CHOCOLATE HIGHLANDER COOKIE BARS

Steps:
- Preheat oven to 350.
- Cream butter with 1/2 cup powdered sugar and salt. Add flour and mix well. Pat it out in a greased 9x13 inch pan with your fingers.
- Bake at 350 for 15 minutes. Remove from oven. Do not turn oven off.
- Mix eggs with melted butter, and white sugar. Add baking ppowder, salt, and flour, and mix thoroughly.
- Melt the chocolate chips in a double boiler or microwave. Be sure to stir and that the chips are completely melted.
- Add the melted chocolate chips to your bowl and mix thoroughly.
- Pour this mixture on the top of the pan you just baked and tip the pan so it covers all of the shortbread crust. Stick it back into the oven and bake it for another 25 mintues. Then remove it from the oven and sprinkle on the additon powered sugar.
- Let it cool and cut into brownie-sized bars.
- You can refrigerate these, but cut them before you do.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9 inch square pan.
- In a large bowl, combine flour, 1 cup coconut, dates, sugar and baking powder. In a saucepan, melt butter, golden syrup and vanilla. Pour over mixture in bowl. Mix until crumbly, then press into prepared pan.
- Bake in preheated oven for 20 to 30 minutes. Sprinkle top with 1/8 cup coconut.

- Preheat the oven to 400 degrees F (200 degrees C). Generously grease an 8 or 9 inch square pan.
- In a large bowl, stir together vegetable oil and oats. Mix in brown sugar, corn syrup, salt, and vanilla. Press mixture into prepared pan.
- Bake for 12 minutes in preheated oven. Set aside to cool.
- Cut into 4 large squares to remove from pan. Cover with melted chocolate, and sprinkle with nuts, if desired. Allow the chocolate to cool, and then cut each square into 9 pieces.

HIGHLAND SQUARES
My mom used to make these all the time for an afterschool snack, but she got it from a 1930's church cookbook. The basic recipe makes a nice simple sweet when eaten alone, but the possibilities are endless. I've mixed in chocolate chips, or dried fruit to make more of a granola bar. It is also nice served warm with ice cream.

- In a medium sized microwave safe bowl, melt butter.
- Mix in brown sugar.
- Add oatmeal, salt and baking powder.
- Press into an 8x8 baking dish.
- Bake for 15 - 20 minutes.
- Let cool before cutting into squares.
