HEALTHY APPLE PECAN CRISP
This is one of the best apple crisps you will ever have and it's healthy too.

- 1 Preheat oven to 375°F. Coat a large deep pie plate with cooking spray.2 Combine apples with sugar, lemon juice, and 1 teaspoon cinnamon in a large bowl. Toss to combine. Transfer to prepared baking dish, cover with foil and bake for 30 minutes.3 In a large bowl, combine whole wheat flour, oats, brown sugar and 1 teaspoon cinnamon. Mix to blend using fingertips to crumble the butter into the flour evenly.4 Stir in oil, apple juice, nuts, cardamom and allspice. Mix until moist and clumpy.5 Remove the foil from the baking dish and cover with topping spreading evenly. Bake in oven for about 30 minutes or until browned. Serve with whipped topping if desired.

Steps:
- Preheat oven to 350.
- To make the filling--In a 9-inch pie pan that's 2 inches deep (or a similar baking pan), toss the apples with the sugar to taste, cinnamon, and flour.
- To make the topping--In a medium bowl, mix together all the topping ingredients with your fingers or a pastry cutter until small pebbly pieces of butter are distributed throughout the mixture.
- Sprinkle the entire mixture over the apples.
- Bake until the topping is golden and the fruit is bubbling and tender, about 1 hour and 15 minute.
- for a large crisp and 1 hour for individual crisps.
- Cool slightly before serving.
- You can make individual crisps by dividing the filling and topping among six ramekins or individual gratin dishes.
- Serve with heavy cream or a scoop of vanilla ice cream.
- Serves six.

- In a small bowl, combine the butterscotch chips, flour, brown sugar and cinnamon. Place apples in a greased 13-in. x 9-in. baking dish; sprinkle with butterscotch chip mixture. Bake at 375° for 20 minutes., In a small bowl, combine flour and brown sugar; cut in butter until crumbly. Stir in oats. Sprinkle flour mixture and pecans over apple mixture; bake 30-40 minutes longer or until filling is bubbly and topping is golden brown.

- Butter a deep 2-quart or 9x13" baking dish.
- Place the sliced apples in large mixing bowl.
- Stir in lemon juice.
- Toss well.
- Blend flour, both sugars, cinnamon and a dash of nutmeg in a food processor until well combined.
- Add butter and blend until mixture forms large clumps.
- Transfer to a bowl and work in pecans with your fingertips.
- Pour sliced apples into prepared baking dish.
- Spread the topping mixture over apples.
- Bake for 30 minutes or until apples are tender and the topping is browned.
- Serve warm with whipped cream or ice cream.

- Preheat oven to 375 degrees F.
- In a large mixing bowl, toss the apples and raisins with 3 tablesppons of brown sugar, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg and salt. Spoon into a buttered 9-inch pie plate.
- In another mixing bowl, combine the remaining brown sugar and spices, and the flour; give a couple good stirs with a wooden spoon.
- Cut in the butter with two knives until mixture resembles coarse crumbs; stir in cereal. Sprinkle over the apple mixture.
- Bake for 30 minutes or until topping starts to brown and apples are tender.
- Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.
- Cook's Tip: For a special treat, sprinkle some shredded cheddar cheese on top of the crumble topping the last 10 minutes of baking. Yummm!

- In a large bowl whisk together sugar, flour, cinnamon, ginger and 1/2 cup pecans. Add the apples and coat. Add the lemon juice and toss until coated. Spread apples evenly in the dish.
- To make the crumb topping: In a medium sized bowl mix flour, sugar, white sugar, cinnamon, and nutmeg into the bowl. Add the butter and using a pastry blender or fork mix until coarse crumbs form. Stir in 1/2 cup pecans. Sprinkle on top of apples.
