Healthier Restaurant-Style Buffalo Chicken Wings image

This is the similar to the hot wings recipe served at a popular restaurant chain. Our healthier version features less butter and no frying!

½ cup all-purpose flour
¼ teaspoon paprika
¼ teaspoon cayenne pepper
¼ teaspoon salt
10 chicken wings
2 tablespoons butter
¼ cup hot sauce
1 clove garlic, minced
1 dash ground black pepper

Steps:

  • Mix together flour, paprika, cayenne pepper, and salt in a small bowl. Place chicken wings in a large dish and sprinkle flour mixture over them until well coated. Place on baking sheet and refrigerate for 1 hour, uncovered.
  • Preheat oven to 400 degrees F (204 degrees C).
  • Bake wings in preheated oven until no longer pink at the bone and juices run clear, about 15 minutes per side.
  • Combine butter, hot sauce, pepper, and garlic in a small saucepan over low heat. Cook and stir until butter is melted and mixture is well blended, about 3 minutes. Place chicken wings in serving bowl and add hot sauce mixture, mixing well.

Canola oil, for frying
24 chicken wing parts (12 wings separated into 2 pieces)
One 12-ounce bottle cayenne hot pepper sauce, such as Frank's
1 stick butter
Several dashes Worcestershire sauce
Several dashes hot sauce, such as Tabasco
Blue cheese dip, for serving
Celery sticks, for serving

Steps:

  • Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
  • Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
  • Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.

1 teaspoon garlic powder
½ teaspoon ground black pepper
1 cup tomato-based hot pepper sauce
2 tablespoons vinegar-based hot pepper sauce
1 teaspoon garlic powder
¼ cup grated Parmesan cheese
3 tablespoons butter, melted

Steps:

  • Preheat an outdoor or indoor grill to a high heat. Lightly grease the grill.
  • Season wings with garlic powder and ground black pepper. Cook wings on the preheated grill until they are very crispy. Turn the wings frequently as they will burn easily.
  • While the wings are grilling, in a large bowl, combine both hot sauces with garlic powder, Parmesan cheese and melted butter.
  • When the wings are finished cooking, place them in the large bowl of hot sauce mixture and stir until they are coated.

One 4lb. bag of frozen chicken drummettes or mixed wings and drummettes. Two 12 ounce bottles of either Texas Pete or Louisiana hot sauce and two 12 ounce bottles of Frank's hot sauce and one 7.5 ounce tub of Promise fat free margarine.

Steps:

  • Turn on and preheat oven to 350 degrees and line 10x15 baking sheet with non-stick aluminum foil. Place chicken in 3 long rows until baking sheet is full. Bake for 30 to 40 minutes or until chicken is no longer pink or internal temperature of chicken reaches 180 degrees. While chicken is cooking, mix hot wing sauce ingredients together in a large enough bowl (6 to 8 quart) to be able to let your cooked chicken soak in the hot wing sauce. Serve with celery and either bleu cheese or ranch dressing. Enjoy healthy eating!

1 to 2 garlic cloves, minced
1-1/2 teaspoons dried rosemary, crushed
1 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
Optional: Celery sticks, carrot sticks and blue cheese salad dressing

Steps:

  • Cut chicken wings into 3 sections; discard wing tips. In a large bowl, combine the hot pepper sauce, garlic and seasonings. Add wings; toss to evenly coat. Transfer to a well-greased 13x9-in. baking dish. , Bake, uncovered, at 425° until chicken juices run clear, 30-40 minutes, turning every 10 minutes.
