This is a classic pound cake with coconut flavor-simple to make and even easier to love.

For the cake:
2 cups granulated sugar
2 cups (4 sticks) unsalted butter, plus more for greasing pan, at room temperature
8 large eggs, at room temperature
3.25 cups cake flour
1 teaspoons kosher salt
1.25 cups unsweetened shredded coconut, divided
For the glaze and topping (optional):
1.5 cups powdered sugar
2 to 3 tablespoons whole milk, as needed
0.25 cup unsweetened shredded coconut

Steps:

  • Preheat oven to 325°F. Beat together granulated sugar and butter with an electric mixer on medium-high speed until very fluffy and pale, about 8 minutes. Reduce speed to medium-low and beat in eggs, 1 at a time, until combined, stopping to scrape down sides of the bowl as needed. (Mixture will look broken, but will come together when flour is added.) Reduce speed to low and gradually add flour and salt until just combined. Fold in 1 cup shredded coconut.
  • Generously grease a 12-cup Bundt pan with butter; coat inside of pan with ¼ cup shredded coconut, tapping out excess. Pour batter into pan and smooth the top. Bake until golden and a toothpick inserted in center comes out clean, 50 to 55 minutes. Cool in pan 15 minutes. Invert onto a wire rack and cool completely, about 1 hour.
  • For the glaze: Whisk together powdered sugar and 2 tablespoons of the milk in a small bowl until smooth. If needed, whisk in remaining 1 tablespoon milk, 1 teaspoon at a time, to create a pourable glaze consistency. Pour over cooled cake. Top with ¼ cup shredded coconut.

½ cup Vegetable shortening
3 cups Sugar
6 Eggs (room temperature)
½ tsp Almond flavoring
1 tsp Coconut flavoring (extract or imitation)
3 cups All purpose flour
1 cup Milk (room temperature)
7 ounces Flaked coconut (I used 5 ounces unsweet coconut and 2 ounces sweet coconut.)
1½ cups Sugar
¾ cup Boiling water
3 tsp Coconut flavoring (extract or imitation)
¼ cup Corn starch (optional)

Steps:

  • Cream butter, shortening and sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition.
  • Add almond and coconut flavorings.
  • Alternately add flour and milk, beating after each addition.
  • Stir in coconut.
  • Spoon Batter into well greased tube or bundt pan.
  • Bake at 350° for 1¼ hours.
  • Let cake cool for 10 minutes in pan and release.
  • Spoon glaze on cake.
  • Mix sugar, boiling water and coconut flavoring.
  • Bring to a boil for 1 minute.
  • Remove from heat.
  • If you'd like to thicken, add corn starch. I added ¼ cup for some slight thickening.
  • Spoon over cake.

Coconut oil and coconut milk add a tasty tropical essence to this moist pound cake. Be sure to buy unrefined virgin coconut oil, as it has the best coconut flavor and aroma. Coconut oil is much easier to measure and incorporate when it has been softened than at room temperature, when it is firmer. Try popping it into the microwave for very short bursts, about 5 seconds each, until it is roughly the same consistency as softened butter.

6 tablespoons/85 grams unsalted butter (3/4 stick), at room temperature, plus more for greasing the pan
2 cups/256 grams all-purpose flour, plus more for dusting the pan
2 teaspoons baking powder
1/2 teaspoon kosher salt
1 cup/200 grams granulated sugar
6 tablespoons/85 grams softened coconut oil
3 large eggs, at room temperature
1 cup/240 milliliters canned coconut milk
1 packed cup/85 grams plus 2 tablespoons sweetened shredded coconut, toasted (see Note)

Steps:

  • Heat oven to 350 degrees. Butter and flour an 8 1/2-by-4 1/2-inch loaf pan, making sure to shake out any excess flour.
  • In a medium bowl, whisk the 2 cups flour with the baking powder and salt.
  • In a large bowl and using an electric mixer on medium-high, beat together the butter and sugar until fluffy, about 2 minutes. With the machine running, beat in the coconut oil, scraping down the bowl often, until combined. Beat in eggs one at a time, beating to blend between additions.
  • Add half the dry ingredients and mix until just combined. Add the coconut milk and beat to combine. Add the remaining dry ingredients and 1 cup of the toasted shredded coconut, and beat just until combined. Do not overmix.
  • Transfer the batter to the prepared pan and smooth the top. Sprinkle the remaining 2 tablespoons shredded coconut evenly over the top.
  • Bake until puffed and golden and a toothpick inserted into the center comes out clean, about 60 to 70 minutes.
  • Transfer to rack to cool for 20 minutes, then tip the loaf out onto the rack to cool completely. Store leftovers well wrapped at room temperature for up to 3 days, or in the freezer for up to a month.

FOR POUND CAKE
2/3 c Crisco
2 stick butter or maragine
3 c white sugar
3 c all-purpose flour
5 large eggs
1 c milk, whole
1/2 tsp baking powder
1-1 1/2 c coconut, shredded
2 tsp coconut extract
GLAZE
1 1/2 c powdered sugar
2 Tbsp whole milk
1/2 tsp coconut extract

Steps:

  • 1. Cream butter, Crisco, and sugar.
  • 2. Add eggs one at a time, beating well after each.
  • 3. Add coconut flavoring.
  • 4. Sift flour and add baking powder.
  • 5. Alternate adding flour and milk to sugar mixture.
  • 6. Add coconut.
  • 7. Spray tube pan with Crisco non-stick spray with flour. Bake at 350 for 1 hr to 1 hr 15 minutes.
  • 8. Cool in pan for 10 minutes turn on a cooling rack.
  • 9. Note: You can make a glaze of powdered sugar, milk and a small amount of coconut flavoring. Also, if you want to add toasted coconut, put shredded coconut on a baking sheet and toast in the oven for about 5 minutes.

  • Preheat the oven to 325°F. Arrange an oven rack in the center of the oven. Thoroughly grease and lightly flour an 8 or 10-cup bundt pan. Beat the butter and sugars together, on medium speed, until fluffy crumbs form. Add the eggs, vanilla, and coconut extract, beat again until smooth. Add the milk, beat on low speed to combine. Add the flour, baking powder, and salt. Beat again, just until combined. Stir in the coconut.
  • Pour the batter into the prepared pan. Bake for 60-65 minutes, until golden on top and light brown on the edges. Cool in the pan on a wire rack for 15 minutes. After 15 minutes, place the cooling rack on top of the cake, hold the sides firmly and invert the pan over the rack. The cake should drop smoothly out of the pan. Tap firmly on the pan with a wooden spoon, if necessary to free the cake from the pan. Let the cake cool completely before glazing.
  • To make the glaze, melt the butter in a small glass bowl. Add the powdered sugar, milk, and coconut extract. Whisk together until smooth. The glaze should pour off the spoon in a white stream. Add a teaspoon more milk to thin it, or 1-2 tablespoons more powdered sugar to thicken it, if necessary. Drizzle the glaze over the cake. Sprinkle generously with coconut. Store at room temperature, loosely covered, preferably not airtight. This cake will keep nicely and stay very moist for 3-4 days. Enjoy!
