High Protein Blueberry Vanilla Oatmeal image

This cozy high protein oatmeal will warm you up on a chilly morning! With plenty of protein and fiber, it's a plant-based breakfast that will fuel even the busiest of days.

½ cup (40g) old fashioned oats
1 cup (240g) unsweetened vanilla almond milk
1 teaspoon (4g) vanilla extract
½ scoop (18g)

¼ cup (39g) fresh or frozen blueberries

Steps:

  • Add oats, milk, and vanilla extract to a medium saucepan over medium heat. Bring to a boil, then reduce heat to simmer. Let cook, stirring occasionally, until most of the milk has absorbed. Add the protein powder and water and continue to cook until all liquid has absorbed and oatmeal is a creamy consistency. Top with blueberries (and any of your other favorite toppings) and serve immediately.

3 1/2 cups water
1/4 teaspoon salt, optional
2 cups old-fashioned oats
1/2 cup raisins
1/2 cup walnuts, coarsely chopped, optional
1/4 teaspoon vanilla extract
Pinch nutmeg
2 tablespoons dark brown sugar, plus more, to taste
1 cup lowfat milk, divided
1/8 teaspoon ground cinnamon

Steps:

  • In a medium saucepan, bring the water and salt to a boil. Stir in the oats and raisins, reduce the heat to low and simmer, stirring occasionally, uncovered, for 5 minutes.
  • In the meantime, place nuts, if using, in a dry skillet over a medium-high flame, and toast, stirring frequently, until golden and fragrant, about 5 minutes. Set aside.
  • When the oats are cooked remove pan from the flame and stir in the vanilla and nutmeg. Swirl in the brown sugar and place the oatmeal in serving bowls. Pour 1/4 cup of milk on top of each bowl, and top with toasted nuts and a sprinkle of cinnamon.
  • Note: For a quicker version using quick cooking or plain instant oatmeal: Cook the oatmeal according to the directions on the package. Stir raisins, brown sugar, and nutmeg into the cooked oatmeal. Top with milk, nuts (toasted or un-toasted) and cinnamon.

You can make this oatmeal, which will take on a purple hue once the blueberries begin to burst, on top of the stove or in the microwave. It only takes about 10 minutes on top of the stove (five minutes in the microwave).

Number Of Ingredients 8

1 1/3 cups water
1/8 teaspoon salt (optional)
1/4 teaspoon cinnamon
2 teaspoons mild honey
2/3 cup rolled oats or oatmeal
1/3 cup blueberries
1/2 teaspoon finely chopped or grated orange zest
1/2 cup low-fat milk, soy milk, almond beverage or rice beverage

Steps:

  • Bring the water to a boil in a medium-size saucepan. Add the salt, cinnamon, honey and oatmeal. Reduce the heat, and simmer uncovered for five minutes or until most of the water has been absorbed. Add the blueberries, orange zest and milk (or alternate beverage). Bring to a simmer, and simmer five more minutes or until the oatmeal is thick and creamy and the blueberries have begun to pop. Cover and let stand for five minutes, then serve.
