6 boneless skinless chicken breast halves (4 ounces each)
1 tablespoon salt-free herb seasoning blend
2 tablespoons olive oil, divided
2/3 cup chopped green onions
1/2 cup dried cranberries
1/2 cup reduced-sodium chicken broth
1/3 cup cranberry juice
4-1/2 teaspoons maple syrup
1 tablespoon balsamic vinegar
1/3 cup chopped pecans, toasted

Steps:

  • Rub chicken with seasoning blend. In a large nonstick skillet, cook chicken in 1 tablespoon oil over medium heat for 4-5 minutes on each side or until a thermometer reaches 170°. Remove and keep warm., In the same skillet, saute onions in remaining oil. Stir in the cranberries, broth, cranberry juice, syrup and vinegar; bring to a boil. Reduce heat; cook and stir for 2 minutes. Return chicken to the pan; cook for 1 minute or until heated through. Sprinkle with pecans.

6 skinless, boneless chicken breasts
1 ½ (1 ounce) packages dry onion soup mix
1 (16 ounce) can jellied cranberry sauce
1 cup French dressing

Steps:

  • Place the chicken breasts in a glass or non-reactive baking dish.
  • Stir the onion soup mix, cranberry sauce, and French dressing together in a bowl until well blended. Pour over the chicken breasts. Cover the baking dish with plastic wrap, and refrigerate at least 8 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove plastic wrap from the baking dish, and cover loosely with aluminum foil.
  • Bake chicken in preheated oven until top is bubbly and slightly browned, about 1 hour and 15 minutes.

1 broiler/fryer chicken (3 to 4 pounds), cut up
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter
1/2 cup diced onion
1/2 cup diced celery
1 can (14 ounces) whole-berry cranberry sauce
1 cup bottled barbecue sauce

Steps:

  • Sprinkle chicken with salt and pepper; brown in a skillet in butter. Remove the chicken to a greased 13-in. x 9-in. baking pan. In the drippings, saute onion and celery until tender. Add cranberry sauce and barbecue sauce; mix well. Pour over chicken. Bake, uncovered, at 350° for 1-1/2 hours, basting every 15 minutes.

3 tbls butter
1/4 cup chopped shallots or green onions
1 bay leaf
1/4 cup dry red wine
2/3 cup whole-berry canned cranberry sauce
1/2 cup low-salt chicken broth
1 tbls balsamic or red wine vinegar

Steps:

  • Season chicken with salt and pepper Melt the butter in a frying pan, add the chicken and cook until cooked through and brown on both sides. Transfer chicken to a plate. Add onions to the skillet and sauté for 1 minute. Add wine and bring to a boil, scraping up any pieces on the pan. Boil until the mixture reduces to a thick glaze, about 4 minutes. Add cranberry sauce, broth and vinegar and cook until sauce thickens slightly, about 3 minutes. Return chicken and any juices to the skillet. Simmer until heated through. About 1 minute. Season with salt and pepper. Serve over rice.

  • Preheat an outdoor grill for high heat and lightly oil grate.
  • In a small bowl, whisk together garlic, dried tarragon, salt, ground black pepper and olive oil.
  • Place each chicken breast half on a piece of foil large enough to cover the chicken. Brush chicken with the garlic mixture.
  • Tightly seal chicken in the foil. Cook on the prepared grill approximately 40 minutes.

  • Combine the thyme, pepper, salt, and minced garlic together. Toss your chicken thighs in this mixture.
  • Preheat your oven to 400 degrees Fahrenheit. In a large skillet, heat the butter over medium-high heat. Once melted and very hot, carefully place the chicken thighs in the pan, one at a time, skin side down. After adding each thigh, wait 10 seconds or so before adding the next thigh - this will make sure the butter stays hot enough to sear the thighs. In order to get super crispy skin, it’s very important to not move the thighs around after you place them in the pan.
  • Allow the thighs to sear skin side down for 7-10 minutes (you can reduce the heat down to medium if the butter starts to burn). Carefully attempt to flip one of the thighs over using a pair of tongs. If the chicken flips over easily, the skin is crispy enough and you can flip them over. If the skin is sticking to the pan, wait an additional minute and try again. Repeat with the remaining thighs until they are all skin side up.
  • Scatter the chopped garlic and half of the chopped rosemary all over the chicken in the pan. Continue searing on the other side for an additional 2-3 minutes. Sprinkle the cranberries around the chicken. Combine the chicken broth, coconut aminos, balsamic vinegar, honey and lemon juice and pour the mixture into the pan around the thighs. Top the chicken with the remaining chopped rosemary and place the rosemary sprigs in the pan.
