Hidden veggies Beef burgers are a kids meal made healthier. Serve with more veggies and veggie fries to make this an even healthier kids meal

Number Of Ingredients 7

500g (1.1lb) Steak / Beef mince (ground beef)
1 small onion (grated)
1 carrot
1 zucchini (courgette)
1 garlic clove (minced)
1 tbsp Worcestershire sauce
1 egg (lightly beaten)

Steps:

  • Grate the onion, carrot and zucchini and squeeze as much liquid out as possible (I placed the grated vegetables in a clean cloth to squeeze)
  • Place all the ingredients into a large mixing bowl and mix until just combined.
  • Divide the mixture into 6 and flatten to make burgers slightly bigger than your burger buns. (As they will shrink slightly when you cook)
  • Place an indent in the centre of each burger using your thumb. (This stops the burger from doming and shrinking)
  • Cook on a BBQ or place in a frying pan. Cook for 3/4 mins on one side (until the bottom is nicely browned. Flip and cook for a further 2/3 mins until cooked through.Serve straight away

2 lb ground beef
1 tablespoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
2 carrots, shredded
2 heads broccoli, shredded
12 slices cheddar cheese
12 burger buns

Steps:

  • In a large bowl, season the beef with salt, pepper, garlic powder, and onion powder.
  • Shred the carrots and broccoli using a box grater and add to the bowl with the beef.
  • Mix well with a spoon or your hands and form into patties.
  • Either pan-fry or grill until cooked. Top with cheese and let it melt.
  • Assemble burger with your favorite toppings.
  • Enjoy!

These Hidden Vegetable Beef Burgers are great for fussy eaters that would rather eat burgers than vegetables, because this recipe is both, and they will never know!

500 g Lean beef mince
2 Garlic cloves (crushed)
1 pinch sea salt and black pepper
1 tbsp Worcestershire sauce
1 Egg (beaten)
2 tbsp Tomato puree
1 Large shallot (diced)
1 Small carrot (grated)
0.5 Courgette (grated)
1 handful fresh herbs (finely chopped (use whatever you have that needs using up))
Buns, lettuce, tomato and sauce to serve

Steps:

  • Put all of the ingredients in a bowl and use your hands to mix well.
  • Using your hands, form the mixture in to 4 burger patties and put in the fridge for 30 minutes before cooking.
  • Put your burger patties on to a hot BBQ grill and cook for 3 minutes one side and 6 minutes the other side for medium-well done.
  • Stack your burgers by adding them to buns with lettuce, tomato and sauce.

1 tablespoon plus 2 teaspoons olive oil
1/2 cup finely diced yellow onions
1/2 cup grated carrots (see Cook's Note)
1/2 cup grated broccoli
1 jalapeño, seeds and membrane removed, finely minced
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 teaspoon ground cumin
1 pound lean ground sirloin
1/2 cup grated oats (see Cook's Note)
1/2 cup canned black beans, drained and rinsed, pulsed in a food processor
1 tablespoon Worcestershire sauce
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 large egg, lightly beaten
6 hamburger buns, toasted
Sliced avocado, sliced tomato and ranch dressing, for topping

Steps:

  • Heat 2 teaspoons of the oil in a large skillet over medium heat. Add the onions, carrots, broccoli and jalapeño. Cook, stirring often, until the vegetables are tender, about 5 minutes. Add the chili powder, garlic powder and cumin. Cook to bloom the spices, about a minute. Transfer to a large mixing bowl; reserve the skillet.
  • Combine the vegetables with the beef, oats, beans, Worcestershire sauce, salt, pepper and egg. Lightly mix and form evenly into 6 patties.
  • In the same skillet, heat the remaining tablespoon oil over medium-high heat. Cook the burgers until browned and crusty on both sides, about 3 minutes per side.
  • Transfer the burgers to the buns, top with sliced avocado and tomato and drizzle with ranch dressing.

450 g lean beef mince
cooked beans, chickpeas, lentils
1 carrot
1 courgette
1/2 large onion
6 hamburger buns (whole grain are good)
6 tablespoons hummus, of your choice
6 teaspoons spicy tomato salsa or 6 teaspoons chutney
2 cups salad greens
6 red ripe tomatoes
salt and pepper

Steps:

  • Put the mince in a large bowl. Drain the can of beans. Grate the carrot and courgette and add to the meat.
  • In a food processor or blender, mince the onion. Add the beans and process until you have a smooth purée (or chop the onion finely and mash the beans by hand).
  • Add this mixture to the meat and using clean hands, mix it all together until well blended. Form the mixture into burger patties - this should make at least 6, or more if you like them smaller.
  • Cook the burgers either on the barbecue or under a hot grill in the oven until well-cooked (test with a skewer - juices should run clear).
  • Spread buns with hummus and salsa, and construct your burgers with the cooked meat patties, lettuce and tomato.

1 medium green pepper, finely chopped
1 medium onion, finely chopped
1 celery rib, finely chopped
1 medium carrot, finely chopped

1 tablespoon liquid smoke, optional
Salt and pepper to taste
2 pounds ground beef
8 hamburger buns, split
Lettuce leaves and sliced onion, tomatoes and pickles

Steps:

  • In a bowl, combine the first five ingredients. Add liquid smoke, salt and pepper if desired. Crumble beef over mixture and mix well. Shape into eight patties. Broil, grill or pan-fry until meat is no longer pink. Serve on buns with lettuce, onion, tomatoes and pickles.

1 teaspoon hot pepper sauce (e.g. Tabasco™)
1 tablespoon dry bread crumbs
1 teaspoon paprika

⅓ cup shredded Monterey Jack cheese
½ fresh red chile pepper, finely chopped
4 slices pickled jalapeno pepper, finely chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a bowl, mix the ground beef, onion, egg, hot pepper sauce, and bread crumbs. Season with paprika, parsley, salt, and pepper. In a separate bowl, mix the cheese, red chile pepper, and jalapeno pepper. Form the beef mixture into 4 balls, and press a well in the center of each. Stuff with equal amounts of the cheese mixture. Press meat around filling to seal. Arrange on a baking sheet, and press gently into thick patties.

Toddler Hidden-Veggie Beef Burgers image

This is a way to hide some veggies from your toddlers. It requires the use of pureed veggies, specifically carrots and zucchini, although these veggies can be altered. Simply steam the veggies until fully cooked and puree in a blender or food processor for a couple minutes. Voila. Use those in some recipes and your kids will never know they're getting their veggies. :D My daughter loves these for whatever reason--and she's a picky, picky eater. Hope your kids like them, too!
