Ingredients

3 cups cooked rice
2 1/2 cups milk
2 small pats of butter
3 heaping teaspoons sugar
1 to 2 (1.5-ounce) boxes of raisins (optional)

Steps:

Combine all the ingredients in a medium-sized pot. Heat the cereal on MEDIUM heat *just until* the butter is melted. Do NOT bring to a boil! Serve the cereal hot.

A wonderful dish that brings back the flavor of the islands. A side dish that dresses up plain old pork chops or can be used as a bed for seafood like grilled scallops or shrimp.

Ingredients

1 (20 ounce) can pineapple slices in heavy syrup
1/2 cup brown sugar
2 tablespoons soy sauce
1 teaspoon ginger
2 cups cooked rice

Steps:

1. Pour syrup from the can into a sauce pan. Bring to a boil for approximately five minutes.
2. Lower heat and stir in brown sugar untill it disolves completely. Add ginger and soy and allow to sit on very low heat to keep warm.
3. On a grill place pinapple rings and cook for about four minutes on one side and one minute on the other side. ( you can broil them in the oven, but you should baste the rings with the sauce before broiling to help pinapple turn golden brown) place pinapple rings on top of rice, pour sauce over rice.
I highly recommend adding grilled scallops or shrimp to this dish. enjoy.

1 1 1 cup (2 sticks) butter or margarine
1 1 1 cup peanut butter
1 1 1 package (10 ounces) marshmallows
1 1 1 cup raisins or dried cranberries

Instructions In a large saucepan, heat oats, rice cereal, and nuts over low heat for 5 to10 minutes. In a separate saucepan, melt butter; peanut butter and marshmallows over low heat; mix well. Pour butter mixture and raisins into the warm cereal mixture; mix well. Press firmly into a 13 x 9 x 2-inch pan. Cool; cut into bars and wrap each bar in waxed paper. Makes 24 bars.
