3 cups chopped peeled tart apples (about 2 large)
2 cups sugar
1/2 cup apple juice
3 large eggs, room temperature
3/4 cup vegetable oil
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons apple pie spice
1 teaspoon baking soda
1 teaspoon salt
2 cups coarsely chopped pecans
1/2 pound candied red cherries, halved
1/2 pound candied green cherries, halved
1/2 pound diced candied pineapple

Steps:

  • Line three 8x4-in. loaf pans with waxed paper; grease the paper and set aside. In a large bowl, combine apples, sugar and apple juice; let stand for 15 minutes. In a bowl, combine the eggs, oil and vanilla. Add to apple mixture; mix well. Combine the flour, apple pie spice, baking soda and salt; add to apple mixture and mix well. Fold in pecans, cherries and pineapple. Pour into prepared pans. Bake at 350° for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Remove waxed paper. Cool completely.

Spring has sprung with this showstopper of a cake. The outside is a ring of cupcakes that little hands can grab, and the inside is cake reserved for the grown-ups to slice.

Canola oil, for greasing the pan
One 15.25-ounce box classic yellow cake mix (plus required ingredients)
4 sticks unsalted butter, at room temperature
8 cups confectioners' sugar
2 tablespoons whole milk
2 teaspoons vanilla extract
Large pinch kosher salt
1/8 teaspoon (8 to 10 drops) golden yellow gel food coloring

Steps:

  • For the cake: Position the oven racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 14 muffin cups with cupcake liners. Grease the bottom and sides of an 8-inch round cake pan.
  • Prepare the cake batter according to the package instructions. Fill the prepared muffin cups halfway full with batter. Scrape the remaining batter (about 2 1/2 cups) into the prepared cake pan.
  • Bake the cupcakes and cake, rotating the pans halfway through, until a toothpick inserted into the center of the cupcakes and cake comes out clean, 18 to 20 minutes for the cupcakes and 23 to 28 minutes for the cake. Let cool in the pans about 10 minutes, then turn out onto cooling racks and let cool completely.
  • For the frosting: Meanwhile, combine the butter, confectioners' sugar, milk, vanilla and salt in the bowl of a stand mixer fitted with a paddle attachment (or in a large bowl if using a handheld electric mixer). Mix on low speed until mostly incorporated. Increase the speed to medium-high and mix until smooth.
  • Transfer 3 cups of the frosting to a large pastry bag fitted with a 1/4-inch plain round tip (number 803).
  • Transfer 1 cup of the frosting to a small bowl and tint with the golden yellow gel food coloring. Scrape the yellow frosting into a small pastry bag fitted with a 3/8-inch plain round tip (number 804).
  • Cover the remaining frosting (about 2 cups) with plastic and reserve for frosting the cake.
  • To assemble: Place the cake layer upside down on an extra-large cutting board or platter (at least 18-by-14-inches). Arrange the cupcakes in their liners around the cake to create a daisy shape. Pipe a border of the white frosting along the edges of the daisy. Using a small offset spatula, spread the reserved white frosting evenly inside the border to frost the top of the cake and bring the cupcakes and cake together into one cake.
  • Gently invert a small bowl (with a diameter of about 3 1/2-inches) in the center of the cake to lightly indent a circle. Remove the bowl. Using the indented circle as a guideline, pipe small dollops of the yellow frosting with peaks to fill in the circle.
  • Pipe a border of white frosting along the edge of each petal to define their shapes. To serve, remove the cupcakes and slice the cake.

