Easy Low Carb Keto Cheeseburger Casserole Recipe image

1 tbsp Avocado oil
1 large head Cauliflower
1/2 tsp Sea salt
1 cup Cheddar cheese ((shredded))
1/4 cup Heavy cream
2 lb Ground beef
2 tsp Sea salt
1/2 tsp Black pepper
1/2 cup Sugar-free ketchup ((or regular ketchup if not sugar-free))
2 tbsp Mustard ((or more if you love mustard!))
1 cup Cheddar cheese ((shredded))

Steps:

  • Rice the cauliflower using a food processor or box grater. (Learn more about how to make cauliflower rice here.)
  • Heat the oil in a large saute pan over medium-high heat. Add the cauliflower rice and sea salt. Stir fry until the cauliflower is cooked and a little browned, about 7-10 minutes.
  • Remove from heat. Stir in the cheddar cheese and heavy cream.
  • Transfer the mixture evenly to a 9 x 13 in (23 x 33 cm) glass casserole dish. Set aside.
  • Preheat the oven to 400 degrees F (204 degrees C).
  • Lightly wipe down the saute pan to remove any cauliflower pieces, and add the ground beef. Season with sea salt and black pepper. Cook the ground beef until browned, about 10 minutes. Drain if needed.
  • Sprinkle the ground beef evenly over the cauliflower in the casserole dish.
  • Drizzle the casserole with ketchup (you can make your own sugar-free ketchup like this, or store bought is fine if you are not strictly sugar-free) and mustard. Sprinkle with shredded cheese.
  • Bake for about 10 minutes, until casserole is hot and cheese melts.

8 eggs
1 cup heavy whipping cream
½ teaspoon salt
¼ teaspoon ground black pepper
1 (12 ounce) package shredded Cheddar cheese, divided

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir beef with garlic and onion powder until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Spread beef onto the bottom of a 9x13-inch casserole pan. Stir in bacon pieces.
  • Whisk eggs, heavy cream, salt, and pepper in a medium bowl until well combined. Stir in 8 ounces Cheddar cheese.
  • Pour egg mixture over the beef and bacon. Top with the remaining 4 ounces cheese.

4 slices Center Cut Bacon, cut into strips
12 oz bag Trader Joe's Radishes, quartered
1 lb Ground Beef (96/4)
1/4 C (64g) Sugar Free Ketchup
2 Tbsp (30g) Light Mayo
2 Tbsp (30g) Dijon or Whole Grain Mustard
2 Tbsp (30g) Pickle Juice
1 Tbsp (15g) Worcestershire Sauce
4 oz Shredded Cheese
Salt and Pepper, to taste
Dill Pickle Chips and Fresh Parsley (optional)

Steps:

  • Cook the bacon in a large skillet over medium-high heat before transferring the cooked bacon to plate, leaving the grease behind.
  • Add the quartered radishes to the skillet and cook for 4-5 minutes, stirring occasionally, until the radishes start to soften.
  • Push the radishes to one side before adding the ground beef. Brown both sides of the ground beef before mincing and fully cooking.
  • While the beef cooks, mix the ketchup, mustard, mayo, pickle juice, and Worcestershire sauce together in a small bowl. Once the beef is fully cooked, turn off the heat and add the sauce. Stir to fully incorporate.
  • Top with shredded cheese and optional dill pickle chips. Bake in a 400ºF oven for about 5 minutes to fully melt the cheese. Top with the cooked and crumbled bacon, fresh parsley (optional), and salt and pepper to taste.

1 teaspoon butter, or as needed
1 pound ground beef
½ cup diced onion
2 cloves garlic cloves, pressed
salt and freshly ground black pepper to taste
1 cup shredded sharp Cheddar cheese, divided
2 tablespoons ketchup
2 tablespoons mayonnaise
2 tablespoons diced dill pickles
½ tablespoon mustard

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking dish with butter.
  • Cook ground beef and onion in a large, nonstick skillet over medium heat until beef is browned and onions are soft and translucent, 5 to 10 minutes. Add garlic and cook until fragrant, about 1 minute. Season with salt and pepper. Stir in 1/2 cup Cheddar cheese until well combined.
  • Remove from heat. Add ketchup, mayonnaise, pickles, and mustard. Transfer mixture to buttered baking dish and top with remaining 1/2 cup Cheddar cheese.
  • Bake in the preheated oven until cheese is melted, 7 to 10 minutes.
