Provided by Erica Walker

Categories     Dinner     Main Course

Time 6h20m

Number Of Ingredients 6

15 ounces pineapple chunks with juice
1 cup soy sauce
3/4 cup brown sugar
2 cloves garlic (minced)
1 teaspoon minced ginger
1 pound skirt steak (sliced very thin (carne asada works GREAT))

Steps:

  • Mix together all ingredients, excluding beef. Set aside about 1/2 cup of the sauce, cover and refrigerate.
  • Place beef in a Ziploc bag and pour marinade over. Press out all the air, seal, and marinate for at least 6 hours (overnight works great).
  • Over prepared grill on medium-high heat, grill steak a minute or two on each size until cooked to your desired doneness (with the steak being so thin, you don't have to grill it for too long).
  • Place beef in a large bowl, pour remaining sauce over the cooked beef and stir until well covered. Serve with rice and/or grilled fresh pineapple.

  • Cook chicken: add chicken to pan and sear for about 2-3 minutes per side or until browned. Set aside on plate.
  • Cook vegetables: add 1 tablespoon oil, broccoli, bell pepper, carrots, pineapple, and onion to same pan. Stir frequently and cook 5-6 minutes until onions are translucent and vegetables are cooked. Work in batches if you need to so the vegetables aren’t too crowded in the pan. If veggies still aren’t cooked to your liking and are getting brown too quickly you can always add a couple of tablespoons of water to the pan to help prevent them from burning.

  • Whisk the Teriyaki Sauce ingredients together in a small bowl. Remove 1/4 cup and add it to bag with the sliced beef. Massage to coat steak. Marinate at room temperature for 30 minutes (only recommend if using top sirloin) or refrigerate for up to 24 hours.
  • Heat a drizzle of vegetable oil in a large cast iron skillet over medium-high heat. Once hot, add pineapple and stir fry until caramelized, about 2 minutes; remove pineapple to a plate.
  • Heat 1-2 tablespoons vegetable oil in the now empty skillet over HIGH heat until very hot and sizzling. Drain/pat off excess marinade from beef (if there is any). Add half of the beef to the skillet in a single layer and sear for about 1 minute, flip over and cook 1 more minute (it will cook more in the sauce). Don’t overcook or it won’t be as tender! Transfer beef to a large plate and cover. Repeat with remaining beef.
  • To the now empty pan (don’t wipe out), heat one tablespoon oil over medium-high heat. Add broccoli, carrots, and bell peppers. Stir fry until vegetables are crisp tender, about 2 minutes. (Don’t over-cook because they will continue to cook in sauce.)
