined and thickened.
HP SAUCE
This is a clone for the famous English "Houses of Parliament" steak sauce & a must have recipe for all canadians living outside the country. I got it from a co-worker many years ago & haven't used the store-bought product since; however, I do keep my current supply in an old bottle for that authentic look (lol). If you prefer more of a bite, increase the tabasco!!

UPDATED HARLEM COCKTAIL
Traditionally, the Harlem cocktail does not include lemon juice. I've added it to this updated version because the additional acidity mellows the sweetness imparted by the drink's other components. If you've got an extraction juicer, fresh pineapple juice makes this drink especially bright and lively - but canned juice will work fine. I like to finish the drink with a couple dashes of Angostura bitters, but consider them optional - to your taste.

- Preheat oven's broiler and set the oven rack at about 6 inches from the heat source. Line a baking sheet with aluminum foil. Place red bell peppers with cut sides down onto the prepared baking sheet. Cook under the preheated broiler until the skin of the peppers has blackened and blistered, 5 to 8 minutes. Place the blackened peppers into a bowl and tightly seal with plastic wrap. Allow the peppers to steam as they cool, about 20 minutes. Remove and discard skins.
- Bring a large pot of lightly salted water to a boil. Add Fresno and habanero chiles and cook uncovered over medium heat until vegetables start to soften, about 3 minutes; drain and set aside to cool. Remove seeds and membranes from chiles (wear gloves); set aside.
- Shake coriander and caraway seeds in a skillet over medium heat until you start to smell the spice, about 2 minutes. Use a mortar and pestle to crush toasted seeds; add cumin, mint, and salt, and crush until finely ground. Transfer spices to a blender and add roasted bell peppers, chiles, garlic, lemon juice, and vegetable oil; puree until smooth. Drizzle in extra-virgin olive oil at the end, blending for only a few seconds.

HARLEM SAUCE
This is an excellent marinade and basting sauce for chicken, either on the grill or baked in the oven. I have perfected this over the years since I first happened upon a slightly different recipe from the US South - versions of the same are popular in the New York area, hence the name "Harlem Sauce". It's good soul food! I'd love to know what you think of my version, and what your own tweaks are to this, if any.

- In a medium sauce pot, gently melt butter and olive oil over medium heat.
- Add ketchup, tomato sauce, lemon juice, vinegar, mustard, and hot sauce - stir or whisk to combine.
- Add cayenne powder, garlic, parsley, onion powder, and water - stir or whisk to combine.
- Raise heat to Medium-High and cook until boiling. Boil for about a minute or two.
- Turn down heat to Medium and cook for 5 minutes, stirring often.
- Take sauce pot off heat and let cool for 1 hour.
- Use as a marinade for 6-8 boneless chicken breasts. Poke chicken all over with a fork, and marinate in a large, resealable plastic bag or container for 4-24 hours in the refrigerator.
- Grill for 10-12 minutes each side, or bake uncovered at 400 degrees for 20 minutes. Let rest for 5 minutes after cooking. (Double cooking time if using bone-in chicken).
- Important! --> Boil remaining marinade for 5 minutes, if extra sauce is desired - brush on while grilling.
RAHMSAUCE - GERMAN CREAM SAUCE
This creamy sauce is perfect for schnitzel, meatballs, chicken, pasta and spaetzle.

- In a saucepan, melt the butter. Add the flour while continuing to stir until you achieve a thick paste. Slowly pour in the hot broth. Keep on mixing continually so no lumps form. Bring to a boil and then reduce the heat to a simmer.
- Leave the sauce to simmer for about 9-10 minutes to reduce the floury taste.
- Stir in the tomato paste and cream. At this point, the sauce should no longer be boiling.Add salt and pepper to taste.
- Optional, you can sprinkle some fresh cut parsley to serve the sauce.
