BEEF AND LENTIL SOUP
A great lunch soup full of protein. I make a batch of this and warm it up all week.

- Heat the olive oil in a large pot over medium-high heat until it begins to smoke. Season the beef with salt and pepper, then gently place into the hot oil, and brown on all sides, about 8 minutes. Once browned, remove the beef and set aside, reserving the remaining oil in the pot. Stir in the celery, carrot, onion, garlic, cilantro, and oregano; cook and stir until the onion has softened and turned translucent, about 8 minutes more.
- Pour in the chicken broth, tomatoes, and browned beef. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the meat is beginning to turn tender, about 1 hour.
- After the soup has simmered 1 hour, add the lentils, recover, and continue simmering until the lentils are tender, about 40 minutes. Season to taste with salt and pepper, then stir in the parsley. Sprinkle with Parmesan cheese to serve.

HEALTHY VEAL SHIN SOUP
This soup may include dough balls if desired, but is healthier without them. It would probably taste great with cornmeal dumplings and be healthier when made with those. A recipe for dough balls is included here.

Steps:
- Put veal shin in water and cook atop stove until meat is very soft.
- Cool and then remove meat from bone and chop it into bite-sized pieces and set aside.
- Strain broth.
- Add salt and pepper to taste.
- Add celery, potatoes, carrots, and onions.
- Cook on medium heat for about 15 minutes.
- Prepare dough balls by sifting dry ingredients together and then cutting margarine into sifted dry ingredients.
- Add just enough water to make a stiff dough.
- Work dough with floured hands and form into pea-sized balls.
- Add balls to boiling soup broth and cook about 25 minutes longer.
- Add meat, stir, and serve.

- Slow Cooker: Add chicken, onion, garlic, carrots, celery, potatoes, mushrooms, wild rice, water, thyme, salt, and pepper into a large slow cooker. Then just cover and cook on High for 5-6 hours or Low for 8-10 hours.
- Remove chicken from slow cooker and shred using 2 forks. To the slow cooker, add milk, mustard and garlic powder. Use an immersion blender to puree the soup to desired thickness. Add the shredded chicken and parsley. Stir and serve hot.
- Stovetop: Add avocado oil to a large heavy bottom pot or Dutch oven. Add onion, garlic, carrots, celery and fresh mushrooms (if using), and saute for 5 minutes. Add chicken, potatoes, wild mushrooms (if not using fresh), wild rice, water, thyme, salt, and pepper. Bring to a boil, cover and then for 45 minutes on low heat.
- Once cooked, remove the chicken and shred using 2 forks. Add milk, mustard and garlic powder; to the pot. With an immersion blender, blend the soup to desired texture. Return shredded chicken to the pot and stir. Garnish with parsley and serve hot.
