Dark chocolate chips, toasted pecans, and hearty oatmeal pack each bite of these Cowboy Cookies with deliciousness!

1 c. Flour
1 tsp. Baking Soda
1 tsp. Baking Powder
1 tsp. Cinnamon
½ tsp. Salt
½ c. Vegan Butter
½ c. Sugar
½ c. Brown Sugar
1 Egg
1 tsp. Vanilla
1 bag Dark Chocolate Chips (dairy free)
1 c. Oats
1 c. Pecans (toasted)

Steps:

  • Preheat the oven to 350°F. Place the pecans on a rimmed baking sheet and toast while the oven preheats for 8 minutes. Shake the pecans halfway through. Remove from oven and allow to cool before chopping to desired size.
  • In a medium bowl stir together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  • In the base of a stand mixer, cream together vegan butter, sugar, and brown sugar.
  • Once creamed add the egg and vanilla. Stir until incorporated.
  • Slowly mix the flour mixture into the vegan butter mixture until just combined. Remove from the mixer and fold in the chocolate chips, oats, and chopped pecans.
  • Scoop into 1.5 Tbsp. balls, sprinkle with flaky sea salt, and bake for 10 minutes.

1 cup oats (I used old-fashioned rolled oats)
1 cup all-purpose flour
1/3 cup shredded coconut
1/2 teaspoon baking soda
1/4 teaspoon coarse salt
1/3 cup packed brown sugar
1/4 cup sugar
1/4 cup melted coconut oil
1/4 cashew milk
1 tablespoon maple syrup
2 teaspoons ground flax seed
1 teaspoon vanilla extract
1/3 cup miniature semi-sweet chocolate chips*
1/3 cup pecan pieces

Steps:

  • Preheat oven to 350˚F and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the oats, flour, coconut, baking soda and salt.
  • In a separate bowl, whisk together the sugars, oil, milk alternative, maple syrup, ground flax seed and vanilla extract until smooth.
  • Mix the wet and dry ingredients until combined, and stir in chocolate chips and pecan pieces.
  • Using a cookie scoop to measure, roll dough into balls and place on parchment. Bake cookies for 10 - 12 minutes or until top of dough has fully set and looks golden brown. Remove from oven and allow cookies to rest before 5 minutes before transferring to cooling rack.

3/4 cup flour
1/4 cup cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup margarine or 1/2 cup shortening
1/2 cup white sugar
1/2 cup brown sugar, firmly packed
1 large egg
1 cup quick-cooking oats
1/2 teaspoon vanilla
1 cup chocolate chips
1/2 cup chopped nuts (optional)

Steps:

  • Sift together dry ingredients; set aside.
  • Blend together margarine (or shortening) and sugars.
  • Add egg & beat until light & fluffy then stir in vanilla.
  • Combine with dry ingredients & mix well.
  • Add remaining ingredients& mix well.
  • Drop by teaspoon onto greased or parchment-lined cookie sheets and bake in preheated 350°F oven for 12 minutes.
  • Allow a few minutes longer if you prefer crisp cookies.
