BOILED BABY POTATOES WITH GARLIC AND HERB BUTTER
These Boiled Baby Potatoes with Garlic and Herb Butter are creamy and tender and make a perfect, quick side dish to any meal.

Steps:
- Scrub potatoes clean with a vegetable scrubber. Cut any larger potatoes in half or quarters so that all of the potatoes are uniform in size (leave as many In tact as possible. Place in a large pot, cover with water and bring to a boil. Add 2 teaspoons of salt to the water. Turn heat down to medium and simmer potatoes until fork-tender; about 10 minutes. Turn off heat, drain the water and return potatoes to the pot.
- Stir in butter, garlic, parsley, chives, salt and pepper until potatoes are well coated. Feel free to add black pepper as desired.
- Cover and let sit for 10 minutes, then serve. Season with more salt and pepper if desired.

ROASTED BABY POTATOES WITH HERBS

Steps:
- Preheat the oven to 400 degrees F.
- Put the potatoes into a large bowl. In a small bowl, whisk the herbs, garlic, and oil together until blended, and then pour over the potatoes. Sprinkle generously with salt and pepper and toss to coat. Transfer the potatoes to a heavy large baking dish, spacing them evenly apart.
- Roast the potatoes until they are tender and golden, turning them occasionally with tongs, about 1 hour. Transfer the roasted potatoes to a decorative platter and drizzle with extra-virgin olive oil and herbes de Provence, if desired. Serve hot or warm.
BABY POTATOES WITH BUTTER & FRESH HERBS
This is a wonderful, elegant potato side dish that's not too rich so it's ideal to serve with rich mains like roasts, and light enough to serve with more delicate foods such as seafood (fish, prawns/shrimp, lobster, crab, mixed seafood platter!).It's a classic side dish you will see offered at fine dining restaurants as a less heavy potato side compared to things like Paris Mash (the world's richest mashed potatoes!).

- Boil potatoes: Place potatoes in a large pot of cold tap water with 1 tbsp salt. Bring to a boil over high heat, then lower heat to medium so they're simmering gently (this stops skin splitting). Cook for 10 - 15 minutes until there's no resistance when pierced with a knife. Alternatively, steam the potatoes.
- Steam dry: Drain in colander then leave for a minute to let the potatoes steam dry (if wet, butter won't stick).
- Toss with butter: Transfer to a bowl, add salt, pepper and butter. Toss to melt and coat.
- Add herbs just before serving. Stir through, transfer to serving bowl and serve warm!

- To begin making the Herbed Baby Potatoes Recipe, first wash and clean the potatoes. Cook the potatoes (leave the skin on) in boiling, salted water till just cooked; the potatoes should be cooked but not mushy (if your potatoes are on the larger side, cut in half).
- Finely chop together the olives, capers and green chilies till it becomes like a coarse paste. Separately chop the mint and coriander leaves and set aside.
- In a large pan or wok, heat the butter and oil, then add the potatoes and fry for a few minutes so the baby potatoes get a slightly crispy crust.
- Then add the chopped olives, chilies and capers, fry for a minute or two, check for seasoning and add salt if required to the herbed baby potatoes. Take the Herbed Baby Potato off the heat and add the chopped herb leaves.

BABY HERB POTATOES
My first posted recipe! I combined several recipes to create these; I was itching to make use of my herb garden but wanted to use baby potatoes. This fed six people, but as two of them were children you may want to increase the amount of potatoes. Also, this calls for 4 tbs of olive oil, but make sure you use enough to coat all the potatoes. I recommend pairing these with hamburgers and a salad.

- Cover the potatoes in water and boil until tender, about 20 minutes.
- While the potatoes are boiling add the olive oil, garlic and herbs to a large sauce pan and put on a low heat.
- When potatoes are tender, drain and dry them. Rinse with cool water and then halve the potatoes.
- Add the potatoes to the oil mixture and raise the temperature to a medium heat.
- Cook the potatoes until the begin to brown (about 10 minutes). Be careful not to let the potatoes stick to your pan.
- Remove from heat and transfer potatoes into serving bowl and season with salt and pepper.

HERBED NEW POTATOES

- Melt the butter in a Dutch oven or large heavy-bottomed pot. Add the whole potatoes, salt, and pepper and toss well. Cover the pot tightly and cook over low heat for 20 to 30 minutes, until the potatoes are just tender when tested with a small knife. From time to time, shake the pot without removing the lid to prevent the bottom potatoes from burning. Turn off the heat and allow the potatoes to steam for another 5 minutes. Don't overcook! Toss with the herbs, and serve hot.

Is this a recipe -- or just an idea?? I hesitated for ages before posting, as it's so simple and obvious that many of you probably make this without thinking, and certainly without a recipe! But it's delicious!

- *Please note that quantities are approximate. But a lot of fresh herbs is nice, and tougher herbs like rosemary should be chopped finely.
- Do not use very small baby potatoes: slightly smaller than a golf ball is about right.
- Rinse; do not peel. Cut each in half.
- Boil in lightly salted water until just tender -- this should not take more than 4 to 6 minutes depending on size and type of potato, but do test one with a skewer. They should still be firm and not fall apart!
- Rinse and chop the herbs, which must be fresh, not dried.
- Drain potatoes, put into suitable dish, add the olive oil and toss until well coated. A high quality, nice and fruity virgin oil should be used. Use more if you like.
- Add the chopped herbs and pepper, and toss again, until mixed through. Take care not to break the halved potatoes.
- Best salted at table, with flakes of Maldon salt. This is not always easy to obtain, so just use -- salt!
- These potatoes are quite nice when cold, too.

- Heat oven to 200C/180C fan/gas 6. Rinse and dry the unpeeled new potatoes. Put 2-3 tbsp duck fat or olive oil in a roasting tin and put in oven for 10 mins to melt. Strip leaves from rosemary, oregano and sage and stir into tin with seasoning.
- Add potatoes and toss well. Roast for 40-50 mins, shaking tin a couple of times, until potatoes are crisp and tender. Sprinkle with sea salt and serve.
