This is a traditional Hawaiian desert often found at luau's.

5 tablespoons cornstarch
¼ cup white sugar
⅛ teaspoon salt
2 cups coconut milk

Steps:

  • Place the cornstarch, sugar, and salt into a saucepan; stir in 1/4 of the coconut milk to make a smooth paste. Stir in the remaining coconut milk, and bring to a simmer over low heat, stirring constantly. Cook and stir until thickened so that it coats the back of a spoon, about 5 minutes. Pour into a 9x13 inch baking dish; refrigerate until cold.

4 -6 tablespoons cornstarch
3/4 cup water
1/2 teaspoon coconut extract (vanilla or Coconut rum can be used)
toasted coconut, for topping (optional)

Steps:

  • Pour coconut milk into saucepan.
  • Combine sugar and cornstarch; stir in water and blend well.
  • Stir sugar mixture into coconut milk; cook and stir over low heat until thickened add coconut extract.
  • Pour into 8-inch square pan and chill covered until firm.
  • Cut into 2-inch squares. Garnish with toasted coconut.

2 cups water
1 1/4 cups granulated sugar
2 tablespoons unsalted butter
1 1/4 cups cornstarch
1 cup water

Steps:

  • In a large pot bring the coconut milk, water, sugar and butter to a boil. In a bowl whisk together cornstarch and water. When the coconut milk mixture comes to a boil, whisk in the starch mixture. Whisk until smooth; cook on low heat until it boils. Pour immediately into a 2-inch hotel pan. Chill overnight. Cut into squares before serving.

Haupia is a Hawaiian pudding made with just a few simple ingredients. It is lightly sweet and creamy with a coconut flavor and is easy to make.

1 14-ounce can coconut milk
1 cup whole milk
1 cup granulated sugar
½ cup cornstarch
edible flowers, for topping

Steps:

  • Gather the ingredients.
  • In a medium bowl, add the water and cornstarch and mix well until smooth.
  • In a medium saucepan, add the coconut milk, milk, and sugar. Turn the burner to medium-high and whisk constantly until the mixture comes to a boil, about 12 minutes. Once boiling, bring the heat down to medium-low, keeping the mixture at a low simmer. Slowly add the cornstarch mixture while whisking constantly. Continue cooking and whisking until the mixture thickens, about 3 minutes.
  • Transfer the mixture to an 8x8-inch baking dish greased with cooking spray or coconut oil.
  • Allow the mixture to cool for about 20 minutes then transfer to the fridge to continue cooling and setting for at least 2 hours.
  • Remove from the fridge and slice. Top with edible flowers and serve chilled.

Rich and yummy! I've been using this recipe for special occasion brunches and breakfasts for several years. It ALWAYS gets great reviews and requests for the recipe. I first ran across it in Sunset magazine years ago. I hope you enjoy it!

1 day old French baguette
1 cup orange juice
1/2 cup heavy cream
2 eggs
1 teaspoon cinnamon
1/4 cup white sugar
1 dash ground nutmeg (I use fresh)
3 tablespoons butter
2 tablespoons powdered sugar (for dusting)

Steps:

  • Cut off the ends of the baguette a reserve for another use. Cut the remainder in 1/2 inch slices. Let them stand for at least 4 hours or overnight to dry.
  • In a 9x13 pan combine the orange juice, heavy cream, eggs, cinnamon, nutmeg and white sugar.
  • Place the bread slices in the pan, turning the slices until the liquid is absorbed.
  • In a large skillet, melt butter over medium to medium high heat. Add bread slices and cook until golden brown on both sides, about 5 minutes. Dust heavily with powdered sugar to serve.
  • I always include maple or fruit syrup on the table.
  • Heavenly way to start the day!
  • Prep time doesn't include the bread drying step.

1 French baguette
1 cup orange juice
½ cup heavy whipping cream
2 eggs
1 teaspoon ground cinnamon
¼ cup white sugar
1 dash ground nutmeg
3 tablespoons butter
2 tablespoons confectioners' sugar for dusting

Steps:

  • Cut loaf ends off and reserve for another use. Cut remaining loaf into 1 1/2 inch slices; let stand 4 hours or overnight.
  • In a 9x13 inch baking pan, combine orange juice, cream, eggs ground cinnamon and white sugar. Place bread slices in pan and turn until liquid is absorbed, about 5 minutes.
  • In a large skillet, melt butter over medium heat. Add bread slices and cook until browned on both sides, about 5 minutes. Dust generously with confectioners' sugar and serve warm.
