It took many experiments for this one. I have finally perfected a marinade that will make your mouth thirst for more.

½ cup Worcestershire sauce
1 cup Italian-style salad dressing
2 teaspoons garlic pepper seasoning
1 cup barbeque sauce
2 pounds beef sirloin tip steaks

Steps:

  • In a medium bowl, mix the Worcestershire sauce, Italian-style salad dressing, garlic pepper seasoning, and barbeque sauce. Place the meat in the marinade, and turn to coat. Cover, and refrigerate for at least 1 hour.
  • Preheat grill for high heat.
  • Brush grill lightly with oil to prevent sticking. Place steaks on the grill, and discard marinade. Grill steaks 10 minutes on each side, or to desired doneness.

1 2-pound top sirloin steak (about 1 1/2 inches thick), fat trimmed
4 tablespoons extra-virgin olive oil, divided, plus additional for brushing
4 garlic cloves, pressed
2 tablespoons (packed) golden brown sugar
2 tablespoons soy sauce
1 tablespoon fresh thyme leaves
2 teaspoons plus 1 tablespoon harissa sauce*

Steps:

  • Cut steak lengthwise in half, forming two 2- to 3-inch-wide strips. Cut each strip into 2- to 3-inch triangles. Combine 2 tablespoons olive oil, garlic, sugar, soy sauce, thyme, and 2 teaspoons harissa in large bowl; whisk to blend. Add beef; toss to coat evenly. Marinate 30 minutes at room temperature or cover and chill at least 2 hours and up to 1 day, tossing occasionally.
  • Drain beef. Heat 2 heavy large skillets over high heat. Brush skillets generously with olive oil. Divide beef tips between skillets. Cook until well browned on all sides, turning with tongs, 6 to 7 minutes for medium-rare. Transfer beef tips to platter.
  • Whisk remaining 2 tablespoons olive oil, 1 tablespoon harissa, and 2 tablespoons water in small bowl to blend well. Season sauce to taste with salt. Drizzle sauce over beef tips and serve.
  • * A spicy North African red chile sauce; available in cans and jars at some specialty foods stores and at Middle Eastern markets.

This recipe is from The Hilltop Steak House in Saugus Ma. They have been around for years. This is a large recipe but can easily be halved. Prep time does not include marinating time.

1/4 cup red wine vinegar
1/4 cup soy sauce

4 lbs sirloin steaks, tips
2 lbs white pearl onions
2 red peppers
2 green peppers
16 ounces mushrooms

Steps:

  • Marinate steak tips in the first 8 ingredients for at least 6 hours. (Can be done 24 hours ahead).
  • Cut Vegetables in large pieces and add to marinade mixture 1 hour before grilling (can be added as you grill, but it is not as tasty).

  • In a bowl large enough to hold the meat, combine the cola, BBQ sauce, Italian dressing, teriyaki sauce, olive oil, and salt and pepper. Add the meat, cover, and marinate overnight in the refrigerator.
  • Grill to desired doneness.

5 pounds beef flap meat
4 ounces soy sauce
4 ounces Worcestershire sauce
1 cup molasses
1 pound brown sugar
1 tablespoon red pepper flakes
1 teaspoon freshly ground black pepper
5 or 6 cloves garlic, smashed
2 cans stout (recommended: Guinness)

Steps:

  • Trim the silver skin and icky fatty parts from your flap meat, then cut into 3- or 4-ounce chunks, or whatever size you like. Place in a container with a tight-fitting lid; don't forget to leave extra space for the marinade.
  • In a large bowl, whisk together the soy sauce, Worcestershire sauce, molasses, brown sugar, red pepper flakes, black pepper and garlic. Add the stout; be careful, it will foam a bit. There is really no need to add salt--the soy and Worcestershire are plenty salty.
  • Pour the marinade over the beef tips and stir gently to evenly coat. (If you don't use all the marinade, it will keep, refrigerated, in an airtight container for up to 2 weeks.)
  • Refrigerate the meat for 8 hours or overnight; it will keep for up to 4 or 5 days. Cook as desired.

5 pounds Beef, top sirloin, separable lean only, trimmed to 1/4" fat, all grades, raw

Steps:

  • Mix ketchup, dressing, juice, and cola-flavored beverage together in a glass or ceramic bowl; add steak tips. Marinate for 8 hours, or up to 24 hours.
  • Take meat out of the refrigerator and bring to room temperature, about 1 hour.
  • Meanwhile, preheat a grill to high heat.
  • Cook steak tips on the preheated grill until firm but slightly pink in the centers, 5 to 6 minutes per side.
