SWISS STEAK
An old family favorite salvaged from our 30-plus-year-old cookbook. We like this served over egg noodles. I like to increase the tomatoes to a 15 ½-ounce can, and I use a full green pepper and add a teaspoon of paprika.

Steps:
- Mix flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle half the flour mixture on one side of round steak pieces; pound steak until coating is absorbed. Flip steak and coat with remaining flour mixture; pound steak until coating is absorbed. Cut steak into 6 pieces.
- Melt shortening in a large skillet over medium heat; place steak pieces in the hot shortening. Cook until browned, 7 to 10 minutes per side. Cover and simmer until tender, about 1 hour, adding water as needed.
- Turn steak pieces over and add tomatoes, onion, and green bell pepper to the skillet. Season with salt and black pepper. Simmer until vegetables are tender, about 30 more minutes.

SWISS STEAK
For dinner tonight, try Alton Brown's Swiss Steak cutlets from Good Eats on Food Network, cooked in bacon drippings and smothered in an oniony beef gravy.

- Preheat the oven to 325 degrees F.
- Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
- Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
- Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.
CLASSIC SWISS STEAK

- In a large skillet, saute carrots in 1 tablespoon oil until crisp-tender; remove and set aside. Cut meat into four pieces. Add meat and remaining oil to skillet; cook over medium-high heat until browned on both sides. Add tomatoes, tomato sauce, sugar and oregano; cover and simmer for 1 hour. , Add the onion, celery, mushrooms and carrots; cover and simmer for 45 minutes or until the meat and vegetables are tender. Thicken if desired. Serve with noodles.

- In a large nonstick skillet, brown cube steaks on both sides in oil over medium-high heat; remove and set aside. In the same skillet, saute the onion, celery and garlic for 3-4 minutes or until tender. Add the tomatoes, tomato sauce and bouillon. Return steaks to the pan. Bring to a boil. Reduce heat; cover and simmer for 1-1/4 to 1-3/4 hours or until meat is tender. , Combine cornstarch and water until smooth; stir into tomato mixture. Bring to a boil; cook and stir for 2 minutes or until thickened.

HERB SWISS STEAK
A different taste to the ordinary Swiss Steak. A little more time is put into this crockpot dish but it is well worth it.

Steps:
- Cut meat into six serving pieces and trim off fat.
- Rub each piece of steak with dry mustard and then dip into flor.
- With a meat mallet, pound each steak until as much flour sticks to it as possible.
- Reserve leftover flour.
- Next, brown bacon until crisp.
- Set on a plate covered with a paper towel to soak up excess fat.
- Add 3 Tablespoon of the oil to bacon drippings in skillet.
- Brown meat.
- While meat is browning, mix together salt, rosemary and thyme.
- Sprinkle each piece of meat with spices and place in crockpot.
- In same skillet, brown onions and place on top of steak in crock ot.
- Now, add reserved flour to skillet with drippings.
- Stir in water, tomato juice and garlic.
- Bring mixture to a boil but don't forget to stir frequently.
- After mixture begins to boil, pour it over the steak and onions in crockpot.
- Cook on High fro 3 1/2 to 4 hours or on Low 7 to 8 hours.
- Check meat for tenderness.

SAVORY SWISS STEAK
Have you ever had cube steak (or round steak) sitting in your freezer and had absolutely no idea how you were going to prepare it differently than usual? This was my dilemma until I came across this recipe by Marilyn Moll of Urban Homemaker in a cookbook my friend Shannon kindly printed off for me. Marilyn describes it best: "Vegetables thicken the sauce-like gravy which smothers fork-tender steak." It is important to peel and grate your carrots and finely chop your onion and celery for the gravy to form properly. I also tend to double the amount of flour/mustard mixture that I dredge my round or cube steaks in to be sure that they are well coated. I serve this with cheddar and roasted garlic mashed potatoes.

- Cut round steak or cube steak into 6 or more serving size pieces.
- Salt and pepper steak pieces.
- Combine flour and dried mustard; then coat steak pieces with flour mixture.
- Using a large frying pan, brown the meat in 1 tablespoon of oil and 1 tablespoon of butter.
- Transfer to a crock pot.
- Heat remaining oil and butter in the same frying pan.
- Add onion, carrots, and celery. Saute until vegetables are glazed.
- Add tomatoes, Worcestershire, and sugar. Heat, scraping up drippings from bottom of pan.
- Pour vegetable mixture over the meat in the crock pot.
- Cover and cook on low for 6-8 hours, or until tender.
- Serve meat with vegetable sauce over top. Sprinkle with chopped parsley as garnish, if desired.
- Note: I won't claim that this is the most beautiful looking dish in the world but even the kids loved it once they got past their initial wrinkled nose inspections. It sure does smell good while cooking though.

HEARTY SWISS STEAK
I've been using this recipe since I was married in 1952. My husband let me know early on in our marriage that this dish was one of his favorites, so I still make it often. I think most men like it because of the hearty portions of meat and noodles.

- Thinly slice steak across the grain into strips. Lightly coat with flour. In a large skillet, brown steak, half at a time, in butter. Add all meat to skillet. Add tomato sauce, lemon juice, soy sauce and Worcestershire; mix well. Add the onion and green pepper. Cover and simmer for 45 minutes or until the meat is tender, stirring occasionally. Serve over noodles.
