1/2 cup all purpose flour
1 cup coarse breadcrumbs
2 tablespoons smoked paprika
2 1/2 teaspoons seasoning salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper (optional)
4 chicken breasts, cut into thin strips (about 1-inch wide) (You'll end up with about 5 strips per breast)
4 tablespoons butter
vegetable oil cooking spray

Steps:

  • Preheat your oven to 435 degrees Fahrenheit and set aside a sheet pan.
  • In a large bowl or plastic Ziploc bag, add the flour, breadcrumbs, paprika, seasoning salt, pepper, garlic powder, chili powder, and cayenne pepper. Toss or stir well to combine.
  • Add the chicken strips to the flour mixture and toss very well to coat.
  • Add the butter to the sheet pan and place it in the oven to preheat until the pan is hot and the butter is melted.
  • Distribute the butter over the pan using a spoon or pastry brush, and place the coated chicken strips in the butter on the sheet pan.
  • Spray the tops of the chicken strips with the vegetable oil cooking spray just before placing the pan in the oven.
  • Turn the chicken strips after 10 minutes in the oven. Spray with a small amount of additional vegetable oil cooking spray when you turn them, if needed.
  • Bake for another 5-10 minutes, or until both sides are crispy and the chicken tenders are cooked through.
  • Serve immediately with your favourite side dishes!

1½ lbs Boneless Chicken Breasts (trimmed and cut into about 3 strips each)
1 Cup Milk
1 Tsp Garlic Powder
1 Tsp Onion Powder
Kosher salt and pepper, to taste
2 Tbsp Avocado or Olive oil
½ Cup Panko Breadcrumbs
1 Tbsp Smoked Paprika
½ Tbsp Dried Parsley or Oregano

Steps:

  • In a mixing bowl whisk milk, garlic powder, onion powder, salt, and pepper. Add in the chicken breast strips and allow it to soak for at least 1 hour, or overnight if time allows.
  • Preheat your oven to 400°F and line a baking sheet with parchment paper or aluminum foil.
  • Drizzle avocado oil onto the bottom of the pan and spread it all over until there are no dry spots.
  • Add panko garlic powder, smoked paprika, parsley/oregano, salt and pepper in a large Ziploc bag.
  • Drain the chicken, and add it to the Ziploc bag, shaking well to evenly coat. Place coated chicken strips onto the prepared baking sheet, leaving some space in between.
  • Transfer to the oven and bake for 15-18 minutes, flipping it halfway.
  • Serve immediately with the desired healthy side and dip. Enjoy!

1.75 pounds boneless, skinless chicken (breasts or tenderloins)
1 cup flour
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt (divided)
1 teaspoon pepper (divided)
2 large eggs
2 cups panko bread crumbs
8 tablespoons butter

Steps:

  • Preheat oven to 400 degrees. Melt the butter and pour it on to a large rimmed baking sheet, such as a sheet pan.
  • If using chicken breasts, slice into strips, each about 1 inch wide.
  • Add the flour, paprika, garlic powder, onion powder, and half of the salt and pepper to a shallow dish. Add the eggs to a second shallow dish and beat well. Add the panko and remaining salt and pepper to a third shallow dish.
  • Dip the chicken strips in the flour, then egg, then Panko. Press the strips into the Panko to ensure the chicken is evenly coated.
  • Add the chicken strips to the pan with the melted butter.
  • Bake for 10 minutes and then flip each piece of chicken over. Continue baking for 10-15 minutes or until the chicken is cooked through.

1 large egg ((lightly beaten))
½ tsp smoked paprika powder
1 cup panko breadcrumb
½ cup grated parmesan cheese
3 tablespoons olive oil
¼-½ tsp salt
a pinch of black pepper

Steps:

  • Preheat the oven to 425°F
  • On a large plate, place the flour. In a shallow dish, beat the egg, and season with paprika. In a third shallow dish, mix panko bread crumb, parmesan cheese, olive oil, and add the optional salt and black pepper if needed.
  • First, pat the chicken tenders dry with paper towels and coat the chicken tenders with the flour. Give a little shake to remove excess flour.Dip the chicken into the egg mixture, shake off excess then coat the meat with bread crumbs and press down to adhere.
  • Place all chicken tenders on a lightly greased baking sheet. Bake for about 8 minutes (less or more time depending on the thickness). This recipe came from my "Where's Mom Now That I Need Her?" cookbook. The recipe calls for one whole fryer chicken, but I usually just use four skinless chicken breasts. This way, I have breading left over for the next time I want to make this dish.

1 cup biscuit mix
1 teaspoon salt
1 1/2 teaspoons paprika
1 dash pepper
8 boneless skinless chicken breasts or 1 broiler-fryer chicken
1/2 cup butter or 1/2 cup margarine

Steps:

  • Preheat oven to 400 degrees.
  • While oven is preheating, place 1/2 cup butter or margarine in 9x13 baking dish. Place in oven just until melted.
  • Combine biscuit mix, salt, paprika, and pepper in small mixing bowl.
  • Place the amount of breading you'll be using in a paper bag. (Whole recipe will coat one whole fryer chicken or about 8 chicken breasts). Place the remainder in a plastic baggie for use at a later time.
  • Cut chicken into pieces about 1 inch thick.
  • Place chicken pieces in paper bag of breading one at a time and shake to coat.
  • Place coated pieces in baking dish with melted butter or margarine.
  • Bake at 400 degrees for 50 minutes. Reduce heat to 375 and bake for an additional 10 minutes. If using a convection oven (which is what I use) you'll only need to bake the chicken at 400 for about 40 minutes.
  • Serve with your favorite dipping sauce (I prefer honey mustard).

1 egg, beaten
1 ¼ cups panko bread crumbs
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon kosher salt
1 teaspoon ground black pepper
4 skinless, boneless chicken tenders, cut into 1/2-inch strips lengthwise

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
  • Place egg in a shallow dish. Place bread crumbs, garlic powder, onion powder, paprika, salt, and pepper into a large zip-top freezer bag and mix well. Dip 2 chicken strips into egg and then place into bread crumb mixture and shake to coat. Place coated chicken pieces onto the prepared baking sheet. Repeat with remaining chicken.
  • Spray each chicken tender with cooking spray 2 times.
  • Bake tenders in the preheated oven for 7 minutes; flip, continue to bake on opposite side until no longer pink in the centers, about 7 minutes more. Remove from the oven.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.

1 ½ pounds boneless, skinless chicken breast tenders
2 cups vegetable oil for frying, or as needed

Steps:

  • Combine flour, salt, and pepper in a medium bowl. Mix eggs and water together in a small bowl.
  • Place some chicken strips in the flour mixture to coat, then gently shake to remove any excess flour. Coat strips in egg. Return to the flour mixture and coat again; repeat with egg mixture. Coat once more in the flour mixture, placing strips on a plate while you continue with remaining chicken.
  • Let strips sit for 5 minutes to allow flour to set.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C); oil is ready if you drop some water in and it sizzles.

Steps:

  • Preheat oven to 450.
