HAWAIIAN TURKEY BREAST
Steps:
- Marinade the turkey breast in the herbed milk turning it over once for about 1 hour Mix basting ingredients together, heat just to the boil, let cool Prepare grill with charcoal when coals are ready spread pineapple chips around on top, adding more as needed whild grilling or if using gas, heat to med-low temp spread with pineapple chips Place turkey breast on grill, baste every 20-30 minutes This is slow grilling with the lid-on for approx. 2 hours Turkey brest should be golden mahogany and mouth-watering aroma when done

Makes the usually bland ground turkey breast very tasty. I think I got this from a Taste of Home publication -- it originally called for regular ground turkey, but I use ground turkey breast to make it lower in calories and fat.

Steps:
- Drain the pineapple, reserving 1/4 cup of the juice and set the pineapple aside.
- In a bowl, combine the bread crumbs, onions, red pepper, soy sauce, salt, and pineapple juice.
- Crumble the turkey over the mixture and mix well, but do not overmix.
- Grill, covered, over medium heat for 3 minutes on each side.
- Brush with teriyaki sauce.
- Grill 4-6 minutes longer on each side or until meat is no longer pink.
- Grill pineapple slices for 2 minutes on each side, basting with teriyaki sauce.
- Serve on buns and top each burger with a pineapple slice.

Sandwich the stack in a plush Hawaiian bun with lettuce, red onion, and a smear of kicky jalapeño mayo, and take a vacation without leaving your lanai.

- Preheat grill to high (see cook's note if using charcoal). Cover onion with cold water and let stand 10 minutes; drain and pat dry. Mix together turkey, ginger, garlic, soy sauce, and sesame oil. Shape into four 4-ounce patties, then flatten each to 1 inch thick and season with salt. (Patties can be made a few hours ahead and refrigerated.)
- Brush grates with vegetable oil. Grill pineapple until lightly charred on both sides and softened, 4 to 5 minutes. If desired, grill split sides of buns until lightly charred, about 30 seconds.
- Grill patties until slightly charred and just cooked through, 6 to 8 minutes a side. In last minute of cooking, top each patty with cheese, cover grill, and let melt.
- Stir together mayonnaise and jalapeño. Spread buns with mayonnaise mixture and use to sandwich patties, pineapple, lettuce, and onion.
