EGG AND HERB SALAD



Egg and Herb Salad image

This is not like the egg salad you get at the local deli (hard-cooked eggs, lots of mayonnaise, celery). It is creamy, but the dressing is yogurt-based, and the salad is packed with lots of vivid, fresh herbs.

8 large eggs, hard-boiled (see below) and finely chopped
1 cup finely chopped fresh herbs, such as parsley, dill, tarragon, chervil or chives
2 celery stalks, finely chopped
1 small red onion, finely chopped, soaked for five minutes in cold water, drained and rinsed
Salt
freshly ground pepper to taste
1 tablespoon white wine vinegar or sherry vinegar
2 tablespoons freshly squeezed lemon juice
1/3 cup plain low-fat yogurt or buttermilk
1 tablespoon Hellmann's or Best Foods mayonnaise
1 garlic clove, green shoot removed, minced
1 teaspoon Dijon mustard
2 tablespoons extra virgin olive oil
1 6-ounce bag baby arugula

Steps:

  • To hard-boil the eggs, place in a saucepan, cover with cold water and bring to a boil. Cover the pan tightly, and turn off the heat. Let sit for 12 minutes. Fill a bowl with ice water, drain the eggs and chill immediately in the ice water.
  • Combine the chopped eggs, herbs, celery and red onion in a large bowl, and season to taste with salt and pepper.
  • Whisk together the vinegar, lemon juice, yogurt, mayonnaise, mustard and olive oil. Season to taste with salt and pepper. Toss with the egg mixture.
  • Line plates or a platter with arugula, top with the egg salad and serve.

Avocado Salad With Herbs and Capers image

This salad is both dead simple to make and highly luscious. It gets a velvety richness from the avocados. The salad is enlivened by a splash of red wine vinegar in the dressing and a handful of briny capers sprinkled on top. The herbs here are used in two ways, both chopped into a garlicky salsa verde-like dressing, and strewn in whole leaves across the plate. Choose your avocados carefully for this; look for firm but not rock-hard fruit, without any mushy spots. If you'd like to substitute another variety of avocado for the Haas you can, but the salad may not have the same texture. Then serve it either as a side dish or an appetizer with a meal of roasted or grilled meats, chicken or fish. Or make it the foundation of a light lunch, with some crusty bread and tangy cheese on the side.

1 large bunch cilantro
1 large bunch parsley
2 scallions, very finely chopped
1 jalapeño, seeded and very finely chopped
1 to 2 garlic cloves, finely grated or minced
1/2 teaspoon fine sea salt, more to taste
2 tablespoons red wine vinegar, more to taste
1/2 cup extra-virgin olive oil, more for serving
4 Haas avocados, peeled, pitted and sliced
4 teaspoons capers, drained
Flaky sea salt and black pepper

Steps:

  • Reserve a cup of whole cilantro leaves; finely chop the rest of the leaves and tender stems. Transfer chopped leaves to a medium bowl.
  • Reserve a cup of whole parsley leaves; finely chop the rest of the leaves and tender stems. Transfer chopped parsley to the bowl with the cilantro. Add scallions, jalapeño, garlic, fine salt and vinegar. Stir in oil. Taste and add more salt, vinegar or both, if needed.
  • Scatter the whole cilantro and parsley leaves over 4 serving plates. Fan the avocados out on top, and sprinkle lightly with fine salt to taste. Spoon the herb dressing over the avocado, making sure to include the oil in the bowl, and top with capers. Sprinkle with flaky sea salt and black pepper and serve.

1 cup chopped mixed herbs such as; tarragon, basil, parsley
1/2 cup artichoke pesto or tapenade
1/4 cup crumbled feta cheese
2 tablespoons chopped almonds

Steps:

  • Arrange lettuce leaves on a plate. Create "nests" on top of the lettuce leaves using chopped herbs. Spoon a tablespoon of artichoke pesto into the nests. Sprinkle with crumbled feta and chopped almonds and serve.

DANISH BURGERS WITH HERB CAPER SAUCE AND A MOD SALAD



Danish Burgers with Herb Caper Sauce and a Mod Salad image

2 pounds ground chicken
1 tablespoon poultry seasoning (a palmful)
2 shallots, finely chopped
2 tablespoons Dijon mustard
5 button mushrooms, stems discarded, finely chopped
1/4 pound Havarti with dill cheese, cut into 1/4-inch dice
Salt and freshly ground black pepper
Extra-virgin olive oil (EVOO), for drizzling, plus a couple tablespoons for the salad
1/2 cup mayonnaise or sour cream
2 to 3 tablespoons fresh dill, chopped or snipped with kitchen scissors
2 tablespoons capers, drained, then run your knife through them once
1 English (seedless) cucumber (the one wrapped in plastic), cut in half lengthwise, then sliced into half-moons
1 small red onion, sliced
3 plum tomatoes, seeded and thinly sliced
1-pound sack of washed baby spinach
2 to 3 tablespoons white wine vinegar
4 crusty poppyseed rolls
2 large radishes, thinly sliced
1 sack of gourmet potato chips, such as Terra Chips Onion and Herb Yukon Gold, or Blue Potato Chips

Steps:

  • In a bowl, thoroughly combine the ground chicken, poultry seasoning, shallots, Dijon mustard, mushrooms, Havarti, salt, and pepper. Score the meat with your hand into 4 equal portions. Form each portion into a large 1-inch-thick patty.
  • Preheat a nonstick skillet over medium-high heat. Drizzle EVOO over the patties and place them in the hot skillet. Cook for 6 minutes per side until the patties are firm to the touch and cooked through.
  • While the burgers are cooking prepare the herb caper sauce and mod salad. In a small bowl combine the mayonnaise or sour cream, dill, and capers. Set aside. In a salad bowl combine the cucumbers, red onion, plum tomatoes, and three quarters of the baby spinach. Dress the salad with white wine vinegar, salt, and pepper, then drizzle with a couple tablespoons of EVOO to coat the salad lightly and evenly. Toss to combine and adjust the salt and pepper to your taste.
  • Split the rolls. Place the burgers on the bun bottoms. Top with sliced radishes, the remaining baby spinach, and a heaping spoonful of the herb-caper dressing slathered across the bun tops. Add the remaining sauce to the salad and toss for a creamy finish. Fancy chips finish the plate.
  • The colder the semisoft Havarti with dill cheese is, the easier it will be to dice. Pop the cheese in the freezer while you prep everything else. Because of the fat content of the cheese, just 10 minutes in a deep freeze makes the dicing a real breeze!
