CHOCOLATE PANCAKES

Number Of Ingredients 13

1 1/3 cups (185g) all-purpose flour
1/4 cup (25g) cocoa powder (I use Dutch-processed)
2 teaspoons baking powder
1/4 teaspoon salt
2 eggs
1/3 cup (65g) granulated sugar
1 cup (240 ml) whole milk
3 tablespoons canola or vegetable oil ((or 45g melted butter))
1 teaspoon pure vanilla extract
1/2 cup (85g) chocolate chips or chunks
butter or oil (, for cooking)
140 g (5 oz.) bittersweet or semisweet chocolate
1/2 cup (120 ml) heavy cream

Steps:

  • In a large bowl, sift together flour, cocoa powder, baking powder, and salt (or whisk well with a whisk). Set aside.
  • In a separate medium bowl, whisk together egg and sugar until well combined. Add milk, oil (or melted butter), and vanilla extract. Pour the wet ingredients into the dry ingredients and stir just until combined and moistened. Do not over mix. Mix in chocolate chips or chunks. Set batter aside and make the chocolate sauce.
  • Chocolate sauce: In a medium heatproof bowl, combine chocolate and heavy cream. Microwave in 20- to 30-second increments, mixing in between, until chocolate is melted and mixture is smooth. Set aside while making the pancakes. I like to pour it over the pancakes while it's warm.
  • Cook the pancakes: Heat a griddle or skillet over medium heat. Coat with butter or oil. For each pancake, drop 1/4 cup of batter onto skillet. Cook 1-2 minutes, until surface of pancakes have some bubbles and the bottom appears to be done. Flip carefully and cook another 1-2 minutes. Transfer to a plate and if you want you can cover the plate loosely with aluminum foil to keep warm. Coat the skillet with butter or oil before every pancake or batch of pancakes to prevent sticking.
  • Serve immediately with chocolate sauce (rewarm sauce in the microwave for a few seconds if needed).

1 cup old fashioned oats
1/2 cup whole wheat flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1 large egg
1 cup unsweetened almond milk
4 tablespoons honey
2 tablespoons cocoa powder
4 teaspoons coconut oil
2 cans coconut milk

Steps:

  • First, blend your oats into a fine powder using a blender or food processor
  • In a large bowl, whisk together the blended oats, whole wheat flour, baking powder, baking soda, egg, almond milk, honey, and cocoa powder
  • Add a pinch of salt and whisk to combine
  • In a skillet, heat about 1 teaspoon of coconut oil over medium to medium high heat
  • Once hot, add 1/2 cup of batter into the pan
  • Using a spatula, turn the pancake when bubbles have started to form along the edges and center
  • Continue cooking until the other side has browned (a little harder to tell since it's a chocolate pancake, but it doesn't take long).
  • Continue until all 4 pancakes are done, adding a fresh teaspoon of coconut oil into the pan before starting each new pancake
  • For the coconut whipped cream, let your cans of coconut milk sit in the fridge overnight before you make the pancakes
  • Open the cans and scoop the solidified coconut cream off the top and into a bowl
  • Beat (using a stand mixer or hand mixer) until the coconut cream has whipped and forms stiff peaks
  • Serve each pancake with 1 blue container (1/4 cup) of coconut whipped cream over top!

Steps:

  • Whisk cocoa powder and sugar together in a bowl until well combined. Add flour, brown sugar, baking soda, baking powder, and salt; continue whisking until evenly mixed. Make a well in the center of the bowl.
  • Whisk buttermilk, eggs, vegetable oil, and vanilla extract together in a separate bowl. Pour into center of the well of the cocoa mixture; mix until just blended.
  • Heat a lightly oiled griddle over medium heat. Drop 1/4 cup batter onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

2 egg yolks
2 egg whites, whipped
3 tablespoons sugar
1 ⅓ cups milk, more if the batter is too thick
3 tablespoons butter, melted
1 teaspoon vanilla extract
1 ½ cups flour
¼ cup cocoa powder
2 ½ teaspoons baking powder
3 ½ oz chocolate, finely chopped
1 tablespoon butter, or oil for cooking
1 cup heavy cream
8 oz chocolate chips
raspberry, for garnish

Steps:

  • In a large bowl, mix together yolks and sugar, while still whisking, add milk
  • Carefully fold in whipped egg whites.
  • NOTE: It's better to use a spoon rather than a whisk.
  • Add and mix the melted butter and the vanilla.
  • In another large bowl, mix the sieved flour, cocoa powder, and the baking powder.
  • Form a little well in the middle and pour the milk and eggs mixture. Stir until the batter is smooth.
  • Mix in the chopped chocolate. Let the batter sit for 15-20 minutes.
  • To make the ganache, in a small saucepan, heat the heavy cream, without letting it boil.
  • Take off the heat, mix with the chocolate chips until perfectly smooth.
  • Over low to medium heat, pour ¼ cup (60 ml) of pancake batter on a well-oiled pan.
  • When bubbles start to form on the surface of the pancake, flip and cook it for a minute on the other side.
  • When the pancakes are ready, pour the chocolate ganache on top.
  • NOTE: If the ganache has hardened while you were making the pancakes, you can microwave it for 15-20 seconds.
  • Garnish with raspberries.
  • Enjoy !

  • In a medium bowl bowl, whisk together the butter, egg white, vanilla, maple syrup, and salt. Stir in the Greek yogurt, stirring until no lumps remain. Stir in the vinegar until fully incorporated. Stir in the milk and water. Pour the flour evenly over the top of the batter, and evenly sprinkle the baking soda and baking powder on top of the flour. Stir until the flour is just incorporated. Gently fold in the chocolate chips.
  • Lightly coat a large nonstick pan or griddle with nonstick cooking spray, and briefly preheat over low heat.
  • Using a scant 2 tablespoons of batter for each pancake, dollop the batter onto the hot pan, and spread into a circular shape using a small spatula or back of a spoon (if desired). Let the pancakes cook for 2-3 minutes, or until a slight skin starts to form around the edges. Slide a spatula underneath, and flip. Continue to cook for another 1-2 minutes or until cooked through. Re-coat the pan with nonstick cooking spray, and repeat with the remaining batter.
