- Preheat your oven to 435 degrees Fahrenheit and set aside a sheet pan.
- In a large bowl or plastic Ziploc bag, add the flour, breadcrumbs, paprika, seasoning salt, pepper, garlic powder, chili powder, and cayenne pepper. Toss or stir well to combine.
- Add the chicken strips to the flour mixture and toss very well to coat.
- Add the butter to the sheet pan and place it in the oven to preheat until the pan is hot and the butter is melted.
- Distribute the butter over the pan using a spoon or pastry brush, and place the coated chicken strips in the butter on the sheet pan.
- Spray the tops of the chicken strips with the vegetable oil cooking spray just before placing the pan in the oven.
- Turn the chicken strips after 10 minutes in the oven. Spray with a small amount of additional vegetable oil cooking spray when you turn them, if needed.
- Bake for another 5-10 minutes, or until both sides are crispy and the chicken tenders are cooked through.
- Serve immediately with your favourite side dishes!

- In a mixing bowl whisk milk, garlic powder, onion powder, salt, and pepper. Add in the chicken breast strips and allow it to soak for at least 1 hour, or overnight if time allows.
- Preheat your oven to 400°F and line a baking sheet with parchment paper or aluminum foil.
- Drizzle avocado oil onto the bottom of the pan and spread it all over until there are no dry spots.
- Add panko garlic powder, smoked paprika, parsley/oregano, salt and pepper in a large Ziploc bag.
- Drain the chicken, and add it to the Ziploc bag, shaking well to evenly coat. Place coated chicken strips onto the prepared baking sheet, leaving some space in between.
- Transfer to the oven and bake for 15-18 minutes, flipping it halfway.
- Serve immediately with the desired healthy side and dip. Enjoy!

- Preheat oven to 400 degrees. Melt the butter and pour it on to a large rimmed baking sheet, such as a sheet pan.
- If using chicken breasts, slice into strips, each about 1 inch wide.
- Add the flour, paprika, garlic powder, onion powder, and half of the salt and pepper to a shallow dish. Add the eggs to a second shallow dish and beat well. Add the panko and remaining salt and pepper to a third shallow dish.
- Dip the chicken strips in the flour, then egg, then Panko. Press the strips into the Panko to ensure the chicken is evenly coated.
- Add the chicken strips to the pan with the melted butter.
- Bake for 10 minutes and then flip each piece of chicken over. Continue baking for 10-15 minutes or until the chicken is cooked through.

- Preheat the oven to 425°F
- On a large plate, place the flour. In a shallow dish, beat the egg, and season with paprika. In a third shallow dish, mix panko bread crumb, parmesan cheese, olive oil, and add the optional salt and black pepper if needed.
- First, pat the chicken tenders dry with paper towels and coat the chicken tenders with the flour. Give a little shake to remove excess flour.Dip the chicken into the egg mixture, shake off excess then coat the meat with bread crumbs and press down to adhere.
- Place all chicken tenders on a lightly greased baking sheet. Bake for about 8 minutes (less or more time depending on the thickness). Then turning the chicken tenders, continue cooking for 8 more minutes (less or more time depending on the thickness) or until the chicken is no longer pink or cooked through and the coating is golden brown.
- Serve with homemade honey mustard dipping sauce.

FRIED CHICKEN TENDERS
This recipe came from my "Where's Mom Now That I Need Her?" cookbook. The recipe calls for one whole fryer chicken, but I usually just use four skinless chicken breasts. This way, I have breading left over for the next time I want to make this dish.

- Preheat oven to 400 degrees.
- While oven is preheating, place 1/2 cup butter or margarine in 9x13 baking dish. Place in oven just until melted.
- Combine biscuit mix, salt, paprika, and pepper in small mixing bowl.
- Place the amount of breading you'll be using in a paper bag. (Whole recipe will coat one whole fryer chicken or about 8 chicken breasts). Place the remainder in a plastic baggie for use at a later time.
- Cut chicken into pieces about 1 inch thick.
- Place chicken pieces in paper bag of breading one at a time and shake to coat.
- Place coated pieces in baking dish with melted butter or margarine.
- Bake at 400 degrees for 50 minutes. Reduce heat to 375 and bake for an additional 10 minutes. If using a convection oven (which is what I use) you'll only need to bake the chicken at 400 for about 40 minutes.
- Serve with your favorite dipping sauce (I prefer honey mustard).

- Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
- Place egg in a shallow dish. Place bread crumbs, garlic powder, onion powder, paprika, salt, and pepper into a large zip-top freezer bag and mix well. Dip 2 chicken strips into egg and then place into bread crumb mixture and shake to coat. Place coated chicken pieces onto the prepared baking sheet. Repeat with remaining chicken.
- Spray each chicken tender with cooking spray 2 times.
- Bake tenders in the preheated oven for 7 minutes; flip, continue to bake on opposite side until no longer pink in the centers, about 7 minutes more. Remove from the oven.

- Combine flour, salt, and pepper in a medium bowl. Mix eggs and water together in a small bowl.
- Place some chicken strips in the flour mixture to coat, then gently shake to remove any excess flour. Coat strips in egg. Return to the flour mixture and coat again; repeat with egg mixture. Coat once more in the flour mixture, placing strips on a plate while you continue with remaining chicken.
- Let strips sit for 5 minutes to allow flour to set.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C); oil is ready if you drop some water in and it sizzles.
- Working in batches if needed, place strips in the hot oil. Cook for 8 minutes. - Preheat oven to 450.
- Combine chicken and buttermilk in a shallow bowl. Place crackers, Creole seasoning, and salt in a heavy-duty zip-top bag. Crush crackers with a rolling pin or heel of hand.
- Drain chicken, discarding buttermilk. Add chicken to bag, close, and shake to coat well.
