1 cup oats (I used quick-cooking steel-cut oats)
1 cup peanut butter (or pumpkin seed butter if you're making for school)
1/4 cup chia seeds
2 1/2 tbsp honey
1 tbsp coconut oil
1 tsp vanilla extract
2 1/2 tbsp cocoa powder
1/4 tsp salt
1/3 cup dark chocolate chips

Steps:

  • Add all of the ingredients except the chocolate chips into a food processor and process until well-blended.
  • Transfer to a medium-sized bowl and add chocolate chips. Mix well.
  • Roll into 1-inch balls and place on parchment paper inside an airtight container.
  • Chill and serve!

Enjoy these Oatmeal Energy Balls for breakfast! With one batter, you can make four different types of energy balls. This recipe is quick and easy to make, and you can make it ahead of time, so breakfast is ready by the time you wake up.

1 cup old fashioned rolled oats ((jumbo rolled oats))
1/4 cup instant oats
1/2 cup ground flaxseeds ((milled flax))
1/2 cup smooth natural peanut butter ((see notes))
1/3 cup honey
1 teaspoon quality vanilla extract
1/4 teaspon salt ((if using an unsalted peanut butter))
2 tablespoons dark chocolate chips
2 tablespoons crushed banana chips
2 tablespoons finely chopped dried apple slices
1/8 teaspoon ground cinnamon
2 tablespoons unsweetened shredded coconut ((desiccated coconut, or finely crushed toasted coconut flakes also work))

Steps:

  • In a large bowl, combine everything together using a spatula. It should all come together and form a sticky but slightly crumbly batter. If the mixture is too dry, add a bit more peanut butter and honey. If the mixture is too sticky, add a bit more oats. See notes.
  • Divide the batter into 4 medium bowls. If you have a scale, each bowl should weigh 95 grams, but it's fine to just estimate. You can also make these Oatmeal Energy Balls with one mix-in. Skip this step, and make sure you adjust the mix-in recipe accordingly.
  • For each bowl, add in the mix-in of choice, and mix until everything is well combined.
  • Cover the bowl and place it in the refrigerator for about 10 minutes. This will make it easier to press into balls.
  • Press and roll the batter into roughly 1-inch balls. You should be able to make 6 Oatmeal Energy Balls with each mix-in. Enjoy immediately, and store any leftovers in a covered container in the refrigerator.

1 cup nut butter ((we like almond, peanut, cashew, or sunflower))
3-5 pitted medjool dates* ((add more for sweeter bites))
2/3 cup hemp seeds
1/4 cup chia seeds ((or sub other seeds, such as sesame or flax))
3-4 Tbsp protein powder*
Melted dark chocolate ((dairy-free as needed - we like Enjoy Life))
Hemp seeds
Desiccated coconut
Sea salt

Steps:

  • Add nut butter, pitted dates, hemp seeds, chia seeds, and protein powder to a food processor and blend until all ingredients are well combined and a cookie dough-like texture forms (see photo).
  • If too wet, add more dry ingredients of choice, such as protein powder or hemp seeds. If too crumbly or dry, add a little more nut butter. NOTE: These are meant to be on the tender side, so don't be concerned if they're a little soft (they'll firm up in the refrigerator or freezer).
  • Taste and adjust flavor as needed, adding more protein powder of choice for flavor or more dates for sweetness (if adding more dates, chop first to encourage even blending). Mix again until well combined.
  • Scoop out rounded 1 Tbsp amounts and roll into balls (as recipe is written, ~20 // we love this scoop). Place on a parchment-lined plate or platter.
  • Roll the balls in hemp seeds or desiccated coconut, or melt some dark chocolate in a double boiler on the stovetop, or in 20-second increments in the microwave, then spoon a small amount over the bites (all optional). Top with coconut or sea salt for added flavor (also optional).
  • Transfer balls to the freezer or refrigerator to chill for 15 minutes to firm up. We recommend storing these in the refrigerator for up to 2 weeks or in the freezer up to 1 month for best texture. They are delicious straight out of the refrigerator or freezer and tend to soften at room temperature.

1/3 cup vanilla protein powder (we used Garden of Life)*
1/2 cup rolled oats
1 tablespoon chia seeds
2 tablespoons honey
1/4 cup mini chocolate chips
1-4 teaspoons water*

Steps:

  • Place peanut butter, protein powder, rolled oats, chia seeds, honey, and mini chocolate chips into a medium bowl.
  • Use a wooden spoon or your hands to mix the dough together. At this point, begin to add water by the teaspoon.
  • Depending on how drippy your peanut butter is, you'll need to add more or less water. The water not only helps moisten things so your balls hold shape, but they actually help your balls become less chalky.
  • Use a 1 tablespoon cookie scoop to scoop dough into your palms. Roll into balls until all dough is gone. You should get somewhere between 14-16 balls.
  • Store in the refrigerator for up to a week or in the freezer for up to 3 months.
