1.5 pounds mini red or white potatoes (cut into 1/2 inch pieces)
2 tablespoons extra virgin olive oil
4 garlic cloves (minced)
1/2 teaspoon each salt and freshly ground pepper ((or more to taste))
3 tablespoons chopped parsley for garnish (optional)

Steps:

  • Preheat oven to 450 degrees F. Line a baking sheet with parchment paper.
  • Place diced potatoes in large bowl with olive oil, garlic, salt, and pepper; toss until the potatoes are well-coated.
  • Transfer the potatoes to a baking sheet and spread out into an even layer.
  • Roast in the oven for 20 minutes. Flip and roast for an additional 20 minutes or until brown and crisp. You may need to adjust the cooking time depending on your oven.
  • Remove potatoes from oven and toss with chopped parsley. Serve warm.

⅛ cup olive oil
1 tablespoon minced garlic
½ teaspoon dried basil
½ teaspoon dried marjoram
½ teaspoon dried dill weed
½ teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon dried parsley
½ teaspoon crushed red pepper flakes
½ teaspoon salt
4 large potatoes, peeled and cubed

Steps:

  • Preheat oven to 475 degrees F (245 degrees C).
  • In a large bowl, combine oil, garlic, basil, marjoram, dill weed, thyme, oregano, parsley, red pepper flakes, and salt. Stir in potatoes until evenly coated. Place potatoes in a single layer on a roasting pan or baking sheet.
  • Roast for 20 to 30 minutes in the preheated oven, turning occasionally to brown on all sides.
