- Preheat oven to 425 degrees F.
- Combine sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell.
- Bake for 15 minutes. Reduce temperature to 350 degrees F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. (Do not freeze as this will cause the crust to separate from the filling.)

LINZER-HAZELNUT PUMPKIN PIE

- Preheat the oven to 350 degrees F. Make the crust and topping: Combine the flour, granulated sugar and salt in a medium bowl and mix with a fork. Drizzle in the melted butter and mix until well combined. Remove 3/4 cup of the mixture to a small bowl; add the hazelnuts and mix with your fingers until large clumps form. This will be the topping; refrigerate until ready to use. Press the remaining mixture into the bottom and up the side of a 9-inch pie plate. Freeze until firm, about 10 minutes.
- Prick the bottom and side of the crust in several places with a fork. Line with foil, then fill with pie weights or dried beans. Bake until lightly golden around the edge, 12 to 15 minutes. Remove the foil and weights (if the foil sticks to the crust, you may need to bake it a few more minutes). Continue baking until the bottom of the crust is dry and lightly browned, 5 to 8 more minutes. Transfer to a rack and let cool 5 minutes, then use a small spoon to gently press together any small cracks while the crust is still warm. Spread the jelly over the bottom and up the side; let cool completely.
- Meanwhile, make the filling: Whisk the pumpkin puree, half-and-half, granulated sugar, eggs and cinnamon in a large bowl until smooth. Set the cooled crust on a rimmed baking sheet; pour in the pumpkin filling (it will be quite full). Bake 20 minutes, then remove from the oven and sprinkle with the hazelnut topping. Continue baking until the filling is set, 30 to 40 more minutes. (Tent with foil if the pie is browning too quickly.) Transfer to the rack and let cool completely. Lightly dust with confectioners' sugar just before serving.
HAZELNUT PUMPKIN PIE
This is from the Food Network, Sunny Anderson I believe. I found a similar posted recipe but she didn't have all of the ingredient amounts. This recipe if from the Food Network site. I have made this several times and everyone always loved it.

Steps:
- Heat oven to 350.
- To make crust mix graham crackers, sugar, 1 tbs of hazelnut creamer and butter until combined.
- Press into a 9" or 10" spring form pan or cake pan, press evenly along bottom and up sides of pan.
- Filling: mix in order, cream cheese, brown sugar, eggs (1 by 1) and pumpkin puree.
- In a small cup or bowl mix 2 tbs coffee creamer, allspice and salt into the heavy cream and pour into pumpkin mixture blending until combined.
- Pour into crust and bake for 35 minuets or until center is set.
- Allow to cool before serving.
DEEP DISH PUMPKIN PIE

- Preheat the oven to 375 degrees F.
- For the crust: Put flour in the food processor, add 6 tablespoons ice water, the butter and salt. Pulse in the food processor until the mixture resembles coarse meal. Remove from the food processor and knead until light. Wrap the dough and chill in the refrigerator for at least 30 minutes. Remove and roll out dough to fit the pan. Place pie weights in the bottom and bake for 25 minutes. Remove from the oven and allow the pie shell to cool.
- For the filling: Place the pumpkin, brown sugar, cinnamon, ginger, nutmeg, cloves and salt in a large mixing bowl and blend with a whisk. Add the evaporated milk, molasses and eggs; stir vigorously with the whisk until smooth.
- Pour the filling into the pie shell. Cover the edge of the crust with aluminum foil.
- Bake the pie on the center rack of the oven until the top is shiny and set. The pie is set when a knife inserted in the center comes out clean, about 1 hour.
- For the whipped cream: Chill the whipping cream for 15 to 20 minutes. Combine the chilled whipping cream and sugar in a bowl them whip them together with an electric mixer until you see firm peaks, a couple of minutes.
- Remove the pie from the oven and carefully remove the foil. Cool the pie on a rack. Serve the pie warm, cold or at room temperature with a dollop of whipped cream.
HAZELNUT DEEP DISH PUMPKIN PIE
My family enjoyed this pie. I got this recipe from Food Network. It's a Sunny Anderson recipe. Note: I watched this on t.v. on Dear Food Network Thanksgiving Disasters. There was no amounts given for the heavy cream, allspice, or hazelnut powdered creamer. I used Splenda for baking for the sugar, Splenda brown sugar and sugar free hazelnut creamer. Since I didn't have the exact measurements for the filling I used 1/2 cup light cream in place of the heavy cream as that's what I had on hand. I used 1/4 tsp allspice, and I used 2 tsp coffee creamer.

- Preheat oven to 350.
- Crust:.
- Grind graham crackers in food processor until fine crumbs. Add sugar, hazelnut creamer, melted butter, and salt. Mix till combined.
- Pour into a springform pan. Press into pan with a flat glass. Push in center and work your way around pan.
- Filling:.
- Put cream cheese in a bowl. Add pumpkin. Mix till blended. Add brown sugar. Mix. Then add the eggs and mix. Add heavy cream (maybe 1cup - 1/2 cup), all spice, and hazelnut powder creamer just to flavor filling. Mix till combined.
- Pour filling into crust.
- Place pan in oven. Bake for 40 minutes but check in 35 minutes. To check pie give the pie a giggle.
- After cooling remove springform ring. Serve cooled.

- To make crust, mix graham crackers, sugar, 1 tablespoon of hazelnut creamer and butter until combined. Press into a 9 to 10-inch springform pan or cake pan making sure to press mixture up the sides and bottom as well, set aside.
- For filling, in a large bowl mix in order cream cheese, brown sugar, eggs 1 by 1 and pumpkin puree. In a small cup stir remaining 2 tablespoons of hazelnut creamer, allspice and salt into heavy cream. Pour heavy cream mixture into pumpkin mixture and blend until combined. Pour into crust and bake for 35 minutes or until the center sets. Allow to cool to room temperature before serving.

- Make the dough: Pulse the flour, granulated sugar and salt in a food processor. Add the shortening; pulse until it disappears, about 30 seconds. Add the butter and pulse until the mixture looks like coarse meal with pea-size bits of butter. Beat 2 tablespoons ice water and the egg in a bowl, then add to the processor and pulse once or twice. (Stop before the dough gathers into a ball.) Turn out onto a sheet of plastic wrap and pat into a disk. Wrap tightly and refrigerate until firm, at least 1 hour.
- Preheat the oven to 350 degrees F. Roll the dough into a 13-inch round on a lightly floured surface (or between 2 pieces of floured parchment paper). Ease into a 9 1/2-inch deep-dish glass pie plate. Fold the overhanging dough under itself and crimp the edges with your fingers. Pierce the bottom all over with a fork and chill until firm, about 30 minutes.
- Line the crust with foil, then fill with pie weights or dried beans. Bake until the edges are golden, about 20 minutes. Remove the foil and weights and continue baking until the crust is golden all over, 10 to 15 more minutes. Transfer to a rack to cool completely.
- Make the filling: Whisk the pumpkin, brown sugar, eggs, half-and-half, ginger, cinnamon, allspice and cloves in a bowl. Pour into the crust; bake until the edges are set but the center quivers, 1 hour to 1 hour, 15 minutes. (Cover the edges of the crust with foil if they brown too quickly.) Cool completely on a rack. Serve with whipped cream.
