- Spray griddle pan with a non-stick olive oil. Heat to medium high. In the meantime, mix turkey with the onion seasoning. Grate about 3 tablespoons of the onion and add to mix. Add salt and fresh cracked pepper. Shape into four burgers. Slice the remaining onion. Cook your burgers on your griddle pan and saute your onions in a frying pan also sprayed with non-stick oil. Add the garlic. Hit the onions with salt and fresh cracked pepper. Once the onions carmelize add the Worcestershire sauce and turn off heat. Assemble the cooked burgers on foil in your oven or toaster oven and add the onions on top. Now here is where you can go crazy if you want! Top it with your favorite cheese or your traditional french onion soup cheeses...Mozzarella, Provolone, Parmigiana, whatever. I like to put a slice of low fat swiss. It packs a punch with very few calories. Finally, broil until the cheeses just begin to melt and serve it on one of those fresh deli toasted wheat buns or a toasted garlic roll. Garnish the burger with one or two slices of garlic pickles or jewish pickles. Their crunchy like chips but a lot healthier!
JUICY TURKEY BURGERS WITH ONION JAM

- Prepare the onion jam: Heat a large saute pan. Toss in the onion slices with the oil and a generous pinch of salt. Add the sugar and cook over medium heat until the onions are caramelized and tender, 20 to 25 minutes. Stir in the vinegar and if a splash of juice from the cornichon jar, if using, and cook 1 to 2 minutes. Set aside.
- For the burgers: Break up the meat in a medium bowl, spreading it up the sides of the bowl so that the seasoning really permeates the meat. Sprinkle with the Worcestershire and salt. Mix with your hands, but do not overmix. (The more you work the meat, the tougher the burger.) Gingerly form the meat into four round 1-inch-thick patties. Refrigerate for at least 20 minutes and up to 1 hour.
- Heat a large cast-iron skillet and add the oil. When the oil begins to smoke lightly, arrange the patties in a single layer at a distance from one another. Let cook, undisturbed, until the bottoms brown, 3 to 5 minutes. Turn the patties and let the bottoms brown again, 3 to 5 minutes. Lower the heat to medium-low, then add the stock to the skillet and cover. Simmer until the patties are cooked through and the internal temperature reaches 165 degrees F, 7 to 10 minutes. Remove the lid, shut off the heat under the skillet and place a slice of cheese on each patty. Let the patties rest with the heat off until the cheese is melted, about 2 minutes. Transfers the patties to a plate or cutting board and let rest for 1 to 2 minutes.
- Reduce the remaining liquid in the skillet by half, about 5 minutes, and serve it on the side of the burgers. People can spoon this liquid over the burgers instead of or in addition to ketchup. You can also just add this reduced liquid to the onion jam to enrich the flavor.
- Assemble the burgers: Arrange the bun bottoms on a work surface. Spoon some of the onion jam on each and top with one of the patties. Top with more jam and a few slices of cornichon. Top with the bun tops.

This is an old Weight Watcher's recipe my mom has been making since the late 70's. We both still make it to this day. The recipe contains no added fat, but you would never know it. Goes great served over rice or egg noodles.

- Season the meat with salt and pepper to taste. Weigh out 4 oz/125 gm of meat and shape into a pattie. Do this with the remaining meat. Place patties on a platter, cover with plastic wrap/cling film and set aside.
- Pour water into a large fry pan/skillet over medium high heat. Add stock cubes (use beef cubes for veal, chicken cubes for turkey), onions and mushrooms. Bring to a boil and then lower heat to simmer. Cook until onions are just about cooked. You may need to add more water as the veggies cook as you want to have about 2 cups worth of gravy at the end.
- Gently place the burgers in the pan with the veggies and poach for about 5-7 minutes on each side, pressing down with a spatula to flatten a bit. Cook until juices run clear. Remove the cooked burgers to a plate and keep warm. Return sauce to a boil and add more water if necessary.
- Put cold water into a small cup or bowl and stir in cornstarch with a fork or whisk. Slowly pour into the sauce in the pan and thicken.
- Place rice or noodles on plate, place two burgers on top, and pour gravy over burgers.