4 cups purchased chopped mixed dried fruit (about 1 pound)
2 1/4 cups raisins
1 large green apple, peeled, chopped
1/2 cup chopped dates
1/4 cup orange juice
2 teaspoons grated orange peel
1/3 cup plus 2 1/2 tablespoons dark rum
1 3/4 cups cake flour
1/2 cup ground almonds
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
2/3 cup sugar
1/4 cup (1/2 stick) unsalted butter, room temperature
3 large eggs, room temperature
1/2 cup light corn syrup

Steps:

  • Preheat oven to 325°F. Generously butter 10-cup Bundt pan; dust pan with flour. Combine first 6 ingredients in large bowl. Mix in 1/3 cup rum. Let stand at room temperature until liquids are almost absorbed, stirring occasionally, about 30 minutes.
  • Meanwhile, combine flour, almonds, cinnamon, nutmeg and salt in small bowl. Using electric mixer, beat sugar and butter in large bowl until well blended. Add eggs 1 at a time, beating well after each addition. Blend in fruit mixture. Add dry ingredients and mix well. Transfer batter to prepared pan.
  • Bake cake until tester inserted near center comes out dry, about 1 hour 15 minutes. Cool cake in pan 10 minutes. Turn out cake onto rack and cool.
  • Stir corn syrup and remaining 2 1/2 tablespoons rum in heavy small saucepan over low heat until warm. Brush warm glaze twice over entire cake. Wrap cake in heavy-duty foil and let mellow 1 day at room temperature. Refrigerate. (Cake can be prepared 2 weeks ahead. Store in refrigerator.)

My mum would make one of these cakes every week so my dad could take a piece to work with him every day. In common with all fruitcakes, it tastes far better a week after making as it tends to be very dry for the first couple of days. The loaf tin is about 8x4 inches and about 2 inches deep. The amount of milk can be adjusted if the mixture seems a bit dry. Hmmm, my scribbled copy of the recipe calls for "enough fruit". This makes perfect sense to me, knowing how big a well the food mixer leaves in the centre of the dough but I'd be inclined to translate this as about 2 cups worth. I think that, once it's all mixed in, the mixture tends to look as though its about 60%dough and 40% fruit - but feel free to change this to your own taste.

4 ounces shortening or 4 ounces butter
4 ounces soft brown sugar
2 eggs
2 tablespoons milk
1/2 teaspoon mixed spice
2 cups dried fruit (sultanas, raisins, currants, candied dried peel,......)

Steps:

  • Put everything*except* the milk and the fruit in a food mixer and mix well for about 5 minutes- the mixture will be quite stiff.
  • Add milk and mix well.
  • Mix in fruit by hand.
  • It's normally easier to add the fruit a little bit at a time.
  • Bake in the top of a preheated oven at gas mark 4, 180 degC, 350 degF for about 1 1/4 hours.
  • Check after 1 hour- if a knife poked into the cake comes out clean, the cake is fully cooked.

½ cup raisin
½ cup sweet red wine
6 large eggs, seperated
1 cup unsalted butter, room temperature, cubed
1 ½ cups sugar
2 cups all-purpose flour
1 teaspoon kosher salt
1 cup walnut, chopped
2 cups glazed fruit

Steps:

  • Preheat the oven to 300˚F (150˚C).
  • In a small bowl, combine the raisins and sweet red wine. Let sit for at least 10 minutes, until the raisins absorb some of the wine.
  • In a medium bowl, use an electric hand mixer to beat the egg whites until medium peaks form. Set aside.
  • In a large bowl, use an electric hand mixer to cream together the butter and sugar. Add the egg yolks and beat until incorporated.
  • Add the salt to the flour, then gradually add the flour mixture to the wet ingredients, beating until just incorporated.
  • Using a rubber spatula, fold in the soaked raisins, walnuts, and glazed fruit until just combined.
  • Gently fold in the egg whites.
  • Transfer the batter to a 9x5-inch (23x13 cm) loaf pan and smooth the top.
  • Bake for 2 hours 15 minutes to 2 hours 30 minutes, until a skewer inserted in the center of the cake comes out clean. Let cool.
  • Serve immediately or wrap in plastic wrap and refrigerate for up to 7 days.
  • Enjoy!

Preheat oven to 150°C/300°F. In a large mixing bowl, beat brown sugar and oil with an electric mixer until well combined. Add the eggs, one at a time while beating for 20-30 seconds after every addition. Add the salt, cinnamon, all-spice, nutmeg and corn syrup and mix. Add the cocoa powder and mix well.
