6 slices light bread
1 cup fat-free chicken or vegetable broth (plus more if needed)
1 cup chopped celery
1 cup chopped onion
1 cup chopped mushrooms
2 tsp. minced garlic
1 tbsp. light whipped butter or light buttery spread
1/4 cup fat-free liquid egg substitute
Optional seasonings: salt, black pepper, rosemary, thyme

Steps:

  • Preheat oven to 350 degrees. Spray an 8-inch by 8-inch baking pan with nonstick spray.
  • Lightly toast bread slices. Cut them into cubes.
  • Place broth, celery, and onion in a large nonstick pot, and set heat to medium. Cook and stir for 10 minutes, until slightly softened.
  • Remove pot from heat and stir in mushrooms, garlic, and butter. Let broth mixture slightly cool.
  • Stir in egg substitute. Add bread cubes and stir to coat. Bread cubes should be moist, but not saturated. If needed, add a few extra tbsp. of broth to coat.
  • Transfer mixture to the baking pan. Cover with foil and bake for 20 minutes.
  • Remove foil. Fluff and rearrange stuffing. Bake uncovered until top has lightly browned, 10 to 15 minutes. Enjoy!

6 slices light bread (40 - 45 calories each with around 2g fiber per slice)
1 cup onion, chopped
1 cup celery, chopped
1 cup mushroom, chopped
1 cup fat-free chicken broth (at room temperature) or 1 cup vegetable broth (at room temperature)
1/4 cup liquid egg substitute (like Egg Beaters Original)
1 tablespoon light butter (or light buttery spread, like Brummel & Brown)
2 garlic cloves, finely chopped
1 dash salt, to taste
1 dash pepper, to taste
1 dash rosemary, to taste
1 dash thyme, to taste

Steps:

  • For best results, leave bread uncovered at room temperature for a night or two, until slightly stale. Otherwise, begin by lightly toasting bread.
  • Preheat oven to 350 degrees.
  • Cut bread into 1/2-inch cubes. Spray a medium baking dish with nonstick spray, and place bread cubes evenly along the bottom of the dish.
  • In a medium pot, combine broth, celery, and onion. Cook for 8 minutes over medium heat.
  • Remove pot from heat, and add mushrooms and garlic. Season mixture to taste with salt, pepper, rosemary and thyme. Let cool for several minutes.
  • Add egg substitute and butter to veggie/broth mixture and stir. Pour mixture into the baking pan, evenly covering bread cubes. Mix gently with a fork. Bread cubes should be moist, but not saturated (if necessary, add 1 - 2 tablespoons water, and then mix again).
  • Cover with foil, and cook dish in the oven for 20 minutes.
  • Remove foil, and fluff and rearrange stuffing. Return dish to oven (uncovered), and cook for an additional 15 minutes.

It's all those crazy canned fried onions that are crammed into and piled on top of the thing. One little can of those crispy catastrophes has roughly 900 calories and 70 grams of fat! Eeeks! The good news is, with just a few easy swaps, you can make your own version of this holiday fave, for a fraction of the fat and calories. 2 (12 ounce) bags frozen French-cut green beans
1 (10 ounce) can l campbell's 98% fat free cream of celery soup
1/2 cup silk light soymilk
1 (8 ounce) can water chestnuts, sliced
1 (8 ounce) bag Crispy Delites red onion chips, crushed

Steps:

  • Defrost and thoroughly drain green beans. Draining these is sooo important. Make sure they are dry. Use a towel if you need to! Place half of the dried green beans in a casserole dish (2-3 quart rectangular works best). Mix soup with the soy milk. Spread 1/2 of the soup mixture on top. Lay some sliced water chestnuts on top. Top with remaining green beans, cover again with the rest of the soup mixture and another layer of water chestnuts. Bake in preheated 325 degree oven for 45 minutes. Finally, add crushed onions on top and cook for another 10-15 minutes or so.

I recently purchased the new Hungry Girl Cookbook and this is one of the first recipes that I am going to try. Here is what the book says: "Not to sound like a cheesy commercial, but this soup is so thick, it "eats like a meal." It's almost too easy to prepare a super-sized batch, and it tastes even better the next day! (HG Tip: Freeze leftovers in individual servings for microwavable, super-filling, guilt-free snacks)." UPDATE NOTE 9/7/2008: I made this recipe today for dinner but I made just a couple changes: 1) I used 16 ounces Perdue Ground Chicken (hubby wanted more meat!) and 2) I cooked it all in my crockpot on Low for about 8 hours. Hubby and I had it for dinner and it was awesome! I posted a picture also. The change to the ground chicken changed the points value to 4 points per generous 1 cup serving. I hope you all enjoy as much as we did!

2 (15 ounce) cans pinto beans, rinsed & drained
1 (15 ounce) can black beans, rinsed & drained
3 (14 1/2 ounce) cans no-salt-added diced tomatoes
1 (14 1/2 ounce) can Italian-style diced tomatoes
1 (1 1/4 ounce) envelope taco seasoning mix
1 (1 1/4 ounce) envelope ranch dressing mix
1/4 cup onion, minced
salt, to taste
black pepper, to taste

Steps:

  • Pour the tomatoes and corn into a large pot. Add remaining ingredients and stir thoroughly. Bring to a boil.
  • Reduce heat to low and let simmer for 15 minutes.
  • Remove from heat and allow soup to sit for at least 5 minutes. Add salt and pepper to taste.

1 large onion, chopped
2 leeks, cleaned, chopped
2 carrots, chopped
1 (8 ounce) package white mushrooms, sliced
1/4 lb shiitake mushroom, stems removed, caps sliced
3 garlic cloves, minced
2 tablespoons sage, chopped, fresh (or 2 tsp dried)
1/4 teaspoon salt
1/4 teaspoon black pepper
6 cups fat-free seasoned croutons
1 (14 1/2 ounce) can reduced-sodium chicken broth

Steps:

  • Melt the butter in a large nonstick skillet over medium-high heat. Add the onion, leeks and carrots; cook, stirring occasionally, until the carrots are crisp-tender, 4-5 minutes. Add the mushrooms and cook, stirring occasionally, until softened, 3-4 minutes. Add the garlic, sage, salt and pepper; cook, stirring occasionally, until the vegetables are golden, 6-7 minutes.
  • Transfer to a bowl. Add the croutons and broth, stirring just until the stuffing is evenly moistened. Let cool completely. Use to stuff the Stuffed Roast Turkey (recipe posted separately).

3 cups cauliflower florets
3 tablespoons fat-free half-and-half
1 tablespoon light butter, whipped (or light buttery spread)
1/4 teaspoon salt (with additional salt and pepper to taste)
1/2 teaspoon garlic, crushed (optional)

Steps:

  • Bring a large pot of water to a boil. While waiting for the water to boil, peel and cube the potato.
  • Once water is boiling, add peeled potato cubes and cauliflower. Wait for the water to return to a boil, and then reduce heat to medium. Cook for 15 - 20 minutes (until potatoes and cauliflower are very tender).
  • Remove the pot from heat and strain out all of the water. Transfer contents to a large bowl, and add half & half, butter/buttery spread, salt, and (if you like) crushed garlic. Mash it all together with a potato masher, until completely blended. Season to taste with pepper and additional salt. Enjoy!
